Steps:
- Put the cider in a large saucepan. Strip the peel from the orange in long strips with a vegetable peeler, taking care not to take off the bitter white pith. Add to the pan. Then squeeze the orange juice into the cider (straining out the seeds). Add cinnamon sticks, cloves, and star anise.
- Heat cider over medium heat, then simmer very gently until fragrant, about 15 minutes. Serve.

MARLEY'S MULLED CIDER
A tasty Mulled Apple Cider which can be served with or without Rum. I tweaked this over a few years to get it just so, and it's generally pretty popular at our holiday parties. (Halloween through Christmas) Plus it makes the house smell fantastic.

- With cloves and allspice in a teaball, cook all ingredients in a Crockpot on low 2-8 hours. Stir occasionally/rarely to dissolve sugar. Or cook in a pan on the stovetop on low heat 20-30 minute until it simmers.
- Add 1 1/2 oz. Bacardi Gold Rum (MUST be Bacardi, accept no substitutes) per mugful when poured, if desired. Don't cook it with the Rum.

EASY MICROWAVE MULLED "APPLE CIDER"
Adapted from a stovetop recipe in an old Pleasant Company (Yes, as in American Girl) cookbook called "Great Girl Food". Simple to make, and good for when you want a quick, warming drink! I should note that the sugar HAS to be brown. The molasses in brown sugar adds an extra needed touch of spice. The spice mixture will also leave a bit of grit behind in the mug if you don't stir it around every once in a while as you're drinking it. I wish I could come up with a way to fix that, but so far I haven't thought of one yet.

- Combine all ingredients in a microwave safe mug.
- Place mug in microwave and cook on HIGH for 1-2 minutes, depending on the wattage of your microwave. You may have to wait for a minute or so before you drink it, because it will be hot.
- Enjoy your "cider"! TIP: this tastes even better with a little caramel sauce stirred into it!

- In a large saucepan, bring cider, lemon zest, and spices to a boil; cover, and remove from heat. Let steep at least 20 minutes (or up to 4 hours). Ladle carefully into mugs, leaving most of the solids behind.

- Place the cinnamon stick, cloves, allspice and bay leaf on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag. , In a large saucepan, combine the apple cider, juices, orange zest, brown sugar, salt and spice bag. Bring to a boil. Reduce heat to medium-low and simmer mixture for 30 minutes to blend flavors. Discard spice bag. Strain cider mixture and stir in brandy if desired. Serve immediately.
