6 large tomatoes, cut into wedges
1/2 cup thinly sliced green onions
1/3 cup olive oil
1/4 cup red wine vinegar
1/4 cup minced fresh parsley
2 garlic cloves, minced
1 teaspoon salt
1 tablespoon snipped fresh thyme or 1 teaspoon dried thyme
1/4 teaspoon coarsely ground pepper

Steps:

  • Place tomatoes and onions in a shallow serving bowl. , In another bowl, combine the remaining ingredients; pour over tomatoes. Cover and refrigerate for at least 2 hours or overnight.

2 pounds fresh green beans, trimmed
¼ cup olive oil
2 cloves garlic, minced
1 cup kalamata olives, pitted and sliced
2 tomatoes, seeded and chopped
2 tablespoons red wine vinegar
1 tablespoon chopped fresh oregano
½ teaspoon salt
¼ teaspoon ground black pepper
1 (8 ounce) package crumbled feta
1 bunch fresh oregano sprigs

Steps:

  • Bring a large pot of salted water to a boil over medium heat and drop in the green beans; cook until slightly tender, but still crisp, 8 to 10 minutes. Immediately drain the green beans and plunge into ice water to stop the beans from cooking further. Drain the beans and place them in a shallow serving dish.
  • Heat the olive oil in a skillet over medium heat. Cook garlic in the oil for about 30 seconds. Remove the skillet from the heat. Stir in the olives, tomatoes, vinegar, oregano, salt, and pepper. Pour mixture over green beans. Toss together until beans are evenly coated. Sprinkle feta cheese over the top and garnish with oregano sprigs. Chill at least 3 hours before serving.

Often times I use the leftover marinade when the first batch is gone and add it to the next batch. It's tangy taste is much loved, even by my non veggie-loving kids!

3 extra-large tomatoes (about 2 pounds)
1/3 cup extra-virgin olive oil
1/4 cup red wine vinegar
2 tablespoons finely chopped red onion
1 large clove (or two small cloves garlic, finely minced or crushed)
1 tablespoon minced fresh parsley (plus additional for garnish)
1 tablespoon minced fresh basil (plus additional for garnish)
1 teaspoon salt
Freshly ground black pepper (to taste)

2 pounds green tomatoes (about 6 medium)
2 garlic cloves, sliced
1 sprig fresh dill
2 cups white vinegar
2 cups water
2 tablespoons salt
2 tablespoons sugar
1 tablespoon whole black peppercorns
1/2 teaspoon red pepper flakes
2 tablespoons bourbon

Steps:

  • Slice tomatoes, either into 1/4-inch thick slices, or halved and cut into 8-10 wedges. Divide tomatoes among 3 pint jars, packing the tomatoes tightly in each jar. Place a few slices of garlic and a few fronds of dill in each jar.In a small saucepan, combine vinegar, water, salt, sugar, peppercorns, and red pepper flakes. Bring to a simmer until sugar is completely dissolved. Remove from heat and add bourbon.Pour brine over pickles, filling jars to within 1/4 inch of the top. Make sure all of the tomatoes are fully submerged. If they start to 'float', wedge a few more tomato pieces in there to keep them firmly packed.Screw on jar lids and refrigerate for at least 3 days to allow pickles to fully pickle, and after that pickles will keep in the refrigerator for up to 2 weeks.
