Quick and easy, grilled Greek lamb souvlaki skewers are marinated in a simple Mediterranean marinade for just 30 minutes. Serve with some tzatziki sauce.

1 lb. lamb leg or shoulder, cut into 1.5-inch cubes
1/3 cup olive oil, divided
1 tablespoon lemon juice, freshly squeezed
2 tablespoons garlic, minced
2 tablespoons Italian seasoning
1 tablespoon cumin powder
2 teaspoons salt (or to taste)
1 tablespoon ground black pepper

Steps:

  • Marinate the lamb. Add cubed lamb into a zip-loc bag, and add 1/4 cup olive oil, lemon juice, minced garlic, Italian seasoning, cumin, salt and pepper. Press the air out of the bag and seal tightly. Press the marinade around the lamb to coat. Place in the fridge to marinate at least 30 minutes or overnight, to infuse all the seasoning and spices into the meat.
  • . Thread the lamb onto skewers, and lightly brush some olive oil.
  • . Preheat a grill pan over medium high heat for 4-5 minutes and lightly brush the grill with remaining olive oil. You should notice the oil shimmer and sizzle when it's hot and ready. For well done, cook 1-2 more minutes on each side or until the internal temperature reaches above 160 F.

1 kg top sirloin beef cut in chunks (35 oz.)
2 tsps mustard
1-2 tsps honey
juice of 1 lemon
zest of 1 lemon
1/2 tsp hot paprika
6 tbsps olive oil

freshly ground black and pink peppercorns (to taste)
1 tsp dried oregano
2 tsps fresh thyme
1 clove of garlic, minced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 large onion, chopped

9-10 wooden skewers

Steps:

  • To prepare this Greek beef souvlaki recipe, cut the beef into equal sized (3 cm/1 inch) cubes and set aside.
  • Prepare the marinade for the beef kabobs. In a large bowl add all the ingredients for the marinade and the meat and blend to coat. Cover the bowl with plastic wrap and let them marinade for at least 1 hour in the fridge. Preferably leave them to marinade overnight so they soak up even more all those wonderful flavours.

⅔ pound lamb meat from a leg of lamb, cut into 1½-inch cubes (about 18 pieces)
1 ½ teaspoons garlic powder
¾ teaspoon salt
1 ½ teaspoons oregano
½ cup extra-virgin olive oil
1 tomato, cut into a small dice (about ¾ cup)
½ onion, diced (about 1 cup)
½ green pepper, diced (about ¾ cup)
¾ cup feta cheese, cut into cubes or crumbled
1 cup kalamata olives
1 tablespoon extra-virgin olive oil
½ teaspoon oregano
salt, to taste
1 cup kalamata olives

Steps:

  • Make the lamb marinade: In a medium bowl big enough to hold all the lamb pieces, mix together the garlic powder, salt, oregano and olive oil. Place the lamb in the marinade and stir gently to coat all the pieces. Cover and refrigerate for 1 to 2 hours.
  • Make the Greek salad: Combine the diced tomatoes with the onion, green pepper, feta cheese and kalamata olives. Stir in the olive oil and oregano, and season with salt.
  • When the lamb is done marinating, place the pieces on the wooden skewers to create kebabs with about 6 pieces on each skewer. Heat a griddle or grill to high heat and place the lamb kebabs on the grill. Cook for 10 to 15 minutes, rotating often to cook on all sides. Remove from the grill when done, and then grill the tomato slices until softened.
  • Warm the pita bread on the grill and cut each one into quarters. To serve, place the pita pieces on a plate and layer with the kebabs, grilled tomatoes, potatoes and Greek salad.

1 kg pork shoulder, boneless
1 medium onion, grated
3 cloves of garlic, minced
1 tsp salt, heaping
1 tsp black pepper, heaping
1/4 cup olive (or canola) oil
1 tsp dried Greek oregano, heaping

Steps:

  • Cut off any excess fat or membranes from the meat, then cut it into equal sized cubes.
  • Toss the meat in a large bowl together with all the marinade ingredients, then refrigerate for a minimum of five hours (best overnight). Also, place the wooden skewers in a shallow container filled with water overnight.
  • The next day, take the meat out of the refrigerator and first wait until it comes to room temperature and then skewer it.
  • Grill the souvlaki over medium-high heat, about 3-4 minutes per side. Keep warm until ready to serve. Sprinkle the grilled souvlaki with lemon juice, salt, and Greek oregano.
  • Serve just with bread, or inside a pita with tzatziki sauce and toppings of your choice.
