¼ cup orange juice
¼ cup soy sauce
2 tablespoons olive oil
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
1 clove garlic, minced
½ teaspoon chopped fresh oregano
½ teaspoon ground black pepper
4 (4 ounce) tuna steaks

Steps:

  • In a large non-reactive dish, mix together the orange juice, soy sauce, olive oil, lemon juice, parsley, garlic, oregano, and pepper. Place the tuna steaks in the marinade and turn to coat. Cover, and refrigerate for at least 30 minutes.
  • Preheat grill for high heat.
  • Lightly oil grill grate. Cook the tuna steaks for 5 to 6 minutes, then turn and baste with the marinade. Cook for an additional 5 minutes, or to desired doneness. Discard any remaining marinade.

1/2 cup soy sauce
1/4 to 1/2 cup rice wine vinegar
2 teaspoons sambal oelek
4 scallions, white and light green sliced and finely chopped, dark green sliced on an extreme bias for garnish
2 cloves garlic, smashed and finely chopped
1 1/2 inches ginger, peeled and grated
Four 6-ounce sushi-grade tuna steaks, preferably in logs about 2- by 2- by 4-inches
Peanut oil, for searing

Steps:

  • In a flat, shallow dish, combine the soy, rice vinegar, sambal, white and light green scallions, garlic and ginger. Add the tuna and roll around to get the marinade on all sides. Cover and let sit in the fridge for up to 2 hours, turning the tuna periodically.
  • Remove the tuna from the fridge and let sit in the marinade outside of the fridge for 20 to 30 minutes.
  • When the tuna has come to room temperature, remove it from the marinade. With a paper towel, gently remove some of the excess marinade.
  • Coat a large saute pan with peanut oil and bring it to a VERY high heat. When the pan is VERY hot but not quite smoking, pull the pan off the heat and add the tuna to the pan. Return the pan to the heat and sear the tuna for 1 minute on each side.
  • Remove the tuna from the pan, let rest for 4 to 5 minutes and slice into 1/4 to 1/2-inch thick slices. Sprinkle with the dark green sliced scallion tops.
  • Serve immediately with a little extra soy on the side if desired.

The secret to a perfect tuna steak is to cook it as you would a rare or medium-rare steak, overcooking will produce a tough dry fish, the center needs to be pink -- plan ahead the steaks need to marinade for 8-24 hours, prep time includes refrigeration time --- I have made this in the past many times it is *very* good!

3 (4 ounce) fresh tuna steaks
ground black pepper (to taste) or lemon pepper (to taste)
1/4 cup orange juice
1/4 cup low sodium soy sauce
1 tablespoon hoisin sauce
1 tablespoon lemon juice or 1 tablespoon lime juice
3 tablespoons oil
2 tablespoons chopped fresh parsley
3 fresh garlic cloves, minced (can use less if desired)

Steps:

  • In a bowl combine all marinade ingredients until well blended.
  • Place the tuna steaks into a shallow glass dish (I use an 11 x 7-inch baking pan for this).
  • Pour the marinade over the tuna steaks and turn to coat.
  • Cover with plastic wrap.
  • Refrigerate 8-24 hours (turning a couple of times during chilling).
  • Preheat the grill to HIGH heat.
  • Oil the grill grate.
  • Remove the steaks from marinade (discard any marinade) and place on a plate.
  • Season lightly with freshly ground black pepper on both sides.
  • Grill the steaks for 5 minutes per side or until rare or medium-rare (DO NOT overcook the tuna or it will be dry!).
  • Delicious!

1 green onion/scallion ((1 Tbsp chopped green onion))

3 Tbsp ponzu ((for my homemade recipe, click here))
2 tsp roasted sesame oil
1 tsp soy sauce
1 tsp toasted white sesame seeds
½ lemon
Korean chili thread

Steps:

  • Gather all the ingredients.
  • Grate ginger and slice green onion thinly.
  • Combine the tataki sauce ingredients in a small bowl.
  • Heat the oil in a non-stick frying pan. When the oil is hot, sear the tuna 30 seconds on each side.
  • When all sides are seared, remove from the heat and let it cool. Slice the tuna into ¼ inch (6 mm) pieces. Pour the sauce and serve.

1 cup soy sauce
Juice of 1 lemon
1/4 cup dry Sherry
2 tablespoons finely chopped fresh ginger
1/4 cup chopped scallions
1 clove garlic, finely chopped
Pinch of red pepper flakes
2 tablespoons freshly ground black pepper
1 pound yellowfin tuna, deep red in color, cut in half lengthwise
1 large daikon, scraped with a vegetable peeler and cut into 1/4-inch slices
Shaved pickled ginger for garnish (available at Oriental markets)

Steps:

  • In a glass or ceramic pan, combine all the ingredients for the marinade. Add the tuna, turning it in the pan to cover with the marinade. Cover the pan and refrigerate for at least one hour, but not more than two hours. Turn the tuna from time to time. Drain, reserving the marinade.
  • To prepare, preheat a charcoal grill or broiler until as hot as possible. Grill the tuna on one side for one to two minutes. Turn and grill another one to two minutes. The tuna should be seared on the outside and almost raw within.
  • To serve, cut the tuna into quarter-inch slices. Place each slice on a piece of daikon and top with a shaving of pickled ginger. Spoon a bit of the marinade over the cooked tuna.

2 tablespoon Cooking oil
1 teaspoon Sesame Seeds
¼ cup Lime juice
¼ cup Soy sauce
2 tablespoons Olive oil
¼ cup chopped Cilantro
1/4 teaspoon Sugar
1 clove Garlic ((minced))
½ Jalapeno pepper ((diced))

Steps:

  • Combine all ingredients of the marinade and whisk together with a fork.
  • Place tuna steaks in a gallon zip-lock bag and add marinade, reserving 1 tablespoon. Let marinade for 15 minutes - 2 hours.
  • Add cooking oil to a heated skillet set to medium-high heat.
  • When oil is heated and shimmering add tuna steaks. Cook for 2-3 minutes per side, aiming to sear the exterior while the interior remains pink.
  • Remove from skillet and let rest for 5 minutes, spoon over the remaining tablespoon of marinade if desired, sprinkle with sesame seeds, then serve.
