GARLIC AND LIME MARINATED CUBE STEAK
This is a paleo-friendly and very budget-friendly dish that uses one of the cheapest cuts of meat out there.

Steps:
- Season cube steak pieces with salt and pepper and place in shallow dish. Pour lime juice and sprinkle garlic over pieces and turn to coat on both sides.
- Place in refrigerator for at least four hours and up to overnight. Turn once or twice during the marinating time to insure marinade is even.
- Remove from refrigerator and allow to sit at room temperature while preparing onions.
- Heat 2 tablespoons of coconut oil in large skillet.
- Saute onions over medium heat until they are very soft and beginning to take on a golden color (10-20 minutes). Remove onions and set aside in bowl, squeeze additional lime over them and mix.
- Increase heat to medium-high and heat remaining 2 tablespoons of coconut oil in same skillet. Add steaks and cook about 2 minutes per side, flipping when you begin to see the juices rising to the surface.
- Serve steaks topped with onion mixture and garnished with chopped parsley.

This is a family recipe that has been developed only over the last 5 years. In this short time it's made me famous in our close circle, but until now I've never shared it with anyone.

- Place the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, and pepper in a blender. Add hot pepper sauce and garlic, if desired. Blend on high speed for 30 seconds until thoroughly mixed.
- Pour marinade over desired type of meat. Cover, and refrigerate for up to 8 hours. Cook meat as desired.

- In a large resealable plastic bag, combine the soy sauce, garlic and onion; add cube steaks. Seal bag; turn to coat. Refrigerate for 30-45 minutes, turning once. , Discard marinade. Place steaks on a greased broiler pan. Broil 4 in. from the heat for 4 minutes on each side or until meat reaches desired doneness.

OUTRAGEOUSLY WONDERFUL MARINATED VENISON STEAKS
This recipe is from Taste of Home and it's the most wonderful marinade for venison that I've ever tried! It's great with venison steaks and tenderloins, but I'm sure it would be fabulous with beef also. I get better results if I grill my steaks rather than broil, but that's just me. It's the only way I've been able to keep venison steaks tender and juicy - you won't be disappointed either! I often double the marinade recipe so that I have plenty for marinating, basting and for serving. I have not included the marinating time in the prep time, but it's best if marinated overnight.

- Place venison in a large Ziploc bag.
- In a bowl, combine all of the remaining ingredients.
- Pour half over the venison; seal bag and turn to coat.
- Refrigerate overnight.
- Refrigerate remaining marinade.
- Drain and discard marinade from the steaks.
- Broil steaks 3-4 inches from the heat for 4 minutes.
- Turn; baste with reserved marinade.
- Broil 4 minutes longer.
- Alternatively, grill steaks on a gas grill over high heat for 3 1/2 to 4 minutes a side, basting often.
- I prefer to grill venison to medium-rare at most so that it remains tender.
- Serve steaks with more of the reserved marinade.

- Whisk together 2 eggs and the can of evaporated milk in a bowl.
- Place the cube steaks in the milk and turn them to coat them in the mixture. The soaking time depends according to how tough the steaks are and how tender you would like them to be. Like a marinade, however, you will get best results by soaking the steaks for four hours or overnight.
- Take the steaks out of the refrigerator and allow them to come to room temperature in the milk mixture. Allowing the steaks to warm up allows the milk to penetrate the meat more, which further tenderizes your steak.
- Coat the steaks in your flour/cracker mixture and fry them as your recipe directs.
- Tips: For even more tender steaks, place them between two sheets of waxed paper and pound them with a meat mallet before you soak them. Can use zip bag to marinate.
