BYRDHOUSE MARINATED TOMATOES AND MUSHROOMS
This is a dish I put together for my son, Jordan, who is a huge fan of both tomatoes and mushrooms. The flavors keep blending together, so it is great the day you make it and even better the following day.

- Preheat an outdoor grill for medium heat.
- Whisk together red wine vinegar, balsamic vinegar, salt, pepper, oregano, basil, and olive oil in a small bowl. Arrange the tomato and onion slices on a serving platter, and pour dressing overtop. Allow to marinate at room temperature while you cook the sausages.
- Pierce the sausages with the tip of a sharp knife a few times, then place onto the grill. Cook until no longer pink in the center, turning them frequently so that they cook evenly and have lightly browned, about 15 minutes total. Serve on French rolls with marinated tomatoes and onions.

- Preheat the grill to medium-high heat.
- For the tomatoes: Lay the tomatoes out on a large flat dish. Whisk together the oil, vinegar, salt, chili flakes, garlic and thyme leaves. Pour over the tomatoes and let sit for 1 to 2 hours.
- For the grilled onions: Rub the onions with a little olive oil and sprinkle with salt and black pepper. Grill until charred on each side, 4 to 6 minutes. Remove from the grill and reserve. - 1. Preheat the oven to 375 - 400 degrees F.
- 2. Toss the halved tomatoes with the chopped onions, 2 Tablespoons of the olive oil and the minced garlic. Spread the seasoned tomatoes, cut side up, in a single layer on a rimmed sheet pan and bake them for 30 to 40 minutes. The tomatoes will have a shriveled appearance and are lightly brown around the edges. After roasting, turn off the oven, and leave the tomatoes in there for an additional 30 minutes, so that they cook in the existing heat.

- In a bowl, add tomatoes, onions and basil. Set aside.
- In a new small bowl, whisk together olive oil, red wine vinegar, salt and pepper.
