1 1/2 lbs. ribeye ((may sub top sirloin or skirt steak), very thinly sliced*)
olive oil
1 large onion, thinly sliced
2 green bell peppers, thinly sliced
1 poblano pepper, thinly sliced
3/4 cup freshly grated sharp cheddar cheese ((or more to taste))
1/3 cup roughly chopped jarred cherry (pimento) peppers ((optional))
8 Sargento Provolone Cheese slices
4 soft hoagie rolls
2 tablespoons Dijon mustard
2 tablespoons balsamic vinegar
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/2 tsp EACH garlic pwdr, onion pwdr, dried thyme, dried parsley
1/4 tsp EACH pepper, red pepper flakes
1 tablespoon Reserved Spiced Mayonnaise (in directions)
1/2 cup mayonnaise
Hot sauce to taste (optional)

Steps:

  • Whisk all the Marinade ingredients together in a Ziploc bag. Remove 1 tablespoon Marinade and add to a small bowl with 1/2 cup mayonnaise to make "Spiced Mayonnaise". Add hot sauce to mayonnaise if desired and store in the refrigerator.
  • Add steak to Ziploc bag with remaining Marinade. Marinate 6 hours up to overnight. Remove steak from fridge 20-30 minutes before cooking.
  • Preheat oven to 400 degrees F.
  • Prepare hoagie rolls by slicing each in half horizontally. Hollow out bottom and top halves of bread, leaving about 1/2-inch-thick shell.
  • Heat 1 teaspoon olive oil over in a large skillet over medium-high heat until smoking. Pat excess marinade off steak and add to skillet. Cook undisturbed for 1 minute then continue to cook while stirring just until no longer pink, 1-2 minutes, chopping up meat with spatula as you cook. Remove to a paper towel lined plate. (You can also chop on a cutting board.)
  • Wipe out skillet and heat one tablespoon olive oil over medium high heat. Add peppers and onion and cook 6-8 minutes or until softened. Add steak back to pan along with 3/4 cup cheddar, 1 tablespoon Spiced Mayonnaise, pimientos (optional). Stir just until steak is warmed through and cheese begins to melt, about 1 minute. Season with salt and pepper to taste.
  • Spread each top and bottom half of hoagie roll with Spiced mayonnaise. Evenly divide beef mixture between bottom buns then top each with 2 slices provolone cheese. Bake hoagies open faced for 5 minutes or until cheese is completely melted. Replace top buns and eat immediately.

1 cup soy sauce
3/4 cup beef broth
1/2 cup olive oil
2 tablespoons red wine vinegar
4 to 5 garlic cloves, minced
1 teaspoon coarsely ground pepper
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon hot pepper sauce
1 bay leaf
1 beef tenderloin roast (3-1/2 to 4 pounds)

Steps:

  • In a bowl, combine the first nine ingredients; mix well. Cover and refrigerate 1 cup for basting. Pour remaining marinade into a shallow dish; add bay leaf and tenderloin. Turn to coat; cover and refrigerate overnight., Drain and discard marinade and bay leaf. Place tenderloin on a rack in a shallow roasting pan. Bake, uncovered, at 425° for 55-60 minutes or until meat reaches desired doneness (for medium-rare a thermometer should read 135°; medium, 140°; medium-well, 145°), basting often with reserved marinade. let stand for 15 minutes before slicing.

3/4 cup packed dark brown sugar
3/4 cup soy sauce
2 tablespoons lemon juice
3 small onions, sliced

1 beef rump roast or bottom round roast (4 pounds)
12 to 14 sandwich rolls, split

Steps:

  • In a gallon-size resealable plastic bag, combine the first seven ingredients; add roast. Seal bag and turn to coat; refrigerate overnight, turning occasionally. , Transfer roast and marinade to a Dutch oven. Cover and bake at 325° for 2-1/2 to 3 hours or until meat is tender. Grilled Steak Sandwich is unbelievably melt-in-your-mouth good. So flavorful and truly one of the Loon's all-time favorites. He can't stop talking about it. Really delicious.

½ cup soy sauce
3 tbsp lime juice (freshly squeezed)
¼ cup Worcestershire sauce
¼ cup olive oil
4 cloves cloves (minced)
½ tsp sugar
2 tsp black pepper (freshly ground)
1½ lb flank steak
1 cup Chimichurri Mayonnaise
2 tomatoes (sliced)
Kosher salt
½ cup Arugula
4 hoagie buns (buttered)
2 tbsp unsalted butter (optional)

Steps:

  • Prepare the chimichurri sauce for the chimichurri mayonnaise.
  • In a medium bowl, whisk together the soy, lime juice, Worcestershire sauce, olive oil, garlic, sugar, and pepper.
  • Place the steak into a large freezer bag and pour the marinade into the bag.
  • Place the bag with the steak and marinate in the refrigerator for 6 hours, or overnight. Turn the bag every couple of hours.
  • Prepare your grill to medium-hot heat.
  • Remove the steak from the marinade and grill until the desired doneness, about 5 to 7 minutes per side for medium. Discard the marinade.
  • Remove the steak from the grill and allow it to rest for 10 minutes. (The meat will continue to cook as it rests). Meanwhile, butter the buns and place on the grill, cut side down as the meat is resting.
  • Mix together the chimichurri mayonnaise (this can be made 24 hours ahead of time). Sprinkle a little salt and pepper over the sliced tomatoes.
  • Slice the meat against the grain. Slather a good helping of the chimichurri mayo on each bun. Add several slices of steak and then top with tomato slices and arugula. Serve at once.

2 tablespoons fresh lemon juice

12 -15 onion rolls, split, buttered, and toasted

Steps:

  • In a large resealable plastic bag, combine soy sauce, oil, Worcestershire sauce, lemon juice, garlic, and pepper. Add tenderloin, seal bag, and refrigerate for at least 8 hours.
  • Preheat oven to 425. Line a broiler pan with heavy-duty aluminum foil. Place rack on pan; spray with nonstick cooking spray.
  • Drain tenderloin, discarding marinade. Place tenderloin on prepared pan. Bake for 40 to 45 minutes, or until a meat thermometer inserted in thickest portion reads 145. Let stand for 10 minutes before slicing.
  • Spread desired amount of Bacon Horseradish Sauce over botttoms of buns. Top with desired amount of arugula. Top with sliced tenderloin. cover with bun tops. Serve immediately.
