MARINATED PORK FRIED RICE RECIPE

Pork:
1-1/4 lbs pork loin, cut in thin strips
1/4 cup molasses
1 tbsp light brown sugar
1/8 cup light soy sauce
1 tbsp Hoisin Sauce
1 tsp sweet chili sauce
3 scallions, chopped
1 tsp five spice powder
1 tsp Gilroy Farms stir-fry seasoning blend (garlic and ginger mix)
Combine all ingredients except pork in a large bowl. Place pork in a 1 gallon zip-top bag and pour marinade over. Marinate at least two hours or overnight.
Fried Rice:
Marinated pork, drained. (ingredients above.)
4 cups cooked and cooled white rice
3 cloves garlic, minced
3 scallions, sliced thin
1/2 cup assorted bell pepper, sliced thin
1/2 cup baby peas
3 eggs, beaten
Salt and pepper to taste
vegetable oil, for cooking.

Steps:

  • Heat wok or very large cast iron skillet over high heat. Add 1 tbsp. oil. When oil smokes, add 1/3 of the pork, stirring constantly until it is just under done. (about 2 minutes.) Transfer pork to a plate or bowl and continue cooling the rest in batches.
  • Add another tbsp oil to wok or skillet. Add rice, garlic and peppers one at a time, stirring each for a few seconds over high heat. Add oil as necessary.
  • Add eggs and toss to coat rice. continue stir-frying until eggs appear slightly dry and mixture is completely coated.
  • Add remaining ingredients and toss to combine.
  • Add pork, stir thoroughly and serve immediately.

12 ounce pork tenderloin, cut into 1/2-inch dice
2 tablespoons hoisin sauce
1 tablespoon honey
3 tablespoons soy sauce
3/4 teaspoon Chinese five-spice powder
2 tablespoons peanut oil
1/2 large white onion, finely chopped (1 cup)
4 cloves garlic, minced (2 tablespoons)
1 medium carrot, finely diced (1/2 cup)
3 cups cooked white rice
4 large eggs, lightly beaten
5 ounces frozen peas, thawed
3 scallions, thinly sliced on the bias
1 teaspoon sesame oil

Steps:

  • In a medium bowl, combine pork, hoisin, honey, soy sauce, and five-spice powder. Marinate for 15 minutes.
  • Heat a wok over high heat. When wok smokes, add oil. When oil shimmers, add onion and garlic and cook, stirring, for 30 seconds. Strain pork, reserving marinade, and cook, stirring, until browned, 2-3 minutes.
  • Add carrots and rice to wok with reserved marinade and cook, stirring constantly, until rice absorbs liquid, about 2 minutes.
  • Create well in center of wok, pour in eggs, and scramble.
  • Add peas, scallions, and sesame oil to wok and stir until incorporated. Remove from heat and serve immediately.

ASIAN MARINATED GRILLED PORK TENDERLOIN

3/4 cup soy sauce
1/2 cup rice wine vinegar
1 tablespoon hot chili sauce (recommended: sambal oelek)
1 (1-inch) piece ginger, finely chopped
3 garlic cloves, smashed and finely chopped
1 scallion, both green and white parts, thinly sliced
1 orange, zested
4 pork tenderloins
2 tablespoons coriander seeds, toasted and ground

Steps:

  • In a medium bowl, combine the soy, rice wine vinegar, chili sauce, ginger, garlic, scallions and orange zest. Place the pork in a large container or bowl and pour the marinade over the pork. Cover with plastic wrap, and let sit for 2 hours at room temperature, or overnight in the refrigerator.
  • Remove the pork from the container, put the marinade in a small saucepan and bring it to a boil over medium heat. Remove from the heat and reserve it for drizzling over the pork when serving. *WARNING: This liquid MUST be brought to a boil to kill any bacteria from raw meat juices.
  • Preheat the grill to medium-high heat.
  • Dust the pork liberally with the ground coriander seed and place on the preheated grill. Brown it on all sides then move it to a cooler part of the grill to cook it to desired doneness, about 10 to 12 minutes.
  • Remove the pork from the grill to a cutting board and let rest for 10 minutes before slicing. Slice the pork on the bias and place on a serving platter. Serve drizzled with the reserved boiled soy marinade.

420g pack pork fillet, trimmed and sliced into medallions
1 tbsp soy sauce
1 tbsp Chinese five-spice
2 tbsp honey
1 tbsp cornflour
1 egg, beaten
225g cooked rice
200g frozen pea, defrosted
2 spring onions, sliced

Steps:

  • Mix the pork medallions with the soy sauce and five-spice; leave to marinate for 5 mins. Heat a large non-stick pan, then fry the pork for 2-3 mins on each side until cooked through. Pour in 150ml boiling water with the honey and bubble for 2 mins. Mix the cornflour with a little water, stir into the sauce and cook until it thickens and is glossy.
  • Meanwhile, make the fried rice. Pour the egg into a non-stick frying pan to make an omelette, cooking for 2 mins on each side. Remove, roll up, and cut into thin strips. Add the rice to the pan with the peas and stir-fry for 3-5 mins until piping hot, then gently stir through the omelette with the spring onions and seasoning and cook for 1 min. Serve with the pork and a dash more soy sauce.

I have only posted 1 of my own pork recipes, to tell you the truth, it has never been my favourite meat. Hence I haven't made to many, but since trying a few zaar recipes and seeing how good it can be and how versatile it is, I thought I would experiment some more on my own. I made this last night and my hubby and I thought it was delicious I marinated the pork over night and then cut it into thin strips and served over fried rice. Yum Yum

2 (500 g) pork tenderloin
3 tablespoons light soy sauce
2 tablespoons sherry wine
60 ml hoisin sauce (I use blue dragon brand I find this great others can be thick and overpowering.)
4 garlic cloves, crushed
2 teaspoons fresh ginger, grated
2 teaspoons sesame oil
3 tablespoons honey
1/4 teaspoon five-spice powder
50 ml teriyaki sauce
1 1/2-2 cups cooked rice (preferably cooked the day before and refrigerated overnight to allow rice to dry completely.)
4 medium eggs, lightly beaten
2 tablespoons oil
1 large carrot, diced
1 red pepper, diced
2 garlic cloves, crushed
2 teaspoons fresh ginger, grated
2 teaspoons sesame oil
100 g fresh shiitake mushrooms, stems removed and thinly sliced
5 green onions, finely sliced
100 g snow peas, sliced
60 g baby corn, chopped
1/4 cup frozen peas
2 -3 tablespoons soy sauce
1 tablespoon sugar

Steps:

  • Combine all marinade ingredients mix well and add pork, marinade several hours or as I said above preferably overnight.
  • Remove pork from marinade, reserve marinade, Place pork on wire rack in oven dish. Bake uncovered in 180c oven 11/2 hours or until cooked through. Brush occasionally with reserved marinade and turn over once during cooking.
  • Serve pork over fried rice. The pork has a good flavour and is moist and tender, I prefer mine plain over rice but my hubby spoons a couple of spoonfuls of left over liquid from roasting pan over his. So feel free to serve as you prefer.
  • For the Rice.
  • Heat half the oil in a wok or large frying pan, add eggs, cook stirring until creamy, remove to plate for later.
  • Heat the other half of the oil and sesame oil in same pan, add carrot and pepper stir fry a couple of minutes, add garlic and ginger, stir fry for 1 minute more.
  • Add soy sauce, mushrooms, corn and frozen peas stir fry a few Min's until veg are just tender, add snow peas, onion and sugar stir fry about a minute. Finally return egg along with rice and stir fry until heated through.
  • Place Rice in bowls lay sliced pork over the top and serve immediately.

3 Tablespoons soy sauce (or alternative such as Bragg's Liquid Aminos)
2 Tablespoons vinegar (I used balsamic, try rice, red wine, even apple cider)
2 Tablespoons oil (I use Avocado and Olive Oil)
2 teaspoons toasted sesame oil
1 Tablespoon heaping brown sugar, light or dark
4 cloves garlic (crushed and rough chopped (or ½-1 teaspoon garlic powder))
1 Tablespoon ginger (fresh grated (or ¼-½ teaspoon ground ginger))
1-2 lb pork tenderloin

Steps:

  • Mix all ingredients together using a whisk until thoroughly mixed.
  • Place pork tenderloin(s) into gallon sized freezer bag (if freezing) squeeze our air, seal tightly and lay flat in freezer.
  • Or, if making right away place in glass dish with marinade, turning occasionally. Refrigerate for 2-3 hours on counter turning occasionally or in refrigerator overnight.
  • If frozen, when ready to barbecue, remove from freezer and thaw in fridge overnight. Or on counter for several hours, turning occasionally. Heat BBQ on medium-high, brush grill with oil.
  • Remove pork from marinade, placing pork onto hot preheated grill. Cover and cook on each side for 7-8 minutes minutes per side, most tenderloins are triangular for a total of about 20-25 minutes.
  • Baste with extra marinade, discard any leftover, or simmer leftover marinade for 10 minutes on stovetop and pour over cooked meat.
  • Remove from grill and tent loosely with aluminum foil allowing to rest for 5 minutes.
  • Slice into medallions, pour any juices over sliced meat and serve immediately. Pair with steamed broccoli, or these delicious roasted brussels sprouts and steamed white or brown rice.

2 tablespoons soy sauce
1 tablespoon dry red wine (such as Merlot)
1 ½ teaspoons brown sugar
1 ½ teaspoons honey
¼ teaspoon ground cinnamon
1 clove garlic, minced
3 tablespoons vegetable oil
2 eggs, beaten
2 ½ cups cooked rice
½ cup chopped onion
1 cup frozen peas, thawed and drained
1 cup bean sprouts
3 tablespoons soy sauce
¼ cup chopped green onions

Steps:

  • Combine pork, soy sauce, red wine, brown sugar, honey, cinnamon, and garlic in resealable zip-top bag. Seal and squish the bag to make sure marinade is evenly dispersed over the meat. Let stand at room temperature for 1 hour or refrigerate overnight for best results.
  • Preheat the oven to 350 degrees F (175 degrees C). Drain marinade into a cup and reserve. Place pork on a rimmed baking sheet.
  • Bake in the preheated oven, turning and basting with the marinade frequently, until pork is no longer pink in the center, about 45 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Heat oil in a large skillet or wok over medium to medium-high heat. Pour eggs into the skillet; cook and stir until set but still fluffy, 3 to 4 minutes. Add pork, rice, and onion. Stir to combine. Cook, stirring occasionally, until onion begins to turn translucent, about 6 minutes.
  • Sprinkle peas, bean sprouts, and soy sauce onto the fried rice. Stir to incorporate and cook, stirring occasionally until heated through, about 5 minutes. Add green onions and mix to combine. Serve immediately.
