When you're in the mood for a perfect portion of poultry, this slow-roast turkey breast recipe is a great option for a smaller group. 1 bone-in whole turkey breast (4 1/2 to 5 pounds), thawed if frozen
1/2 cup butter, melted
1/4 cup dry white wine or apple juice
2 tablespoons chopped fresh thyme leaves or 1 1/2 teaspoons dried thyme leaves
1 teaspoon salt
1 teaspoon paprika
2 cloves garlic, finely chopped
2 teaspoons cornstarch
2 tablespoons cold water

Steps:

  • Heat oven to 325°F. Place turkey, skin side up, on rack in large shallow roasting pan. Insert ovenproof meat thermometer so tip is in thickest part of breast and does not touch bone. Roast uncovered 1 hour.
  • Mix butter, wine, thyme, salt, paprika and garlic. Brush turkey with half of the butter mixture. Roast 30 minutes; brush with remaining butter mixture. Roast about 1 hour longer or until thermometer reads 165°F.
  • Remove turkey from oven and let stand 15 minutes for easier carving.
  • Meanwhile, pour pan drippings into measuring cup; skim fat from drippings. Add enough water to drippings to measure 2 cups. Heat drippings to boiling in 1-quart saucepan. Mix cornstarch and 2 tablespoons cold water; stir into drippings. Boil and stir 1 minute. Serve with turkey.

1-1/2 cups chicken broth
1 cup reduced-sodium soy sauce
2/3 cup lemon juice
2 garlic cloves, minced

1 turkey (12 to 14 pounds)

Steps:

  • Combine the first 7 ingredients; set aside and refrigerate 1 cup for basting. Place 1 oven roasting bag inside the other. Place turkey inside inner bag; pour in remaining marinade. Seal bags, pressing out as much air as possible; turn to coat turkey. Place in a shallow roasting pan. Refrigerate overnight, turning several times., Remove turkey; drain and discard marinade. , Prepare grill for indirect medium heat. Tuck wings under turkey and arrange breast side down on grill rack. Grill, covered, for 1 hour. , If using a charcoal grill, add 10 briquettes to coals; turn the turkey. Baste with reserved marinade. Cook, covered, for 1-1/2 to 2 hours, adding 10 briquettes to maintain heat and brushing with marinade every 30 minutes until thermometer inserted in thigh reads 170°. Remove turkey from grill; tent with foil. Let stand 20 minutes before carving. , Conventional roasting method: Follow steps for marinating turkey overnight. Preheat oven to 325°. 2 cloves garlic, peeled and minced
1 tablespoon finely chopped fresh basil
½ teaspoon ground black pepper
2 (3 pound) boneless turkey breast halves
6 whole cloves
¼ cup vegetable oil
¼ cup soy sauce
2 tablespoons lemon juice
1 tablespoon brown sugar

Steps:

  • In a small bowl, mix together the garlic, basil, and pepper. Rub over the turkey breasts. Insert one clove into each end of the turkey breasts, and one in the center.
  • In a large shallow dish, blend vegetable oil, soy sauce, lemon juice, and brown sugar. Place the breasts in the dish, and turn to coat. Cover, and marinate in the refrigerator at least 4 hours.
  • Preheat grill for high heat.
  • Lightly oil the grill grate. Discard marinade, place turkey breasts on the grill. Close the lid, and grill turkey breasts about 15 minutes on each side, or to an internal temperature of 170 degrees F (68 degrees C).

¼ cup olive oil
¼ cup soy sauce
3 cloves garlic, minced, or more to taste
2 tablespoons brown sugar
2 teaspoons dried basil
1 (3 pound) boneless turkey breast
salt and ground black pepper to taste

Steps:

  • Whisk olive oil, soy sauce, garlic, brown sugar, and basil together in a bowl and pour into a resealable plastic bag. Add turkey breast, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, 8 hours to overnight.
  • Preheat the oven to 375 degrees F (190 degrees C). Line a roasting pan with aluminum foil.
  • Remove turkey breast from the marinade and shake off excess. Place turkey in the prepared roasting pan and season with salt and pepper. Set remaining marinade aside.
  • Cook turkey in the preheated oven for 1 hour. Baste with the reserved marinade and cook until no longer pink in the center and the juices run clear, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (77 degrees C).

1 turkey breast ((bone-in or boneless, skin-on, about 2 - 2 1/2 lbs))
3 rosemary twigs for garnish
1/4 cup olive oil
2 Tbsp sesame oil
1/2 cup low sodium soy sauce
2 Tbsp Worcestershire sauce
Juice from 1 lemon
1/2 cup honey or maple syrup
8 cloves of garlic (minced)
3 rosemary twigs (whole)
1 tsp freshly ground black pepper
4 tsp kosher salt (plus more to taste)

Steps:

  • Prepare the marinade by mixing all of the ingredients together in a large bowl or a plastic Ziplock bag. Add the turkey breast and make sure that every part is covered with the marinade. If using a Ziplock bag, expel as much air as possible before sealing it. Marinate in a fridge for 12-24 hours. If marinating is not an option, roast the breast immediately and serve with those delicious pan juices - it will still be awesome.
  • Preheat oven to 325F.
  • Place the turkey breast into a deep baking dish and pour in the marinade. It's best to use a baking dish that is not too big otherwise too much liquid will evaporate. Bake uncovered on middle rack for about 1 to 1 1/2 hours, depending on size, until the internal temperature of the meat in the thickest part reaches 160F - the temperature will rise to 165F during resting (see Notes). Baste the top and the sides of the breast with pan juices about every 20 minutes - this will prevent the top from drying out and will help with browning.
  • If toward the end of baking the skin did not brown enough, turn on the broiler on high for 2-3 minutes. Do this before the internal temperature reaches 160F. I normally do it at about 150F internal. Monitor broiling process very closely as the skin can go from a nice deep-golden brown to charred pretty quickly.
  • Remove the turkey breast from the oven and let it rest for 5 minutes before carving and serving. I find that it's best to transfer the breast to a serving platter immediately upon removing from the oven. If left to rest in the hot baking dish, the internal temperature will rise too much and meat will lose more moisture.
  • Carve the meat, place on a serving platter and garnish with fresh rosemary twigs. Serve with the pan juices (don't forget to discard the cooked rosemary twigs), they are out-of-this-world delicious.

5-7 pound turkey breast ((I used a 5 pounder and it was enough for 6 people with leftovers))
1 tablespoon fennel seed (crushed in a mortar and pestle or ground in a spice grinder)
1 teaspoon black pepper
2 teaspoons kosher salt (I use Diamond Kosher. If you have Morton's scale back to 1 teaspoon)
1/4 teaspoon crushed red pepper flakes
3 cloves garlic (minced)
2 teaspoons fresh rosemary (chopped)
2 teaspoons fresh sage (chopped)
1 teaspoon lemon zest
1 tablespoon lemon juice (from the zested lemon)
1 teaspoon orange zest
1/4 cup orange juice (from the zested orange)
1/3 cup olive oil
2 medium onions (sliced)
3/4 cup chicken broth
1 tablespoon olive oil
the trimmed turkey back and any skin or extra cartilage
1 small onion (roughly chopped)
1 medium carrot (roughly chopped)
1 medium stalk celery (roughly chopped)
1 tablespoon black peppercorns
1 bay leaf
1 teaspoon kosher salt
3 tablespoons butter
3 tablespoons flour
3/4 teaspoon kosher salt
1/2 teaspoon black pepper
3/4 cup pan drippings
2 cups turkey stock

Steps:

  • Combine the fennel, black pepper, kosher salt, crushed red pepper flakes, garlic, rosemary, sage, lemon zest & juice, orange zest and juice and olive oil. Whisk to combine. Set aside.
  • Use a pair of kitchen sheers to trim away the back portion of the rib cage and back bone, leaving just the turkey breast intact. To do this, flip the turkey so the back is facing up. Let the natural line of where the breast meets the rib cage be your guide. Start on one side and cut along the bottom of the breast (so you're not removing any of the breast meat) and cut through the ribs from the butt end to the neck portion, until you get to the point where the bones are too tough for the sheers.
  • Use the same method on the opposite side of the turkey breast. Grasp the the portion that you're cutting away with one hand and the breast meat side with the other hand. Leverage the back bone back until you hear a satisfying "crack". Then use the poultry sheers to cut between the joints and remove the back portion. Now you have a turkey breast without the back bone. Don't toss the back bone, you can use it for your gravy stock.
  • Place the turkey breast in a one gallon zip top plastic bag and pour the marinade over it. Tip the bag to and fro to coat in the marinade. Refrigerate the turkey for 4 hours or overnight.

1 cup cranberry juice
1/4 cup canola oil
1/3 cup maple syrup
1 tablespoon cider vinegar
2 teaspoons minced garlic

Steps:

  • In a large liquid measuring cup, whisk together cranberry juice, oil, maple syrup, cider vinegar, garlic, salt, pepper, thyme and parsley.
  • Place both turkey breasts in a large FoodSaver® vacuum seal bag and add the marinade.
  • Place in the freezer, standing upright with the opening at the top, and freeze until frozen solid.
  • Place the open end of the FoodSaver® vacuum seal bag into the vacuum sealer and press to seal.
  • Return to the freezer to cook later, or place in the refrigerator to thaw overnight before roasting. (To thaw quickly, place in a sink of cold water, and refresh the water every 30 minutes -- this should help the turkey breast to thaw in a couple of hours).
  • Preheat the oven to 400 degrees F.
  • Place turkey breasts in a single layer in a large baking dish, pour in 1/2 cup water, and roast for 40-60 minutes, until a meat thermometer in the thickest parts reach 165 degrees F. If skin is browning quickly, cover the pan with foil half way through the cook time. If the juices are browning quickly in the pan, add an additional 1/2 cup water.
  • Remove turkey breasts from the oven and let rest for 10-15 minutes before slicing and serving.

1/2 cup olive oil
1/4 cup soy sauce
2 tablespoons prepared yellow mustard
1 tablespoon lemon juice concentrate
1 tablespoon of minced garlic
1 tablespoon dry mustard
1 tablespoon of minced onion
1 tablespoon italian seasoning mix, seasoning blend
1 tablespoon parsley, spice
1 tablespoon poultry seasoning
1 teaspoon paprika

1 large turkey oven cooking bag (Reynolds seems to be the best)
2 tablespoons flour, to dust bag

Steps:

  • Trim off any excess fat/skin. Wash bird well, remove all innards/giblets, turkey neck; save if you are going to use them to make gravy, otherwise discard, pat bird dry, inside and out.
  • Blend all marinade wet and dry ingredients, heat to warm and blend either in microwave or on stove but do not let it scorch.
  • Put 1 TBS of flower in a turkey roasting oven bag, shake to coat insides. Put a cake cooling rack (coat w/ cooking spray to keep from sticking) inside of bag to help raise bird off bottom, set inside of turkey roasting pan.
  • Pour/rub marinade ingredients all over, making sure to get between skin, inside cavity of bird.
  • Fold back wings, let legs lay free, put bird breast up in bag.
  • Tie off bag and trim any excess beyond tie;.
  • Puff up bag to keep it off skin as much as possible.
  • Let bird marinate overnight in bag, in the pan ready to go in oven.
  • Remove middle rack and put rack/roasting pan in lowest oven position. Preheat oven to 325, cook approximately 11 minutes per LB until core is up to 160 degrees, Before putting pan on oven, put 6 @ 1/2" long knife slits in bag around perimeter of breast to allow for venting.
  • At half way point turn pan around 180 degrees in oven to allow even cooking in case oven has hot spots. Oven bag will suggest 350, I have found this cooks the bird too hot, too fast with less forgiveness.
  • Pull out of oven, use scissors to cut slit in bag across top to allow it to sit for 30 minutes, tent a piece of aluminum foil over bird to help trap heat and moisture back inches.
  • I usually go top down, starting with removing each breast half, and the cross cut against grain into portion slices, then cut drumsticks and present them whole, then remove thighs and wings and proceed to scrape and cut into portions.
  • I will drizzle just a little of the pan drippings over cut portions in pan, helps to give the white meat a little more flavor and moisture.

Steps:

  • Mix together the chopped herbs and olive oil.
  • Spread the herb mixture evenly over the turkey breast and let marinate in the fridge for at least 3 hours, or overnight.
  • When you're ready to roast the turkey, preheat your oven to 250 degrees.
  • Lay the turkey breast on a shallow baking sheet or pan.
  • Season generously with salt and pepper.
  • Roast for approximately 3 hours at 250 degrees, or until the internal temperature at the thickest part reaches 165 degrees.
  • When the turkey is done, let it rest for about 10 minutes before slicing and serving.

1 (2-2.5 lb.) boneless turkey breast
3 cups buttermilk
1 tablespoons + 1/4 teaspoon salt, divided
1 1/4 teaspoons pepper, divided
1 1/4 teaspoons poultry seasoning, divided
1 clove garlic, minced
1 tablespoon vegetable oil
1/4 teaspoon paprika

Steps:

  • Place turkey breast in a large, zip-top bag. In a medium bowl, whisk together buttermilk, 1 tablespoon salt, 1 teaspoon pepper, 1 teaspoon poultry seasoning, and garlic. Pour buttermilk mixture into bag with turkey breast and seal tightly. Place in a baking dish to catch any drips and place in the refrigerator for 8-12 hours.
  • Preheat oven to 350 degrees. Remove turkey breast from buttermilk and pat dry with paper towels. Discard buttermilk. Place the turkey breast in a roasting pan, or on a baking sheet fitted with a wire rack.
  • In a small bowl, stir together oil, 1/4 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon poultry seasoning and 1/4 teaspoon paprika. Spread the oil and seasoning mixture over the turkey.
  • Cook in the preheated oven until a meat thermometer inserted in the thickest portion reads 165 degrees (approximately 1 hour 30 minutes). Let stand for 15-20 minutes before slicing and serving.

1 whole bone-in turkey breast, 6 1/2 to 7 pounds
1 tablespoon minced garlic (3 cloves)
2 teaspoons dry mustard
1 tablespoon chopped fresh rosemary leaves
1 tablespoon chopped fresh sage leaves
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons good olive oil
2 tablespoons freshly squeezed lemon juice
1 cup dry white wine

Steps:

  • Preheat the oven to 325 degrees F. Place the turkey breast, skin side up, on a rack in a roasting pan.
  • In a small bowl, combine the garlic, mustard, herbs, salt, pepper, olive oil, and lemon juice to make a paste. Loosen the skin from the meat gently with your fingers and smear half of the paste directly on the meat. Spread the remaining paste evenly on the skin. Pour the wine into the bottom of the roasting pan.
  • Roast the turkey for 1 3/4 to 2 hours, until the skin is golden brown and an instant-read thermometer registers 165 degrees F when inserted into the thickest and meatiest areas of the breast. (I test in several places.) If the skin is over-browning, cover the breast loosely with aluminum foil. When the turkey is done, cover with foil and allow it to rest at room temperature for 15 minutes. Slice and serve with the pan juices spooned over the turkey.

2 cloves garlic peeled and minced
1 tablespoon finely chopped fresh basil
1/2 teaspoon ground black pepper
2 each boneless turkey breast halves (3 pound)
6 whole cloves
1/4 cup vegetable oil
1/4 cup soy sauce
2 tablespoons lemon juice
1 tablespoon brown sugar

Steps:

  • In a small bowl, mix together the garlic, basil, and pepper. Rub over the turkey breasts. Insert one clove into each end of the turkey breasts, and one in the center. In a large shallow dish, blend vegetable oil, soy sauce, lemon juice, and brown sugar. Place the breasts in the dish, and turn to coat. Cover, and marinate in the refrigerator at least 4 hours. Preheat grill for high heat. Lightly oil the grill grate. Discard marinade, place turkey breasts on the grill. Close the lid, and grill turkey breasts about 15 minutes on each side, or to an internal temperature of 170 degrees F (68 degrees C).
