2 pounds pork tenderloin

Steps:

  • Whisk together the olive oil, soy sauce, garlic, mustard, salt, and pepper in a bowl. Place the pork loin in a large resealable plastic bag and pour in the marinade. Marinate in the refrigerator at least 1 hour before cooking.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Transfer the pork loin to a baking dish; pour marinade over the pork.
  • Cook in the preheated oven until the pork is no longer pink in the center, 45 to 60 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

1/4 cup honey

Steps:

  • In a large resealable plastic bag, combine the first six ingredients; add pork roast. Seal bag and turn to coat; refrigerate for 8 hours or overnight, turning several times. , Preheat oven to 350°. Drain and discard marinade. Place roast on a rack in a shallow foil-lined roasting pan. 1 lemon, zest grated
3/4 cup freshly squeezed lemon juice (4 to 6 lemons)
Good olive oil
2 tablespoons minced garlic (6 cloves)
1 1/2 tablespoons minced fresh rosemary leaves
1 tablespoon chopped fresh thyme leaves
2 teaspoons Dijon mustard
Kosher salt
3 pork tenderloins (about 1 pound each)
Freshly ground black pepper

Steps:

  • Combine the lemon zest, lemon juice, 1/2 cup olive oil, garlic, rosemary, thyme, mustard, and 2 teaspoons salt in a sturdy 1-gallon resealable plastic bag. Add the pork tenderloins and turn to coat with the marinade. Squeeze out the air and seal the bag. Marinate the pork in the refrigerator for at least 3 hours but preferably overnight.
  • Preheat the oven to 400 degrees F.
  • Remove the tenderloins from the marinade and discard the marinade but leave the herbs that cling to the meat. Sprinkle the tenderloins generously with salt and pepper. Heat 3 tablespoons olive oil in a large oven-proof saute pan over medium-high heat. Sear the pork tenderloins on all sides until golden brown. Place the saute pan in the oven and roast the tenderloins for 10 to 15 minutes or until the meat registers 137 degrees F at the thickest part. Transfer the tenderloins to a platter and cover tightly with aluminum foil. Allow to rest for 10 minutes. Carve in 1/2-inch-thick diagonal slices. The thickest part of the tenderloin will be quite pink (it's just fine!) and the thinnest part will be well done. Season with salt and pepper and serve warm, or at room temperature with the juices that collect in the platter.

1/2 cup red wine
1 teaspoon dried rosemary
1 small onion, sliced
1 garlic clove
1 teaspoon salt

16 ounces canned corn

Steps:

  • Early in day: Trim fat from poik loin. In a plastic bag or shallow bowl, combine wine, rosemary, onion, and garlic. Add pork loin. Refrigerate at least 4 hours.
  • Heat oven to 325°F.
  • Remove pork from marinade; reserving marinade. Rub pork with 1 teaspoon salt. Place pork on rack in a small roasting pan. Add marinade and 1 cup water. Roast in oven for 1 - 1.5 hours or until 160F is reached (about 28-33 minutes per pound).
  • While roast is in oven, in a 10" skillet over high heat, boil 1/2 inch water. Heat green beans to boiling. Reduce to low; cover and simmer 5-10 minutes or until beans are tender/crisp. Drain, cool, then slice diagonally.

5-6 pound boneless pork shoulder roast
5 cloves garlic (minced)
2 tablespoons olive oil
2 tablespoons vinegar
1 tablespoon lime juice (fresh)
2 tablespoons oregano (dried)
1 tablespoon onion powder
1 tablespoon ground cumin
1 tablespoon chili powder
2 tablespoons sugar
1 tablespoon salt
1 teaspoon black pepper
2 large onions (sliced about ¼ inch thick)

Steps:

  • Begin by washing the pork under cold water and pat dry with paper towels. Transfer the pork to a glass dish and set aside.
  • Next, whisk together the garlic, olive oil, vinegar, lime juice, salt, oregano, onion powder, cumin, chili powder, sugar, and black pepper.
  • Rub this half of the mixture over the surface of the roast. Flip the roast over and rub the remaining mixture into the pork.
  • Wrap the dish with plastic wrap and refrigerate the pork to marinate for a minimum of 12 hours. Do not let the pork marinate for more than 18 hours.
  • An hour or two before you're ready to start the roasting process, remove the pork from the fridge and let the pork come back to room temperature.
  • In the meantime, cut up the onions and place them under the pork. Nestle the pork roast on top of the bed of sliced onions. Pour one cup of water into the pan.
  • With the oven preheated to 425 degrees, bake the pork, uncovered, for 1 hour.
  • Lower the temperature of the oven to 350 degrees and bake the pork, covered with aluminum foil, for 3 hours. Check the pork every 30 minutes. Add half cup of water if the pan is starting to dry out. You want to keep the moisture in the pan.
  • After 3 hours has passed, remove the aluminum foil and increase the heat to 425 degrees. Bake for 30 more minutes.
  • Next, turn off the heat and leave the pork in the oven for 30 more minutes.
  • Before slicing, allow the pork to rest at room temperature for 15 minutes.

½ cup olive oil
⅓ cup lower sodium soy sauce
¼ cup red wine vinegar
Juice of 1 lemon
1 tablespoon Worcestershire sauce
2 tablespoons chopped fresh parsley
2 teaspoons dry mustard (recommended: Colman's)
½ teaspoon ground black pepper
3 cloves garlic (minced)
2 pounds pork loin
1 cup chicken broth
Any drippings from cooking the loin
½ cup chicken broth or water
Strained marinade
2 teaspoons butter

Steps:

  • In a large resealable bag, combine the first 9 ingredients to create the marinade.
  • Add the pork loin and marinate for about 4 hours turning several times.
  • Preheat the oven to 350 degrees.
  • Place a large skillet coated with cooking spray over medium high heat.
  • Remove the loin from the marinade and pat it semi-dry. Reserve the marinade mixture.
  • Sear the loin on all sides, including the ends, in the hot skillet. Set the skillet aside without cleaning it (leave all the juices and cooked bits in it) and keep it for later as well.
  • Place the seared loin on a rack in a shallow pan. Add the 1 cup of chicken broth to the pan.
  • Cook for 40-50 minutes or until the internal temperature is 145 degrees (about 20-25 minutes per pound). Remove from the oven and let rest for 5 minutes before slicing.
  • During the last 15 minutes of cooking time, transfer the reserved marinade to a small pan and bring it to a rolling boil. Lower the heat but keep the marinade at a slow boil for ten minutes.
  • Put the skillet that you seared the loin in back over medium-high heat.
  • Pass the boiled marinade through a strainer into the skillet. Add the remaining 1/2 cup of chicken broth. Cook, stirring to loosen any cooked bits from the bottom of the pan. Bring to a low boil.
  • Add the butter and stir until melted.
  • Slice the loin in about 1/2" thick slices. Drizzle with the pan sauce.

1 1/2 cups chopped onions
1 tablespoon sugar

1 carrot, diced
1 stalk celery, diced
1/4 cup flour

Steps:

  • Place meat in a deep casserole dish large enough to hold it and marinade.
  • Combine 1 1/2 cups beer and next 7 ingredients pour over meat.
  • Add more beer to just cover the meat.
  • Marinate in the refrigerator overnight, turning occasionally.
  • Strain marinade, reserving solids and liquid.
  • Place solids, carrot and celery in bottom of a roasting pan.
  • Put meat on top.
  • Add a little liquid.
  • Roast in a 350º F oven 1 hour.
  • Pour on 1/4 of remaining marinade over meat.
  • Continue roasting for 1 to 1 1/2 hours more, basting occasionally with drippings and more marinade.
  • until meat thermometer registers 170º F.
  • Mix flour and 1/3 cup marinade to a smooth pasted.
  • Place roast on serviving dish keep warm.
  • Skim fat from cooking liquid, strain, add flour mixture and water to measure 2 cups, cook in roasting pan stirring constantly, until thickened.
  • Serve sauce over sliced meat.

  • Make your marinade the day before, or at least an hour before cooking. Start by bashing up 1 teaspoon fennel seeds, ½ teaspoon cumin seeds and 2 cloves in a pestle and mortar.
  • Add 1 heaped tablespoon sweet smoked paprika and the zest and juice of 1 orange and muddle it all together.
  • Peel and very finely chop 4 cloves of garlic, then pick and very finely chop 1 small bunch of fresh thyme and add both to the pestle and mortar.
  • Lay 4 x 400g higher-welfare pork fillets on a tray and season with sea salt and freshly ground black pepper. Spoon over most of the marinade and massage it into the fillets until they’re completely coated (save a little for brushing over during cooking to build up a deliciously sticky blackened glaze).
  • Leave the mighty ingredients to work their magic for at least an hour, preferably overnight, then you’re ready to get cooking.
