¼ cup water
15 ounces frozen French-cut green beans
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can black beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes, undrained
4 stalks celery, chopped
1 medium green bell pepper, chopped
1 medium onion, chopped
1 cup Distilled Vinegar
¾ cup white sugar
½ cup olive oil
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Bring water to a boil in a pot. Add green beans and cook until just crisp-tender, 4 to 5 minutes. Drain and rinse immediately in cold water.
  • Transfer green beans to a large bowl and stir in corn, black beans, tomatoes, celery, bell pepper, and onion.
  • Mix apple cider vinegar, sugar, olive oil, salt, and pepper together in a small bowl. Pour over vegetables and stir to coat. Refrigerate, covered, for 4 hours, or up to overnight.

1 small thinly sliced sweet onions or 1 small you could use 1 small red onion, thinly sliced
1/4 cup balsamic vinegar
1/2 cup white vinegar
1 garlic clove, minced
1/8 cup sugar
2 tablespoons extra virgin olive oil
1/2-3/4 teaspoon salt (to taste)
1/2 teaspoon pepper

Steps:

  • Cook green beans in boiling water for 4- 5 minutes until tender, but still crisp.
  • Drain, immerse in ice water till cool. Drain.
  • Whisk vinegars, sugar, EVOO, salt and pepper together in a serving bowl. Add onion and green beans, stir together.
  • Marinate in refrigerator for at least five hours. Shake it up once in awhile. Over night is even better.
  • Enjoy.

2 pounds fresh green beans, trimmed
¼ cup olive oil
2 cloves garlic, minced
1 cup kalamata olives, pitted and sliced
2 tomatoes, seeded and chopped
2 tablespoons red wine vinegar
1 tablespoon chopped fresh oregano
½ teaspoon salt
¼ teaspoon ground black pepper
1 (8 ounce) package crumbled feta
1 bunch fresh oregano sprigs

Steps:

  • Bring a large pot of salted water to a boil over medium heat and drop in the green beans; cook until slightly tender, but still crisp, 8 to 10 minutes. Immediately drain the green beans and plunge into ice water to stop the beans from cooking further. Drain the beans and place them in a shallow serving dish.
  • Heat the olive oil in a skillet over medium heat. Cook garlic in the oil for about 30 seconds. Remove the skillet from the heat. Stir in the olives, tomatoes, vinegar, oregano, salt, and pepper. Pour mixture over green beans. Toss together until beans are evenly coated. Sprinkle feta cheese over the top and garnish with oregano sprigs. Chill at least 3 hours before serving.

This is a recipe I saved from Ediets. I have found that I prefer a little sea salt, fresh ground pepper and splenda mixed with the sauce, but the original recipe did not call for it. I hope you enjoy!

2 garlic cloves
5 teaspoons balsamic vinegar
2 1/2 teaspoons olive oil

Steps:

  • Rinse and snap beans.
  • Mince garlic.
  • Mix garlic, vinegar and olive oil and set aside.
  • Steam beans until tender but firm, approximately 10-15 minutues.
  • Toss with balsamic vinegar dressing.
  • Can be refrigerated and served cold.

150 grams Green beans
100 milliliters Vegetable broth
1 pc fresh ginger (about 5 grams)
0.5 red chili pepper
1 tsp roasted Shelled peanut
liquid Sweetener (optional)
1 (8 grams)

Steps:

  • Rinse the beans and drain.
  • Bring the broth to a boil in a pot. Add the beans, bring back to a boil, reduce heat to low, cover and cook for 10-12 minutes.
  • Peel the ginger and finely chop. Rinse chile pepper, remove seeds and finely chop.
  • Drain beans in a sieve, reserving the broth. Pour the broth back into the pot.
  • Add chile pepper and ginger to the broth and bring to a boil. Cook over medium heat until about 2 tablespoons of liquid remains. Allow to cool.
  • Chop peanuts and add to the broth. Season to taste with sweetener. Mix broth with the beans and let marinate for 15 minutes. Serve with the rice cake.

Crisp-tender steamed green beans tossed with a shallot-infused vinaigrette makes a snappy summer or fall marinated green bean salad side dish.

1 pound green beans (trimmed)
1 small shallot (or red onion)
1 tablespoon sherry vinegar (or red wine vinegar)
1/4 teaspoon fine sea salt
Pinch of sugar
1/8 teaspoon ground ​dry mustard
3 tablespoons olive oil

Steps:

  • Trim the green beans as needed. Set them aside. Prepare a large bowl of ice water and set it aside.
  • If you're using a steam basket, choose a pot that will fit the basket. Fill the pot with an inch of water and bring it to a boil or bring a 1/2 inch of water to a boil in a frying pan. Or put the beans in a microwave-safe container with 2 tablespoons of water.
  • Put the green beans in a steamer basket over the boiling water (or in the frying pan with the water), cover, and cook until as tender as you like: 3 minutes for crisp-tender green beans and closer to 6 minutes for fully cooked beans. Or microwave in 1-minute intervals until the desired temperature is reached.
  • Once the beans are steamed , immediately plunge them in the ice water. Swish the beans around until they're completely cool. Dry them thoroughly. Put the dried green beans in a shallow dish.
  • Peel and mince the shallot or onion, vinegar, and salt in a small bowl. Whisk the sugar, mustard, and oil into the shallot mixture. Pour the dressing over the green beans, toss so all the green beans are coated with the dressing, cover the container, and chill at least 1 hour and up to overnight.

1 pound green beans (trimmed and long ones sliced in half, about 3 cups)
1/2 red onion (thinly sliced into half-moons)
1 15.5 oz can chickpeas (drained and rinsed)
1/2 cup olive oil
1/4 cup red wine vinegar
1/2 tsp dried oregano
1/2 tsp dried parsley
1/2 tsp garlic powder
1/2 tsp dried rosemary
1/2 tsp dried basil
1/4 tsp sea salt

Steps:

  • Bring a pot of salted water to a boil. Trim the green beans, and slice any long ones in half, then drop them into the boiling water for just 2-3 minutes. Remove the pot from heat and drain the green beans in a colander in the sink. Rinse with cold water.
  • While the green beans are cooking, thinly slice the red onion and drain the chickpeas. Whisk together the olive oil, red wine vinegar, oregano, parsley, garlic powder, rosemary, basil, and salt.
  • Combine the green beans, red onion, chickpeas, and dressing in a large bowl. Mix until well combined.
  • Serve right away, or transfer the salad to an airtight container in the fridge to serve later. Enjoy!

1 pound fresh green beans
2 tablespoons reduced-sodium soy sauce
1 tablespoon cider vinegar
1 teaspoon olive oil
1 teaspoon sesame oil
1/4 teaspoon ground ginger
1/4 teaspoon Chinese five-spice powder
Dash pepper
1 tablespoon sesame seeds, toasted

Steps:

  • In a large saucepan, bring water to a boil. Add beans; cover and boil for 3-5 minutes or until crisp-tender. Drain immediately place beans in ice water. Drain and pat dry. 1 1/2 pounds green beans

12 large green olives
4 garlic cloves
3 tablespoons finely shredded fresh basil leaves
1 tablespoon coarsely chopped fresh oregano leaves
1 tablespoon capers
1 1/2 tablespoons red wine vinegar

Steps:

  • Fill a pot large enough to hold the green beans with water, place over high heat, and bring to a boil.
  • While the water is heating, snap off the ends of the beans and rinse them in cold water. When the water comes to a boil, salt it generously (about 1 teaspoon per quart of water) and put in the beans. Cook until they are tender all the way through but not mushy, 8 to 10 minutes.
  • While the beans are cooking, sliver the olives by slicing the flesh away from the pits. Lightly crush and peel the garlic cloves, shred the basil, and coarsely chop the oregano. Put the olives, garlic, basil, oregano, and capers in the salad bowl you will be using.
  • When the beans are cooked, drain them well and add them to the salad bowl. Add the vinegar and toss. Add the olive oil, toss again, and taste for salt. Let stand at room temperature for about 3 hours and remove the garlic cloves before serving.
