This marinated salad combines a variety of vegetables with a sweet oil and vinegar dressing.

1 (15 ounce) can peas, drained
1 (15 ounce) can shoe peg corn, drained
1 (15 ounce) can green beans, drained
1 (2 ounce) jar pimentos
1 cup chopped celery
½ cup chopped green bell pepper
½ cup chopped onion
1 cup white sugar
½ teaspoon ground black pepper
1 teaspoon salt
½ cup vegetable oil
¾ cup white wine vinegar

Steps:

  • Mix together the peas, corn, green beans, pimentos, celery, bell pepper and onion.
  • In a saucepan over medium heat, combine the sugar, black pepper, salt, oil and vinegar. Bring to a boil and pour over salad; mix well to coat. Refrigerate for 24 hours.

1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) black beans, rinsed and drained
2 large tomatoes, finely chopped
1 large red onion, finely chopped
1/4 cup minced fresh cilantro
2 garlic cloves, minced
DRESSING:
2 tablespoons sugar
2 tablespoons white vinegar
2 tablespoons canola oil
1-1/2 teaspoons lime juice
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon pepper

Steps:

  • In a large bowl, combine the first 6 ingredients. In a small bowl, whisk dressing ingredients; pour over corn mixture and toss to coat. Cover and refrigerate at least 1 hour. Stir before serving. Serve with a slotted spoon.

2 tablespoons vegetable oil
½ teaspoon salt
½ teaspoon white sugar
½ teaspoon ground black pepper
½ teaspoon ground cumin
½ teaspoon chili powder
3 tablespoons chopped fresh cilantro
1 (15 ounce) can black beans, rinsed and drained
1 (8.75 ounce) can sweet corn, drained

Steps:

  • In a small bowl, mix together balsamic vinegar, oil, salt, sugar, black pepper, cumin, and chili powder.
  • In a medium bowl, stir together black beans and corn. Toss with vinegar and oil dressing, and garnish with cilantro. Cover, and refrigerate overnight.

  • Thaw corn in colander under cool running water 2-3 minutes; drain thoroughly and place in a medium bowl.
  • Slice green onions thinly; add to corn. Stir in remaining ingredients; let stand 10 minutes for flavors to blend. Stir and serve.

1/2 cup vegetable oil
1/2 cup vinegar

2 ears of fresh corn (husk and silk removed)
15 oz can of black beans-drained and rinsed
4 Roma tomatoes (diced)
1/2 sweet onion (finely chopped)
1 avocado (chopped)
1/2 cup extra virgin olive oil
1/2 cup fresh lime juice
1/4 cup fresh orange juice
1/4 cup fresh cilantro (chopped)
2 garlic cloves (minced)
1/2 tbsp. orange zest
1/2 tbsp. dried oregano
1 1/4 tsp. ground cumin
3/4 tsp. salt
1 tbsp. honey
3/4 tsp. pepper

Steps:

  • Wrap each ear of corn in a damp paper towel and place into a covered microwaveable dish.
  • Microwave for 3-4 minutes.
  • Rinse with cold water and set aside to cool.
  • Cut corn off the cobb and place it into a large bowl.
  • Add black beans, tomatoes, and onion.
  • Combine olive oil, juices, cilantro, garlic, zest, honey, and spices in a blender and blend until combined.
  • Pour over bean and corn mixture and toss to coat.
  • Chill for at least an hour before serving.
  • Top with chopped avocado right before serving.
