SIMPLE MARINATED BROCCOLI

Blanching of broccoli or any form of cooking broccoli is not recommended for this recipe; it tastes best with raw, chilled broccoli.

MOM'S MARINATED VEGETABLES

Mom's Marinated Vegetables image

I got this recipe from my mother and I've never seen anything like it elsewhere. It's great for summer since it's cool and crisp. I like to take it to potlucks since it marinates overnight.

Categories     Appetizers and Snacks

Time 8h40m

Yield 12

Number Of Ingredients 15

1 pound carrots, peeled and sliced
1 green bell pepper, sliced
1 onion, sliced
1 cucumber, peeled and sliced
3 stalks celery, sliced
1 cup cauliflower florets, broken into bite size pieces
1 cup broccoli florets, broken into bite size pieces
1 cup white sugar
¾ cup distilled white vinegar

1 teaspoon ground black pepper
1 teaspoon prepared yellow mustard
¼ teaspoon salt
¼ cup vegetable oil

Once the carrots are cold, drain well, and place into a large glass or plastic bowl.
  • Place the green pepper, onion, cucumber, celery, cauliflower, and broccoli into the bowl along with the carrot; set aside. In a separate bowl, whisk together the sugar, vinegar, Worcestershire sauce, black pepper, mustard, and salt until the sugar begins to dissolve. MARINATED BROCCOLI

Marinated Broccoli image

Strange as it may sound, broccoli is one of the more exotic (and recently made popular) vegetables now available in India. Not quite adopted into our Indian cuisine, one has to create and find innovative ways to cook it. I generally tend to just steam it and use it in salads. This one is to be had raw, after having been marinated overnight. A great idea for the relish tray.
