16 ounces extra firm tofu
3/4 cup vegetarian worcestershire sauce (without anchovies)
1/2 cup water
1 tablespoon olive oil
1 tablespoon red pepper flakes
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon pepper

Steps:

  • Press as much water as possible out of the tofu. Slice the tofu crosswise into 1/2" to 3/4" pieces or about 8 pieces.
  • Combine all remaining ingredients in an 8 inch square baking dish and stir well.
  • Place the tofu slices in the marinade. If the liquid does not completely cover the tofu, turn the pieces carefully at least once to make sure it is thoroughly coated.
  • Refrigerate for 30 minutes to 1 hour.
  • TO GRILL: Remove the tofu from the marinade and cook on a medium-hot grill, basting occasionally with the marinade. The tofu is done when it is golden brown, about 6-8 minutes per side. Rotate the tofu 45 degrees every 3 minutes to create crosshatch grill marks.
  • TO BROIL: Remove the tofu from the marinade and place in a lightly oiled dish. Broil until the top is golden, about 5 to 7 minutes per side.

This is the tofu recipe that opens everyone's closed minds about this much maligned ingredient. The texture of the tofu was described as "similar to chicken and fish but not." I came up with it after many (failed) attempts at creating the perfect meatlover's tofu dish. The key is in the freezing of the tofu, so make sure you plan ahead. Prep time does not include freezing time.

1 (14 ounce) package extra firm tofu
1 cup marinade (I like a spicy peanut satay sauce)
1/2 cup flour (to dust)
1 -2 tablespoon oil

Steps:

  • Place the tofu (still in its packaging) into the freezer for at least 24 hours. Keeping it in there longer doesn't hurt it.
  • Remove the tofu from the freezer and defrost by bringing a pot of water to a boil and placing the frozen block of tofu (still in its packaging) in the pot for 10 minutes or until defrosted.
  • Remove the tofu from the packaging (finally!) and cut the block laterally in half so you have two block-sized slabs that are half the width.
  • Slice each slab lengthwise into three and place on a clean dish towel or paper towels. Cover the six pieces with another dish towel and place a cutting board or baking tray or other flat object on top. Place heavy cans or books onto the board and let sit for 15-30 minutes.
  • Cut the tofu lengths into cubes and place into marinade for a minimum of 30 minutes.
  • Remove from the marinade and dust the tofu cubes with flour.
  • Heat the oil in a frying pan over medium heat.
  • Shallow fry the cubes until all sides are golden brown and crispy.
  • Serve hot with rice or couscous and a puddle of the marinade as a dipping sauce.

  • Start by making the pickled veggies: pack the vegetables and jalapeño slices into a 500ml mason jar or resealable container. Sprinkle the sugar and salt over the veggies and then pour over the vinegar. Place the lid on the jar and shake up the mixture. If you can, let it sit for an hour – or you can make this in advance, it will keep well for five days in the fridge.
  • Slice the tofu into two equal squares. Then, take each square and cut horizontally into 2 thinner squares. In a small bowl, mix the hoisin and five spice. Brush the tofu with the hoisin mixture on both sides.
  • In a large nonstick skillet, heat 1 tbsp avocado oil over medium heat. Fry the tofu until it’s browned on both sides – about 3-4 min a side. If you want a more intense hoisin flavour, you can give the cooked slices an extra brush with hoisin once cooked - or add a bit to the bread!
  • To assemble the sandwiches, spread both sides of the toast with a bit of mayo and a drizzle of sriracha. Add some pickled veggies, squeezing extra moisture out if you’ve grated them. Then add a slice of tofu, some cucumbers and a little handful of mint and cilantro.
