2/3 cup olive oil
1/2 cup water
2 lemons, juice of
1 bay leaf
2 garlic cloves, bruised with the flat of a knife
6 peppercorns
1/2 teaspoon salt
1 lb small whole fresh mushrooms

Steps:

  • Combine the oil, water,lemon juice,bay leaf, garlic, peppercorns and salt in a 10-12 inch stainless steel skillet, and bring to a boil over moderate heat.
  • Reduce the heat, cover and simmer for 15 minutes. Strain this marinade through a sieve and return it to the skillet; bring to a simmer over low heat.
  • Drop the mushrooms into the marinade and simmer, turning them over from time to time, for 5 minutes.
  • Let the mushrooms cool in the marinade. Serve them at room temperature or, after they have cooled, refrigerate them and serve cold. (The mushrooms will keep in the refrigerator at least 2 days.).
  • Before serving, lift the mushrooms out of the marinade with a slotted spoon, draining them carefully, and arrange them on a platter or in a serving bowl.

Easy Marinated Mushrooms image

Easy marinated mushrooms will only take 15 minutes of prep time. You can even make them the night before! An irresistible and refreshing appetizer to have on hand.

Number Of Ingredients 10

3 pounds button mushrooms (cut them in half if they're large)
1/2 cup lemon juice (I used fresh, you could use bottled)
Water (enough to cover mushrooms)
1 1/4 cups white wine vinegar (with 5% acidity)
1 cup pure olive oil
5 garlic cloves (peeled and left whole)
1 1/2 teaspoon Kosher salt
2 teaspoons dried oregano
2 teaspoon dried parsley (or basil)
1 teaspoon crushed red pepper flakes

Steps:

  • In a large pot, add water (just need enough water that will cover the mushrooms) and the lemon juice. Bring to a boil.
  • While you bring the lemon water to a boil, clean and wash mushrooms.
  • Trim off the stems. If you have some larger mushrooms like I did, cut the larger ones in half (the mushrooms do shrink when you boil them in the water, so don't cut the smaller ones)put them in a large pot.
  • When the lemon water has come to a boil, carefully add the mushrooms. Let them boil for about 5 minutes (you don't want to boil them until they're super soft, just a quick boil).
  • While the mushrooms are doing their quick boil, bring the marinate to a boil.
  • In a small pot, add the olive oil, vinegar, garlic cloves, salt, oregano, dried parsley, and crushed red pepper flakes. Bring to a boil and let boil for about 3 minutes (should be about same time as it takes to boil the mushrooms, it's ok if it goes over a minute or two). When it's boiled for a few minutes, remove from heat so you can deal with the mushrooms.
  • Remove the garlic cloves from the olive oil marinate and reserve in a small plate.
  • Drain the mushrooms in a colander. Spoon them into your canning jars (or whatever container you are storing them in)add a garlic clove to each jar, and leave about 1/2 inch of headspace on the top.
  • When you have your mushrooms ready in the jars, stir the marinade together and carefully pour the olive oil marinade over the mushrooms in the jars, being sure to leave that 1/2 inch of headspace on the top.
  • Cover, using lids and store them in the refrigerator. They can be stored in the refrigerator up to two weeks.
  • Serve at room temperature.
  • Use the marinated mushrooms in salads, antipasto, pasta salad, or just enjoy straight from the jar.

MUSHROOMS IN MARSALA WINE (FUNGHI ALLA MARSALA)

1 ounce dried mushrooms, preferably imported Italian boletus mushrooms, or use one 3/4-ounce package
1 cup lukewarm water
1/4 cup olive oil
1/2 teaspoon finely minced garlic
1/2 teaspoon dried rosemary
1 pound fresh mushrooms, thinly sliced, about 6 cups
1/2 cup Marsala wine

Steps:

  • Soak the mushrooms in lukewarm water for 30 minutes. Line a small sieve with cheesecloth and add the mushrooms. Strain and reserve the soaking liquid. Squeeze the mushrooms in the sieve to extract their juices.
  • Heat the oil in a casserole and add the soaked, drained mushrooms, garlic and rosemary. Cook, stirring, about one minute. Add the reserved soaking liquid and cook down over high heat until most of the liquid evaporates.
  • Add the fresh mushrooms and cook, stirring often, until the mushrooms are wilted. Add the Marsala and cook, stirring occasionally but gently, until the wine is almost but not quite evaporated. Serve hot or at room temperature.

1/2 cup extra-virgin olive oil
2 pounds cremini or button mushrooms, cleaned and quartered
2 lemons, zested and juiced
3 garlic cloves, sliced
1 small bunch fresh thyme
2 bay leaves
Kosher salt and freshly ground black pepper

Steps:

  • Add 1/4 cup olive oil to a large skillet over medium heat. Add the mushrooms and cook them for about 3 minutes. Remove from the heat and stir in the lemon zest and juice, garlic, thyme, and bay leaves. Pour over the remaining olive oil and season the mixture with salt and pepper. Pour into a bowl and allow to cool. Serve at room temperature.

1 ounce dried mushrooms (like cremini, porcini; whatever you like)
Salt
1 tablespoon olive oil
3 tablespoons butter
2 teaspoons minced garlic
1 medium yellow onion, chopped
1 pound fresh mushrooms like shiitake or button, sliced (a variety is nice)
1/2 cup dry white wine or mushroom-soaking liquid
1/2 pound cut pasta, like ziti or penne
1/2 cup fresh chopped parsley, plus more for garnish
Fresh-shaved Parmesan (optional)

Steps:

  • Soak the dried mushrooms in very hot water until soft, anywhere from 5 to 15 minutes. When they are tender, remove the dried mushrooms from the soaking liquid with a slotted spoon, reserving the liquid; slice or chop if the pieces are large.
  • Set a large pot of water to boil for the pasta and salt it. Put a large skillet over medium-high heat, and add the olive oil and 2 tablespoons butter. When it is hot, add the garlic and onions; cook, stirring occasionally, until the onions begin to soften, 3 to 5 minutes. Add the fresh mushrooms and dried mushrooms when they're ready, and cook until they give up their liquid and start to brown, at least 15 minutes. Add the white wine or mushroom-soaking liquid to the pot and cook, scraping up any browned bits from the bottom as the liquid starts to bubble.
  • Meanwhile, cook the pasta until tender.
  • Reduce skillet heat to low. Add remaining butter and the parsley, and stir to combine; sprinkle with salt and pepper. When the pasta is done, drain it. Add the pasta to the mushroom mixture, and toss until well combined. If the mixture is dry, add a little pasta water or mushroom-soaking liquid. If you like, garnish with Parmesan and more parsley.
