BRUSCHETTA WITH SPICY CECI BEAN PURéE



Bruschetta with Spicy Ceci Bean Purée image

2 garlic cloves
1/2 teaspoon kosher salt
One 16-ounce can ceci beans (also called chickpeas and garbanzo beans), drained and rinsed
1/2 cup tahini
1/4 cup finely chopped red onion
1/4 cup olive oil, plus more for drizzling
2 tablespoons fresh lemon juice
1 tablespoon balsamic vinegar
1 tablespoon crushed red pepper flakes (use more or less to taste)
1 1/2 teaspoons honey
Kosher salt and freshly ground black pepper
8 slices Rick's Basic Bruschetta
1 tablespoon roughly chopped, toasted pine nuts
1 tablespoon chopped fresh tarragon
1 tablespoon chopped fresh flat-leaf parsley
8 lemon wedges

Steps:

  • 1. On a cutting board and using the blade and flat side of a large, sharp knife, mince and mash the garlic and salt to make a paste.
  • 2. In the bowl of a food processor fitted with the metal blade, pulse the ceci beans with the garlic paste, tahini, onion, the 1/4 cup of oil, lemon juice, vinegar, red pepper, and honey. Scrape down the sides of the bowl several times and pulse until the mixture is smooth. Season to taste with salt and black pepper. The texture of the paste should be that of spreadable peanut butter; if necessary, thin it with water and pulse again.
  • 3. Spread the bean paste on the bruschetta. Sprinkle with pine nuts, tarragon, and parsley. Drizzle with olive oil, and serve garnished with lemon wedges for squeezing over the bruschetta.

a.k.a. roasted garbanzo beans/chickpeas. People always are looking for healthy snacks and unless you are on a low sodium diet, this fits. They also add nicely to homemade snack blends (e.g., chex mixes, Giada's Ceci, Pistachio and Almond mix and the like).EDITED 9-8-07 Given the comments about the beans remaining somewhat soft inside, and realizing people expect them to be crispy, yesterday I made a double batch, cooked as indicated and then turned the oven to 275 and left them in for another hour to hour and a half. They were perfectly crunchy.

2 cups cooked garbanzo beans (rinsed and dried) or 1 (15 ounce) can garbanzo beans (rinsed and dried)
1 tablespoon olive oil
sea salt

Steps:

  • Preheat oven to 375 degrees.
  • Spread garbanzo beans on half sheet pan, dribble olive oil over them and use your (clean) hands to mix.
  • Roast for 40 minutes, shaking the pan every 12 minutes or so, until quite brown and crisp.
  • (May leave in oven for another hour or two at 250 to 275 for additional crisping.).
  • Sprinkle with sea salt to taste.
  • Cool. Serve.
  • Can recrisp, if necessary, by heating for 5 minutes in a 375 degree oven.

2 garlic cloves
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon cracked pepper
3 tablespoons chopped fresh basil

Steps:

  • in a medium bowl whisk olive oil and balsamic vinegar [you can use any flavored vinegar you want].
  • add salt and pepper [you can adjust to your taste up or down] whisk again.
  • crush garlic and whisk into dressing.
  • add beans and basil.
  • stir and let set for at least 1 hour.
