COUNTRY PORK CHOP AND RICE BAKE

Country Pork Chop and Rice Bake image

A simple Country Pork Chop and Rice Bake is an easy dinner recipe with just 10 minutes of prep.

Provided by Blair Lonergan

Categories     Dinner

Time 1h10m

Number Of Ingredients 9

1 (10.5 oz) can condensed cream of mushroom soup, NOT diluted
2 cups beef broth
1 cup uncooked long grain white rice
¼ teaspoon garlic powder
¼ teaspoon dried chives
¼ teaspoon onion powder
4 thick cut pork chops ((bone-in or boneless is fine))
1 (1 ounce) packet Lipton Onion Soup & Dip Mix (or other seasoning of choice, see notes below)
Optional garnish: chopped fresh parsley or basil

Steps:

  • Preheat oven to 350°F. Spray a 9 x 13-inch baking dish with cooking spray.
  • Whisk together the soup, broth, rice, garlic powder, dried chives, and onion powder. Transfer to the prepared dish.
  • Pat the pork chops dry; place on top of the rice. Sprinkle onion soup mix over the pork chops, to taste. If you don't like a strong onion flavor or if you don't want the chops too salty, use just a portion of the seasoning (not the whole packet).
  • Cover dish with foil and bake for 30 minutes. Check the pork chops at this point. If they are done (and have reached an internal temperature of 145°F), remove them from the dish, cover with foil, and set aside to rest. Give the rice a stir. The rice will not be tender yet, so cover the dish again and return to the oven for about 25-30 more minutes, or just until rice is tender and most of the liquid is absorbed. Fluff the rice with a fork and serve with the pork chops. Garnish with herbs, if desired.

PORK CHOPS OVER RICE

Pork Chops Over Rice image

If you asked my husband to name his favorite foods, he'd likely mention these chops. I've also served this appealing skillet supper to company. Ever since I clipped the recipe out of the paper many years ago, it's become a standard in my kitchen. We live in a semi-rural area with two horses and six cats!

Baked Pork Chops and Rice image

Growing up, this was a staple in my home. This is a great recipe because the pork and rice cook in the same dish. The rice is flavorful and the pork chops come out nice and tender.

  • Lay a paper towel on a cutting board and put a pork chop on the towel (this prevents the meat from sliding around). Pound the pork with the spiked side of the meat mallet. Flip over the pork chop and pound the other side with the spiked surface. Flip it over again and use the flat side of the mallet to pound the pork chop so it’s about half its original thickness. Do the same with the remaining pork chops then place them in a large bowl.
  • Put the soy sauce, rice wine, sugar, salt , five-spice powder and white pepper in a small bowl and stir to combine. Finely mince the garlic, add it to the bowl and mix well.. Pour this marinade into the bowl with the pork chops and mix, making sure the marinade coats the surface of the meat. Leave at room temperature for at least an hour (and up to four, although refrigerate it if it’s warm). Mix occasionally so the pork chops are evenly coated.
  • While the meat is marinating, pour the rice into your rice cooker of choice (a Chinese clay pot is best, but you can also use an electric cooker or cook the rice on the stove in a medium-size pan). Wash the rice in several changes of water, then drain. Add enough water to the rice so the total weight is 660g (23⅓oz). Leave it to soak for at least 30 minutes.
  • While the rice is soaking, prepare the pak choi. Wash the vegetable, rinsing thoroughly between the outer leaves, where dirt tends to collect. Thinly slice the vegetable. Bring a large pot of salted water to the boil, add the pak choi and stir immediately. Leave for 30 seconds, then drain, rinse with cold water and drain again. Squeeze out as much water as possible from the pak choi.
