MARINATED CHINESE CHICKEN SALAD

3 -5 minced garlic cloves
2 tablespoons fresh ginger, grated
2 teaspoons dried red pepper flakes
4 tablespoons honey
6 tablespoons low sodium soy sauce
4 boneless skinless chicken breast halves
1/2 cup rice wine vinegar
3 garlic cloves, minced
1 teaspoon fresh ginger, grated
2 tablespoons honey (or more to taste)
1 large head iceberg lettuce, shredded
2 carrots, julienned
1/2 cup dry roasted peanuts, chopped
1/4 cup cilantro, chopped
3 ounces maifun, fried in hot oil as directed on package. (Just takes a few seconds)

Steps:

  • Mix marinade ingredients in a small bowl.
  • Place chicken in slow cooker and pour marinade over chicken, coating each piece well.
  • Cover and cook on low 6 to 7 hours or on high for 3 to 4 hours. (Depending on how large your chicken breast are. Mine were small and were done in 5 1/2 hours on low).
  • Remove chicken from slow cooker and cool.
  • Reserve juices and place in a small sauce pan and simmer for 5 minutes then strain if desired. (I didn't strain it but you might want to if you have excess residual.).
  • Shred chicken into bite-sized pieces.
  • In a small bowl, combine the dressing ingredients with 1/2 cup of the juice from the slow cooker.
  • In a large serving bowl toss together the shredded chicken, lettuce, carrots, peanuts, cilantro, and noodles.
  • Just before serving, drizzle with the salad dressing.
  • Toss well and serve.

1 skinless, boneless chicken breast halves - cut into bite size pieces
2 tablespoons balsamic vinegar
1 teaspoon olive oil
1 tablespoon white sugar
1 tablespoon water
1 ½ cups mixed salad greens
1 hard-cooked egg
6 large black olives
6 each small green olives
2 large (1" to 1-1/4" dia)s radishes
3 slices crisp cooked bacon, crumbled

Steps:

  • Mix together balsamic vinegar, olive oil, white sugar, and water. Combine marinade with chicken pieces in a plastic bag. Leave in bag for 1 hour.
  • Cook drained chicken in a skillet until done, about 10 minutes.
  • Assemble greens, egg, olives, radishes, and crumbled bacon on a dinner plate. Top with chicken.

3 tablespoons soy sauce
2 tablespoons honey
2 tablespoons tomato sauce
2 tablespoons plum sauce
1 tablespoon Worcestershire sauce
1 teaspoon sesame seeds
1 teaspoon chopped fresh basil
3 skinless, boneless chicken breast halves
2 cups elbow macaroni
2 tablespoons olive oil
½ cup low-fat mayonnaise
½ cup fat free sour cream
1 teaspoon coarse grained prepared mustard
1 tablespoon honey
1 tablespoon tomato sauce
1 teaspoon Worcestershire sauce
¼ cup shredded sharp Cheddar cheese
1 avocados - peeled, pitted and sliced
½ cup cashews

Steps:

  • In a large bowl, combine 3 tablespoons soy sauce, 2 tablespoons honey, 2 tablespoons tomato sauce, 2 tablespoons plum sauce, 1 tablespoon Worcestershire sauce, sesame seeds, and basil. Add chicken, and turn to coat. Marinate in refrigerator for at least 1 hour.
  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes or until al dente; drain and rinse.
  • Heat olive oil in a skillet over medium heat. Cook chicken until no longer pink, and juices run clear. Drain on paper towels. Allow to cool, then cut into bite-size strips.
  • In a large bowl, whisk together mayonnaise, sour cream, mustard, 1 tablespoon honey, 1 tablespoon tomato sauce, and 1 teaspoon Worcestershire sauce. Mix in cooked pasta, chicken, and Cheddar cheese. Gently stir in sliced avocado and cashews just before serving.

1/2 cup red wine vinegar
1/2 cup soy sauce
1/2 cup olive oil
1 tablespoon dried parsley flakes
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon pepper
6 boneless skinless chicken breast halves
1 bunch romaine lettuce, torn (12 cups)
1 1/2 cups caesar-flavor croutons
1 cup halved cherry tomatoes
2/3 cup creamy caesar salad dressing

Steps:

  • In a large resealable plastic bag, combine the first eight ingredients; add the chicken. Seal bag and turn to coat; refrigerate for at least 4 hours.
  • Drain and discard marinade. Grill chicken, uncovered, over medium-low heat for 12-15 minutes or until juices run clear, turning several times.
  • Meanwhile, in a bowl, combine the romaine, croutons and tomatoes; add dressing and toss to coat. Divide among six salad plates.
  • Slice chicken; arrange on salads.

1/2 cup Italian salad dressing
1/2 cup soy sauce
6 bone-in chicken breast halves
1/8 teaspoon onion salt
1/8 teaspoon garlic salt
Kale leaves and spiced apple rings, optional

Steps:

  • In a measuring cup, combine salad dressing and soy sauce. Pour 3/4 cup into a large resealable plastic bag; add chicken. Seal the bag and turn to coat; refrigerate for 4 hours or overnight, turning several times. Refrigerate remaining marinade for basting., Drain chicken discarding marinade. Place chicken, skin side up, on a rack in a roasting pan. Sprinkle with onion salt and garlic salt. Bake, uncovered, at 350° for 45-60 minutes or until a thermometer reads 170°, brushing occasionally with reserved marinade. Garnish platter with kale and apple rings if desired.

1/4 tsp. coarsely ground black pepper
4 small boneless skinless chicken breasts (1 lb.)
5 cups romaine lettuce, torn into bite-sized pieces
1 cup sliced mushrooms
1 cup halved cherry tomatoes
1/2 cup seasoned croutons
1 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Mix oil, mustard, lemon zest, lemon juice, Worcestershire sauce, garlic, sugar and pepper in small bowl. Pour 1/4 cup of the mustard mixture over chicken in nonmetal bowl; toss to coat. Cover. Refrigerate at least 1 hour to marinate. Refrigerate remaining mustard mixture until ready to serve.
  • Preheat grill to medium-high heat. Drain chicken; discard marinade. Grill chicken 10 to 15 min. or until cooked through, turning once. Cut into thin strips.
  • Toss chicken with lettuce, mushrooms, tomatoes and croutons in large bowl. Add reserved mustard mixture; mix lightly. Sprinkle with Parmesan cheese. Serve immediately.
