SCALLOP BROCHETTES
The marinade is a real compliment to the sweetness of the scallops. You can also make this with shrimp/prawns (or a combination of the scallops and shrimp)

Steps:
- Thaw scallops, if frozen. Halve large scallops (you should have about 20 pieces).
- Place scallops in a plastic bag set in a shallow dish.
- For marinade: In a small bowl combine oil, sherry, mustard, honey, and soy sauce. Pour over the scallops. Close bag; marinate in the refrigerator for 30 minutes.
- Drain the scallops, discarding the marinade. Thread scallops on long metal skewers (If using scallops and shrimp, thread a scallop in the "curl" of each shrimp).
- Grill on the lightly greased rack of an uncovered grill directly over med. heat for 6 to 8 minutes or until scallops and/or shrimp are opaque; turning once.
- (Prep time includes marinating time).

Steps:
- On 12 skewers alternately place the shrimp, scallops, onions, peppers, tomatoes and mushrooms.
- In a large shallow, non-metalic pan, large enough to lay the skewers flat, mix the ale through salt and pepper together and lay the brochettes in the marinade, turning occasionally.
- Grill on each side for about 3 minutes. Serve the brochettes with rice and a side dish of Teriyake Sauce.

PAPPASITO'S BROCHETTE SHRIMP - COPYCAT RECIPE
When I was in college, I worked at Pappasito's as a waitress. I LOVED their brochette shrimp and I asked the cook for the recipe. He didn't give me the exact measurements, but he did give me the list of ingredients. I went home and played around with the quantities of the ingredeints and came up with what I think is very close to the real thing!

Steps:
- Clean and devein shrimp, leaving the last section and tails intact.
- With a paring knife, carefully slice each shrimp from tail to tip.
- Wash and seed jalapeno, and cut into a pieces about 1/2-inch X 1/2-inch squares.
- Cut slice of cheese into 12 small pieces.
- Stuff one small piece of cheese and one small piece of jalapeno into each shrimp.
- Wrap a half slice of bacon around each shrimp.
- Place shrimp on a wet skewer.
- Repeat this process until all shrimp have been placed on skewers.
- Place in refrigerator for a few minutes while you prepare the rest of the recipe.
- Mix the paparika, cayenne pepper and black pepper together.
- In a small skillet, heat butter and white wine until butter is completely melted.
- Prepare grill.
- ~note~I use my indoor grill, but these can be made on an outdoor grill too, but I would use a low flame!
- Remove shrimp from fridge and brush completely with melted butter.
- Sprinkle with seasonings.
- Grill on each side until shrimp are done.

SHRIMP & SCALLOP MARINARA
If you love garlic, marinara sauce, shrimp and scallops you will adore this recipe. Omit the scallops if you don't care for them!

- In a large saucepan, heat 2 tabelspoons of the olive oil with the garlic over medium heat.
- When the garlic starts to sizzle, add the tomatoes.
- Season with salt and red pepper.
- Bring to a boil.
- Lower the heat, and simmer for 30 minutes, stirring occasionally.
- Cook pasta according to package directions and drain.
- Heat the remaining oil in a stir-fry skillet over high heat.
- Add the shrimp and scallops.
- Cook, stirring frequently, until the shrimp turns pink.
- Be very careful not to overcook the seafood, as it will become rubbery if overdone.
- Add seafood to the marinara, and stir in parsley.
- Cook for 5 minutes, or until the sauce begins to bubble.
- Serve over pasta, and top with freshly shredded parmesan cheese if desired.
