SPICY SHRIMP SAUTé
This recipe is inspired by the late-night meals that feed chefs, cooks, waiters, bussers, porters and everyone else it takes to run a restaurant. After a rough day, a dish that can be thrown together quickly is invaluable. For restaurant workers, Mario Batali included, sometimes the evening starts out as just drinking and continues that way into the early morning, when they end up at someone's apartment and start preparing spicy food. Here is one of the best of those recipes.

Steps:
- Combine curry paste, fish sauce, sambal and chili sauce in a medium bowl; add shrimp, tossing to coat. Place a large nonstick skillet over medium-high heat until hot. Add oil, and heat till smoking then add the shrimp mixture, and sauté for 2 minutes. Add scallions; cover, and cook for 3 minutes. Stir in sweet soy sauce and coconut milk. Cook for 3 minutes or until thoroughly heated and the shrimp is cooked through. Add cilantro and serve.

Steps:
- Cook pasta in boiling water to package directions Add olive oil to pan over medium high heat. Add shrimp and begin sauteing until lightly pink. Season with salt. Once the shrimp has been cooking for a couple minutes add the minced garlic, butter, parsley and red pepper flakes, to taste. Deglaze the pan with white wine and continue cooking. Cook until shrimp is pink and cooked through. Once pasta is cooked remove from pot and add to shrimp pan. Toss until the pasta is evenly coated. Add lemon zest and mix. To serve, plate scampi and drizzle with a little olive oil and a sprinkle of red pepper flakes. Enjoy! .

- Bring a large pot of salted water to a boil and cook penne 1 minute short of the package instructions. Drain, reserving 1 cup of pasta water for sauce. In a large sauté pan, cook bacon over medium heat to render out fat. Cook for about 10 minutes until cooked but not too crispy. Add the garlic and tomato paste and cook until garlic is fragrant and tomato paste darkens. Stir in the vodka and cook for a few minutes to meld the flavors. Add cream and season with nutmeg and salt to taste. If sauce is too thick, add reserved pasta water bit by bit until desired thickness is reached (you may not need the whole cup). Add cooked penne and toss to coat. Serve with a generous sprinkling of Parmigiano Reggiano.

- In a medium saucepan, bring 5 cups of water to a boil with the sugar. Whisk in the polenta in a thin stream. Cook over low heat, stirring constantly, until thickened, about 5 minutes. Remove from the heat. Stir in 3 tablespoons of the olive oil and season with salt. Press a piece of parchment or wax paper directly onto the surface of the polenta and keep warm.
- In a large skillet, heat the remaining 3 tablespoons of olive oil. Add the scallions and crushed red pepper and cook over moderate heat for 1 minute. Add the tomato paste and cook, stirring, until slightly darkened, about 3 minutes. Add the wine and 1/4 cup of water and simmer over moderately high heat for 1 minute. Add the shrimp and simmer, stirring, until just cooked through, about 2 minutes. Stir in the parsley, lemon juice and lemon zest and season with salt and pepper. Remove from the heat.
- Rewarm the polenta over moderately high heat, whisking constantly. Spoon a pool of polenta in the center of 8 shallow bowls. Spoon the shrimp and sauce over and around the polenta and serve right away.
