QUICK GARLIC-LIME CHICKEN
After tending the farm and growing our own produce, I don't have much time left for cooking. I've found this simple chicken dish ideal for hectic days. -Doris Carnahan, Lincoln, Arkansas

- In a shallow dish, combine the first 5 ingredients; add chicken and turn to coat. Cover and refrigerate at least 30 minutes. , Drain; discard marinade. Sprinkle chicken with pepper. Grill, covered, over medium heat until a thermometer reads 165°, 7-8 minutes on each side.

LIME CUMIN CHICKEN
A nice pungent barbecue recipe. The lime marinade partially "cooks" the chicken before it is placed on the grill. I have enjoyed this many times.

Steps:
- Combine oil, lime juice, cumin& salt in a plastic bag.
- Add 4 chicken breasts, seal and refrigerate overnight.
- Place on greased barbecue and grill over medium high heat.
- Grill about 10 minutes turning often.
- Garnish with lime slices, red pepper& cilantro.

Steps:
- In a skillet, toast peppercorns, cumin, coriander and cinnamon over medium heat, stirring, until fragrant, about 1 minute.
- Finely grind in small food processor.
- Add garlic and 2 teaspoons salt; pulse until paste forms.
- Transfer to a large bowl.
- Add the onion, zest, juice, oil and parsley.
- Add chicken quarters; turn to coat.
- Cover, refrigerate 8 hours or overnight.
- Prepare outdoor grill with medium hot coals.
- Remove chicken from bowl; scrape off excess marinade.
- Sprinkle chicken with remaining salt.
- Grill, turning 20 to 25 minutes, or until cooked through.

- Mix all ingredients together well in small bowl.
- Adjust seasoning if desired.
- Place chicken or shrimp in ziplock bag and pour in marinade.
- For shrimp- marinate no longer than 1 hour.
- For chicken- marinate no longer than 4 hours.
- (The reason for the shortened marinating time is that the lime starts to"cook" the meat or seafood.) Grill!

MARINATED CHICKEN WITH CUMIN, GARLIC & LIME
I tried a version of this chicken after watching a Robin Miller episode. She made this with olives in the mix and did not let it marinate. We didn't care for the olives with this, and I prefer to let it marinate. The leftover chicken is great in Recipe #226933.

Steps:
- In a large ziptop baggie, combine chicken, onion, garlic, lime juice, molasses, Worcestershire sauce, cumin, oregano, salt, and black pepper; seal bag and let marinate in the fridge for several hours or overnight.
- Preheat oven to 400°F.
- Coat a large roasting pan with cooking spray.
- Transfer chicken to prepared pan and pour over any remaining marinade on top.
- Roast 30 to 35 minutes, until chicken is cooked through (mine was ready at 30, so check early).
