The Best Mashed Potatoes image

This is our go-to recipe for classic mashed potatoes, made with plenty of butter and cream. To make them fluffy and flavorful, be sure to simmer them slowly and add plenty of salt to the cooking water. And don't skip the step of steaming the excess water off; leaving too much moisture in the potatoes causes them to be loose and gluey.

2 pounds russet potatoes, peeled and quartered
Kosher salt and freshly ground black pepper
1 stick (8 tablespoons) unsalted butter, cubed
3/4 cup heavy cream, heated

Steps:

  • Put the potatoes in a large pot and cover with cold water. Generously salt the water and bring to a boil over high heat. Then lower the heat to medium and gently simmer until the potatoes are completely tender when pierced with the tip of a knife, about 30 minutes.
  • Drain the potatoes well and return them to the pot. Place the pot over low heat and let any residual water steam off, about 2 minutes. Mash the potatoes well with a potato masher. Fold in the butter with a spatula until melted, and then fold in the cream. Season with salt and pepper.

1 pound Yukon Gold potatoes, peeled and quartered
½ cup whole milk
¼ cup butter, cut into pieces
1 pinch ground nutmeg

Steps:

  • Place the potatoes into a large pot, and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two, and place the potatoes in a large bowl.
  • Bring the milk to a boil in a small saucepan over low-medium heat.
  • Whip the potatoes with an electric mixer until smooth; pour the boiling milk over the potatoes, and add butter, nutmeg, salt, and white pepper. Whip on Medium speed until light and fluffy.

Coarse salt
2 pounds Yukon Gold potatoes, peeled and cut into 2-inch pieces
1/2 cup (1 stick) unsalted butter, room temperature
1/2 cup milk
Freshly ground white or black pepper

Steps:

  • Fill a large pot with about 2 inches of water and add a pinch of salt. Set steamer basket in pot, making sure water doesn't seep through holes. Bring to a boil, then reduce to a rapid simmer.
  • Add potatoes to steamer basket and steam until tender when pierced with the tip of a paring knife, 25 to 30 minutes.
  • Heat butter and milk in a small saucepan over medium heat until the milk is warm and the butter has melted. Remove potatoes from steamer basket. While potatoes are still hot, use a ricer to rice potatoes into a large bowl. Add milk mixture and gently combine with a spatula; season with salt and pepper. Serve immediately.

2 pounds russet, Yukon gold, or long white potatoes
1 tablespoon salt, plus more to taste
1 cup milk, or cream
4 tablespoons unsalted butter
1/4 teaspoon freshly ground black pepper
1/4 teaspoon freshly grated nutmeg

Steps:

  • Peel and cut potatoes into 1 1/2-inch-thick slices. Place in a medium saucepan. Cover with cold water; add 1 tablespoon salt. bring to a simmer. If using a potato ricer, fill another saucepan with water; place over low heat. Keep potatoes at a low simmer until a knife slips in and out easily. Drain potatoes in a colander. Place milk in a small saucepan over medium-high heat.
  • If using an electric mixer with paddle attachment, proceed to Step 4. If using a potato ricer, place a heat-proof bowl or top of a double boiler over a pan of simmering water. Press hot, drained potatoes through ricer into bowl.
  • Stir potatoes with a wooden spoon until smooth, about 1 minute. Using a whisk, incorporate butter. Drizzle in hot milk, whisking continuously. Add pepper, nutmeg, and salt to taste; whisk to combine. Serve immediately.
  • For the electric-mixer method, transfer hot, drained potatoes to bowl of an electric mixer fitted with the paddle attachment. Mix on medium-low speed, until most lumps have disappeared, about 1 minute. Add butter; mix until blended. On low speed, add hot milk in a slow stream, then add pepper, nutmeg, and salt to taste. Mix to combine.

1 egg white

3 tablespoons butter
1 cup milk (Too much will make them runny)
2 tablespoons thyme
salt and pepper
2 tablespoons garlic powder

Steps:

  • Fill 3 qt sauce pan half way with water.
  • Add garlic powder, Thyme, and (aprox. 3 tbs) salt.
  • Bring to low boil and add potatoes cubed into 1 1/2 to 2 1/2 inch pieces.
  • Let boil until a fork will easily penetrate large pieces.
  • Drain off water and add salt and pepper to taste, butter (tastes better that margarine) and milk (carefully).
  • Mash potatoes (I use a waffled round hand potatoe masher instead of a mixer because I like lumpy, but that takes some elbow grease).
  • You can work with the ingredients a bit to get the right texture.

  • Put the cut potatoes in a large pot. Use a pot large enough to hold the potatoes with enough water to cover, plus room for the water to boil up without boiling over.
  • Cover the pot and simmer until potatoes are tender — about 15 to 20 minutes. A knife tip inserted into a potato should meet no resistance; if the potato clings to the knife, the potatoes need to cook longer.
  • Return the drained potatoes to the pot and heat over medium-high heat for about a minute to cook off any excess water. This guarantees your mashed potatoes won't be watery.
  • Now we get to the mashing part. For this recipe, we used a food mill to break up the potatoes and remove any lumps. Once the potatoes have been passed through the mill, drizzle half of your hot cream mixture through and around the grate to get every last bit of potato.
  • Taste the potatoes for seasoning and adjust to taste. Test for consistency, too: If the potatoes are too thick, add more cream. Other herbs and spices can be added at this point as well: chopped chives, Italian parsley, Parmesan cheese, crumbled bacon, roasted garlic, chopped scallions, or creamed leeks are all delicious additions.
