MARINATED TUNA STEAK
Steps:
- In a large non-reactive dish, mix together the orange juice, soy sauce, olive oil, lemon juice, parsley, garlic, oregano, and pepper. Place the tuna steaks in the marinade and turn to coat. Cover, and refrigerate for at least 30 minutes.
- Preheat grill for high heat.
- Lightly oil grill grate. Cook the tuna steaks for 5 to 6 minutes, then turn and baste with the marinade. Cook for an additional 5 minutes, or to desired doneness. Discard any remaining marinade.

MARINATED SEARED TUNA
Steps:
- In a flat, shallow dish, combine the soy, rice vinegar, sambal, white and light green scallions, garlic and ginger. Add the tuna and roll around to get the marinade on all sides. Cover and let sit in the fridge for up to 2 hours, turning the tuna periodically.
- Remove the tuna from the fridge and let sit in the marinade outside of the fridge for 20 to 30 minutes.
- When the tuna has come to room temperature, remove it from the marinade. With a paper towel, gently remove some of the excess marinade.
- Coat a large saute pan with peanut oil and bring it to a VERY high heat. When the pan is VERY hot but not quite smoking, pull the pan off the heat and add the tuna to the pan. Return the pan to the heat and sear the tuna for 1 minute on each side.
- Remove the tuna from the pan, let rest for 4 to 5 minutes and slice into 1/4 to 1/2-inch thick slices. Sprinkle with the dark green sliced scallion tops.
- Serve immediately with a little extra soy on the side if desired.
MARINATED GRILLED TUNA STEAK
The secret to a perfect tuna steak is to cook it as you would a rare or medium-rare steak, overcooking will produce a tough dry fish, the center needs to be pink -- plan ahead the steaks need to marinade for 8-24 hours, prep time includes refrigeration time --- I have made this in the past many times it is *very* good!

- In a bowl combine all marinade ingredients until well blended.
- Place the tuna steaks into a shallow glass dish (I use an 11 x 7-inch baking pan for this).
- Pour the marinade over the tuna steaks and turn to coat.
- Cover with plastic wrap.
- Refrigerate 8-24 hours (turning a couple of times during chilling).
- Preheat the grill to HIGH heat.
- Oil the grill grate.
- Remove the steaks from marinade (discard any marinade) and place on a plate.
- Season lightly with freshly ground black pepper on both sides.
- Grill the steaks for 5 minutes per side or until rare or medium-rare (DO NOT overcook the tuna or it will be dry!).
- Delicious!

- In a glass or ceramic pan, combine all the ingredients for the marinade. Add the tuna, turning it in the pan to cover with the marinade. Cover the pan and refrigerate for at least one hour, but not more than two hours. Turn the tuna from time to time. Drain, reserving the marinade.
- To prepare, preheat a charcoal grill or broiler until as hot as possible. Grill the tuna on one side for one to two minutes. Turn and grill another one to two minutes. The tuna should be seared on the outside and almost raw within.
- To serve, cut the tuna into quarter-inch slices. Place each slice on a piece of daikon and top with a shaving of pickled ginger. Spoon a bit of the marinade over the cooked tuna.

- Combine all ingredients of the marinade and whisk together with a fork.
- Place tuna steaks in a gallon zip-lock bag and add marinade, reserving 1 tablespoon. Let marinade for 15 minutes - 2 hours.
- Add cooking oil to a heated skillet set to medium-high heat.
- When oil is heated and shimmering add tuna steaks. Cook for 2-3 minutes per side, aiming to sear the exterior while the interior remains pink.

- Combine all of the ingredients in a small saucepan and bring to a boil. Remove from heat and let cool to room temperature. Strain and set aside.
- In a blender, purée the ginger with 1 tablespoon of the olive oil; add more olive oil as necessary until the ginger purée is very smooth. Transfer to a bowl and stir in the Champagne vinegar, soy sauce and 1/4 cup of the Kaffir Syrup. Set aside.
- Using a very sharp knife, slice the tuna steak horizontally 1/4-inch thick. Cut the tuna slices into thin ribbons that are the width of spaghetti. In a bowl, gently toss the tuna ribbons with the olive oil, Thai chile and shallot. Lightly season with salt.

In a bowl, toss the radishes with a few drops of Chinese chili oil and season with salt. Mound the avocado mixture in four soup bowls. Top with half of the radishes. Arrange half of the tuna on top in bundles. Top with more of the radishes, saving a few slices for garnish. Arrange the remaining fish on top in bundles. Sprinkle the remaining radishes on top. Spoon 3 tablespoons of Ginger Marinade around each salad and drizzle with a few drops of Chinese chili oil. Serve at once.

- Freeze the tuna loin for about an hour till it is semi frozen. Using a very sharp knife, cut thin slices. Arrange the slices neatly on the serving plate then brush the tuna with olive oil and sprinkle some sea salt evenly on all the slices. Cover and place in the refrigerator.
