Here's a different appetizer for the broccoli lover and curry lover. Got this recipe from a friend many years ago at a dinner party and it was wonderful. Passed the recipe on to my brother and SIL and they still make it.Hope you'll enjoy it too!

3 heads raw broccoli
1 cup oil
1/3 cup cider vinegar
1 teaspoon dried dill
1 dash pepper
1/2 cup sugar
1 cup mayonnaise
1 teaspoon ketchup
1 teaspoon curry powder

Steps:

  • Mix marinade ingredients in a bowl and set aside.
  • Rinse broccoli and cut or break into small florets.
  • Pour marinade over broccoli; place in a sealed bowl or zipper bag.
  • Turn frequently to mix and let marinate at least 2 hrs.
  • Combine ingredients for dip.
  • Place dip, covered, in refrigerator and let seasonings blend for at least 2 hours.
  • You may want to make the actual dip the night before so that all flavors have blended nicely.
  • Before serving, drain broccoli of marinade and serve with curry dip.
  • Cook time is marinating time.

This is a dip that I have been making and enjoying for many years, and I don't even like curry. This dip is exceptionally good with crudites (assorted chilled veggies) or with Fritos corn chips. This keeps for an unbelievably long time in the fridge, months even!

Number Of Ingredients 7

1 cup well drained nonfat yogurt or 1 cup low-fat yogurt (I use my Yogurt Cheese, Yogurt Cheese - 'Labanee', in Arabic for a thicker consistency)
1 cup good quality mayonnaise (Best Foods or Hellman's works best, or Miracle Whip if you're REALLY hard up)
2 tablespoons fresh lemon juice
2 tablespoons cider vinegar
1 tablespoon sugar
1 tablespoon curry powder
1/2 teaspoon salt, to taste

Steps:

  • Blend all ingredients thoroughly.
  • Refrigerate for at least 1 hour, or better yet, overnight.
  • Adjust seasonings to taste.
  • Serve with chilled crudites, crackers, or chips.

1 cup apple cider vinegar
1 tablespoon white vinegar
1 tablespoon dill weed, dried
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic salt
1 cup canola oil
3 bunches broccoli, cut into bite size pieces

Steps:

  • In a jar with a tight fitting lide, shade the first 6 ingredients until well mixed.
  • Add oil and shake again.
  • Pour over broccoli in non metallic bowl.
  • Toss, cover and marinate 24 hours.
  • Mix several times while marinating.

3 cups plain nonfat yogurt
3 cups plain nonfat yogurt
1 1/2 teaspoons olive oil
2 garlic cloves, minced
1 1/2 teaspoons curry powder
3 cups broccoli florets

Steps:

  • Line strainer with double-thick layer of cheesecloth, extending over sides; set over deep bowl. Add yogurt to strainer. Chill overnight (liquid will drain from yogurt and yogurt will thicken). Transfer yogurt to small bowl; discard liquid.
  • Stir oil and garlic in small nonstick skillet over medium heat 30 seconds. Stir in curry powder. Whisk curry mixture into yogurt. Season with salt. Chill at least 1 hour and up to 1 day.
  • Steam broccoli until crisp-tender, about 2 minutes. Rinse under cold water. Chill until cold. Serve with dip.

Not quite adopted into our Indian cuisine, one has to create and find innovative ways to cook it. I generally tend to just steam it and use it in salads. This one is to be had raw, after having been marinated overnight. A great idea for the relish tray.

1/3 cup vegetable oil
1/8 cup water

  • Remove tough ends from broccoli stalks.
  • Also remove the large outer leaves and cut into florets, reserving stalks for another use.
