The only thing more crowd-pleasing than cheese is marinated cheese. If Manchego isn't your thing, go for any semi-firm cheese like white cheddar, Gouda, or Monterey Jack.

1 head of garlic, cloves separated and peeled (about 12 cloves)
1 small orange, quartered through stem end, thinly sliced crosswise, seeds removed
1/2 cup extra-virgin olive oil
3 sprigs rosemary
Kosher salt
1 lb. young Manchego cheese, cut or broken into 3/4" pieces

Steps:

  • Cook garlic, orange, and oil in a small saucepan over medium heat, stirring occasionally, until garlic starts to turn golden, 10-12 minutes. Remove from heat and add rosemary sprigs. Season with salt and let cool.
  • Pour garlic mixture into a medium bowl, add cheese, and gently toss to coat cheese. Cover and chill at least 12 hours before serving.
  • Do Ahead
  • Cheese can be marinated 3 days ahead. Keep chilled.

5 ounces manchego goat cheese (or any other goat cheese)
1 garlic clove, smashed
1 tablespoon white wine vinegar
3 tarragon, sprigs
3 fresh thyme sprigs
1 teaspoon black peppercorns
olive oil, to cover

Steps:

  • Cut the cheese into bite sized pieces (1-inch by 1-inch). Leave the cheese's rind on. It acts as a stabilizer for the cheese pieces (don't worry if your cheese doesn't have the rind. This recipe will still work out. It is just more helpful and fancier when the rind is left).
  • Mix together the oil, peppercorns, garlic, and herbs. Pour over cheese in a small bowl. Cover and chill for up to 3 days.

Italian marinated olives are an easy party appetizer of mixed olives, citrus, and herbs which takes only a few minutes to put together.

1 cup extra virgin olive oil
5 cloves garlic, (smashed)
5-6 strips citrus peel, (lemon and orange)
2 tsp grated orange zest
1 tsp cumin seed, (lightly crushed)
1 tbsp fresh chopped rosemary
1 tbsp fresh chopped thyme
1 tsp crushed red pepper, (optional)
2 leaves bay
3 cups mixed olives, (black and green, unpitted)

Steps:

  • In a medium saucepan, gently heat the olive oil and garlic until it is quite warm, about 2 minutes. Add all the rest of the ingredients except the olives and warm it over very low heat for 3 minutes more. Take the pan off the heat, add the olives, and stir to combine.
  • Transfer the olives to a sealed container and let them marinate for at 2 days and up to 1 week in the refrigerator.

Lots of oomph in this one! You may use goats cheese, mozzarella, or feta! Adapted from Country Home magazine. This recipe may be doubled easily.

16 ounces logs fresh goat cheese (or 2 lb. mozzarella cheese) or 1 lb feta cheese (or 2 lb. mozzarella cheese)
10 black peppercorns
6 garlic cloves, roasted
4 large sage leaves
2 dried hot red chili peppers
2 sprigs fresh rosemary
2 bay leaves
3 cups extra virgin olive oil (or more, depending on the size and shape of the containers)

Steps:

  • Sterilize two 16 oz. conatiners with lids. Set aside.
  • Cut the goats cheese logs crosswise into 1" thick rounds, or cut the feta or mozzarella into large cubes. Divide cheese among sterilized jars, adding equal amounts of spices and herbs as you go, being careful that the flavorings are evenly dispersed throughout each jar. Pour in enough olive oil to cover the cheese by about 1".
  • Using a table knife, work around the inside edges of the jars to dispel any air. Cover and refrigerate for up to 3 weeks. Bring to room temperature before serving.
  • Makes two 16 oz. containers.

This is a very colorful and tasty appetizer. Because it has such a stunning presentation, it is a great appetizer for the holidays. I take this to every function and gathering we attend - only because everyone else requests it!

½ cup olive oil
½ cup white wine vinegar
1 (2 ounce) bottle diced pimento, drained
3 tablespoons chopped fresh parsley
3 tablespoons minced green onions
3 cloves garlic, minced
1 teaspoon sugar
¾ teaspoon dried basil
½ teaspoon salt
½ teaspoon ground black pepper
1 (8 ounce) package Cheddar cheese
1 (8 ounce) package cream cheese, cold

Steps:

  • In a jar with a tight fitting lid, combine the olive oil, wine vinegar, pimento, parsley, green onion, garlic, sugar, basil, salt and pepper. Shake vigorously to blend. Set aside.
  • Cut the block of Cheddar cheese in half lengthwise. Cut crosswise into 1/4 inch slices to form squares. Repeat with cream cheese. Arrange cheese squares alternately in a shallow baking dish with slices standing on edge. You can arrange in a single long row, or 2 parallel rows depending on the size of your dish. Pour the marinade from the jar over the cheese slices, cover and refrigerate for at least 6 hours, or overnight.
  • To serve, remove slices to a serving platter so they are still arranged in an alternating pattern. Spoon some of the extra marinade over the cheese, and serve with crackers.

Cover and let stand at cool room temperature for 24 hours, stirring often to redistribute the seasonings. With a slotted spoon, transfer the cheese cubes to a serving bowl or plate and serve with toothpicks.
