4 salmon fillets (, skin on best (150-180g/5-6oz each, Note 1))
Olive oil (, for cooking)
1/3 cup (85 ml) soy sauce (, low sodium)
2 tbsp lemon juice
3 tbsp honey
2 tbsp olive oil
2 garlic cloves (, minced)
Parsley, chives or green onion (, finely chopped)
Lemon slices

Steps:

  • Place marinade in a ziplock bag and mix to combine.
  • Add salmon and massage to coat. Marinate for 3 - 24 hours (1 hr minimum).
  • Take out of fridge 30 minutes prior to cooking.
  • Remove salmon onto plate, allowing excess marinade to drain off.
  • Pour remaining marinade into a small saucepan and simmer over medium high for 3 to 5 minutes until syrupy.
  • Pour into bowl/jug (some used for basting, some for serving).
  • Brush BBQ grills with oil. Then preheat to medium (or medium low for strong BBQ's).
  • Drizzle salmon with oil, the place onto the BBQ flesh side down (skin side up).
  • Cook for 3 minutes or until golden, then use tongs to carefully turn.
  • Brush the flesh with Sauce, then close BBQ lid.
  • Cook for 3 - 4 minutes, basting one more time halfway through, or until the internal temperature is 50C/120F(medium rare) or 55C/130F (medium).
  • Transfer salmon to plate and serve with remaining Sauce.

2 sticks of fresh lemongrass
1 bunch of fresh coriander, (30g)
5cm piece of fresh ginger
4 cloves of garlic
½ x small bottle of low-salt dark soy sauce
1 large salmon fillet, (about 1kg), ask your fishmonger, scaled and pin-boned, from sustainable sources
4 tablespoons runny honey
2 red chillies
4 spring onions
2 limes

Steps:

  • Bash up your lemongrass. Pick the coriander leaves and finely slice the stalks. Peel and finely grate the ginger and garlic.
  • Mix the lemongrass, coriander stalks, ginger and garlic with the soy sauce, then rub all over the salmon fillet. Leave it to marinate for an hour or so, either in a plastic bag or on a tray covered with clingfilm.
  • Preheat your grill to its highest setting. When you're ready to cook the salmon, remove it from the marinade, brush with the honey and grill for 10 minutes.
  • Deseed the chillies and finely slice with the spring onions.
  • Fork up the cooked salmon a little so everyone can see the lovely, dark, sticky outside and the juicy, pink fish underneath.
  • Sprinkle the chillies and spring onions over the salmon with the reserved coriander leaves. Squeeze over the lime.

3/4 pound salmon fillet, skin and small bones removed

Freshly ground pepper
1 tablespoon soy sauce

1 ripe but firm avocado

Steps:

The truth is they are delicious but, the only thing that is hard about this recipe is waiting the few days until you can dig in! 1 1/2 Cups Water
6 TBS Sugar
2 TBS Kosher salt
2 pounds Salmon fillet (skin and bones removed* I like to use a salmon that has good fat marbling - the lean salmons like sockeye, do not work as well for this recipe.)
2-4 TBS Mixed pickling spices
6 Bay Leaves
2 Onions (sliced 1/4-inch-thick)

Steps:

  • Place the vinegar, water, sugar and salt in a sauce pan and bring to a boil.
  • Cut the salmon into pieces that are approximately one inch by two inches.
  • In a ceramic crock or glass bowl place a layer of salmon pieces, then a sprinkling of pickling spices and bay leaves, a layer of onions, then salmon, spices and onions - continuing until you have used them all up. Pour the marinade over the fish. It is best to let the marinate cool a bit before pouring over the mixture. Cover the bowl and refrigerate for three to four days.
  • Serve the salmon, along with its marinated onions, with toothpicks, for people to pick their piece!

  • Mix together soy sauce, honey, ginger, garlic spring onions and lime juice - taste to your liking and season with black pepper.
  • Rinse the fish with clean water and gently pat dry with kitchen paper.
  • Pour the sauce over the fish in a large bowl, making sure the fillets are covered. Seal the bowl with cling film and leave to marinade in the fridge for 20 minutes.
  • Once marinaded, loosely wrap the fish in individual foil parcels with a couple of spoonfuls of the marinade, leaving a 1 inch gap in the top of the foil.
  • Place on a tray in a pre-heated oven at around 160°C for 15-20 minutes. Pour the remaining marinade into the parcels half way through cooking. Meanwhile, cook your rice or noodles.
  • Serve with vegetables such as broccoli, green beans or red peppers. Unwrap the parcels and use a flat utensil to lift the fish out and place onto your plate.
  • Sprinkle the fish with sesame seeds and fresh chopped spring onion to garnish.
