I've tried many marinade recipes for carne asada, and this is our family favorite!

¾ cup orange juice
½ cup lemon juice
⅓ cup lime juice
4 cloves garlic, minced
½ cup soy sauce
1 teaspoon finely chopped canned chipotle pepper
1 tablespoon chili powder
1 tablespoon ground cumin
1 tablespoon paprika
1 teaspoon dried oregano
1 tablespoon black pepper
1 bunch fresh cilantro, chopped
½ cup olive oil
3 pounds flank steak

Steps:

  • Combine the orange, lemon, and lime juice in a large glass or ceramic bowl along with the garlic, soy sauce, chipotle pepper, chili power, ground cumin, paprika, dried oregano, black pepper, and cilantro. Slowly whisk in the olive oil until marinade is well combined. Remove one cup of the marinade and place in a small bowl, cover with plastic wrap and refrigerate for use after the meat is cooked.
  • Place the flank steak between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the steak with the smooth side of a meat mallet to a thickness of 1/4 inch. After pounding, poke steak all over with a fork. Add the meat to the marinade in the large bowl, cover, and allow to marinate in the refrigerator for 24 hours.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove the steak from the marinade and grill to desired doneness, about 5 minutes per side for medium rare. Discard used marinade. Remove meat from heat and slice across the grain.
  • Pour the one cup of reserved, unused marinade over the hot meat and serve immediately.

From time to time I receive e-mails asking some common questions for an Authentic Carne Asada recipe, the first one being how to marinate the meat. I always give out the same answer: every cook or grill master has their own unique way of seasoning their meat. I hope you enjoy this delicious recipe.

2 pounds of flank steak or skirt steak
The juice of 1 orange
The juice of 2 limes
1/4 cup of light beer
2 tablespoons of Kikkoman Soy Sauce
2 tablespoons of vegetable oil
Fresh ground pepper to taste
1 large white onion sliced (optional)
Vegetable oil to brush the grill before grilling
Corn tortillas
Guacamole
Salsa
Lime wedges
Grilled green onions and nopales or a salad of your choice.

Steps:

  • Place the flank steak in a large baking dish and, if using the sliced onion, spread the slices over the meat.
  • In a medium-sized bowl mix together the orange juice, lime juice, light beer, Kikkoman soy sauce, vegetable oil, and freshly ground black pepper.
  • Pour the marinade over the meat; cover with a plastic film and refrigerate for at least one hour.
  • Light up your charcoal grill, or preheat your gas grill. (You can also use a cast iron grill pan, the ones you use over the stove top). And brush your grill with a little vegetable oil as this will prevent the meat from sticking.
  • Remove meat from marinade and pat dry. Place meat on the grill and cook for 8 to 10 minutes per side. (Cooking time will depend on the meat thickness and your personal preferences, either medium or well done). Remove meat from grill and place it on your cutting board. Slice it and serve it with corn tortillas and other garnishes mentioned above.
  • If you would like to have the same effect as that of the Mexican-American restaurant, place the cooked meat on a preheated cast iron pan, add a few drops of Soy Sauce and serve immediately. Enjoy!

1/4 cup Red Wine Vinegar
1/4 cup Water
2 tbsp Vegetable Oil
2 tbsp Lime Juice
2 tbsp Orange Juice
2 tbsp Chopped Cilantro
1 tbsp Minced Garlic
3/4 tbsp Garlic Salt
1/2 tbsp White Pepper
1/2 tbsp Cumin
1/2 tbsp Chili Powder
1/2 tbsp Mexican Oregano
1/8 tsp Ground Cloves
1 Orange (Sliced)

Steps:

  • Add all the ingredients (except the meat and orange slices) to a medium size bowl and stir until blended. Transfer to a large Ziploc Bag.
  • Add the steak and shake to coat the entire piece of meat evenly.
  • Lay the bag flat and add the orange slice directly to the meat - half on top and half on bottom.
  • Refrigerate overnight or at least 2 hours. (*Note 1)
  • Before grilling, remove from the refrigerator up to an hour in advance. (*Note 2)
  • Ten minutes before grilling, add meat tenderizer (optional)
  • Pre-heat grill to medium high.
  • Place meat directly on greased grate for 6-8 minutes. (*Note 3)
  • Flip and grill for an additional 6-8 minutes, until your desired doneness is reached.
  • Let rest for 10 minutes before slicing against the grain and serving.

2 teaspoons seasoning salt
1 teaspoon black pepper
12 -16 corn tortillas
16 ounces rosarita refried beans
8 ounces jalapenos (sliced lengthwise)
1 bunch cilantro
1 yellow onion
8 ounces herdez salsa verde
key lime
shredded cabbage (optional)
1 slice avocado (optional)

Steps:

  • Tenderize meat with a tenderizing mallet. Squeeze lime juice onto meat with a squeezer/juicer and sprinkle with seasoning salt (I use Johnny's) and black pepper.
  • Finely chop onion and cilantro and put to the side.
  • Barbecue meat until just a slight amount of pink remains in the middle. Cut meat into small cubes and place in foil. Keep meat warm in the oven or away from the flame in the barbecue.
  • Heat refried beans in a small sauce pan. (Rosarita tastes the closest to homemade to me).
  • Place a small amount of canola oil into the bottom of a frying pan or iron skillet. Over medium heat, warm the tortillas, turning over once.
  • Spread a small amount of refried beans onto the center of the tortillas. Add meat, shredded cabbage, cilantro/onion mixture, jalapeno slice and a slice of avocado (if desired). Top with salsa verde and serve with key limes.

A great marinade for steak!!! (You can even use it for chicken for Pollo Asada!) I use skirt steak for flap meat, but any thin cut steak would work. This recipe is for up to 4 pounds of meat. Cook time does NOT include marinating time.

1 oranges, juice of or 1/2 cup orange juice
2 tablespoons chili powder
1 1/2 tablespoons dried oregano leaves

5 garlic cloves, COARSLEY CHOPPED (OR TO TASTE)

2 pounds skirt steak
1/2 cup olive oil
1/2 cup soy sauce
6 cloves garlic, minced
Juice of 2 limes
1 large handful fresh cilantro, leaves and stems, finely chopped
1 jalapeno, seeded and minced
2 tablespoons red wine vinegar
1 teaspoon freshly ground cumin, seeds lightly toasted
1/2 teaspoon sugar
Kosher salt and freshly ground black pepper

Steps:

  • Lay the skirt steak in a large nonreactive bowl or baking dish.
  • Combine the oil, soy sauce, garlic, lime juice, cilantro, jalapeno, red wine vinegar, cumin, sugar and 1 tablespoon each salt and pepper. Pour the marinade over the steak, making it's well coated. Cover and refrigerate for 4 to 6 hours, or overnight.
  • Preheat a grill or cast-iron skillet to high heat. Remove the steak from the marinade, sprinkle both sides with salt and pepper, and place it on the grill. (If cooking indoors, remove excess marinade, as the garlic may burn and smoke).
  • Grill the steak for just a few minutes per side, depending on thickness, until it is cooked to your preference. You may need to work in batches.
  • Transfer the steak to a cutting board and let rest for 5 minutes. Slice the steak thinly against the grain on a diagonal and serve.

2 tablespoons olive oil
1/4 cup soy sauce
1/4 cup orange juice
2 tablespoons lime juice

2 teaspoons paprika

Steps:

  • In a sandwhich bag, mix together the cumin, garlic powder, paprika, chili powder, onion, salt, pepper, and cayenne pepper.
  • Combine remaining ingredients (only 2 tbsp olive oil) except steak into a freezer bag or large container for marinating.
  • Add 3 tbsp of the spice mixture to the marinade and mix to combine.
  • perforate steak with a fork in multiple places.
  • add steak to marinade and remove excess air.
  • refrigerate for 4-24 hours (preference).
  • When ready to grill, mix remaining spice mix with 2 tbsp olive oil.
  • Remove steaks from marinade and pat dry (don't remove spices, just so they aren't wet).
  • rub the spice mix/olive oil combo all over the steaks and let them rest at room temperature for 30-60 minutes.
  • Preheat grill or skillet (preferably cast iron) to medium heat (about 5/10).
  • Cook for 5-6 minutes per side depending on thickness. (see below for detailed notes).
  • Remove steak from heat and let rest for 10 minutes before thinly slicing.
  • For cooking in a cast iron skillet:.
  • Gas stove: set to 5/10.

Carne asada is marinated and grilled skirt steak that is bursting with flavors or citrus, garlic, cilantro, and chile. Enjoy on its own, in tacos, etc.

¼ cup orange juice ((freshly squeezed preferred))
¼ cup lime juice ((freshly squeezed preferred))
2 tbsp olive oil (or other neutral oil of choice)
6 large garlic cloves (peeled)
1 packed cup cilantro ((you can include the stems along with the leaves))
½ seeded jalapeno** ((ends up being about 2 tbsp chopped))
1 tsp chili powder
1 tsp ancho chili powder ((or sub more chili powder))
½ tsp ground cumin
¼ tsp ground coriander (optional)
2 tsp kosher salt
2.25 lbs skirt steak*
soft corn taco shells ((and feel free to garnish with cotija cheese, onion, tomato, etc.))
cilantro lime rice
corn and avocado bean salad
mexican rice
guacamole

Steps:

  • If you have a blender (or food processor): Combine all the ingredients except the skirt steak (the orange juice, lime juice, olive oil, garlic, cilantro, jalapeno, chili powder, ancho chili powder, cumin, coriander, and salt) in the blender jar. Blend for about 30 seconds on high speed, to puree the ingredients.
  • To make the marinade without a machine: You will combine all the ingredients except the skirt steak as well, but you will need to chop everything by hand. Mince the garlic and jalapeno as finely as you can, and finely chop the cilantro. I recommend only using the leaves in this case.
  • Prep the skirt steak: When you buy skirt steak from the butcher, it will likely come in long pieces over a foot long. I recommend cutting these into smaller pieces now, about 6" in length. Cut with the grain (see blog photo).
  • Marinate: Place the skirt steak in a plastic ziptop bag and add all of the marinade. Toss well to combine and make sure the steak is completely coated on all sides. Refrigerate for ideally 18-24 hours. I would say the bare minimum is 8 hours, but a day ahead is noticeably better.
  • Cook: Preheat at least two burners of the grill on high for 10 minutes, to get the temperature up to a minimum of 600F. In the meantime, remove the carne asada from the marinade and place on paper towels to absorb excess liquid. There shouldn't be a ton of excess marinade anyway, but I recommend discarding it. I have tried cooking it to serve along with the beef, but in my opinion it's completely unnecessary and does not add anything to the dish.
  • Once the grill is preheated, add all of the skirt steak and promptly close the lid. There should be no need to oil the grill or the meat here, so long as the grill has well-seasoned cast iron grates and is at least 600F. I personally don't have issues with sticking, and like to avoid oiling the meat to prevent flareups.
  • Let the skirt steak cook with the lid closed for 90 seconds, then open the lid, and turn each piece of steak 90 degrees. Close the lid and let cook for another 90 seconds.
  • Flip each piece of meat over and again close the lid for 90 seconds. Turn each pieces 90 degrees, and cook for another minute.
  • Begin checking the temperature of the steaks. Because skirt steak is chewy by nature, I like to serve it rare and pull it off the grill at 120F. The thinner pieces will likely be done, but if you have thicker pieces, they may need further cooking. Flip again, close the lid, and keep cooking in 90 second intervals, rechecking the internal temperature as needed.
  • Remove the skirt steak to a plate or rack, and let rest for 5 minutes. Then slice and serve promptly. Enjoy!

1/2 cup olive oil
1/3 cup freshly squeezed orange juice (1 large orange)
1/4 cup freshly squeezed lime juice (2 limes)
3 tablespoons honey
2 tablespoons Mexican oregano or other oregano
4 cloves garlic
1 serrano chile, seeds removed
Kosher salt and freshly ground black pepper
2 limes, cut into wedges, for serving

Steps:

  • Place the skirt steak in a large glass bowl or resealable plastic bag.
  • To make the marinade, add the cilantro, olive oil, orange juice, lime juice, honey, oregano, garlic and serrano chile to a blender. Season with a small pinch of salt and pepper. Blend for 35 to 40 seconds to combine.
  • Pour the marinade all over the steak, moving it around to make sure everything is covered. Cover or seal and transfer to the refrigerator and allow to marinate for at least 1 hour, but no more than 6 (too long in the marinade will cause the steak to begin breaking down).
  • Preheat a grill or grill pan over medium-high heat.
  • When ready, remove the steak from the marinade, letting the excess drip off. Sprinkle generously with salt and pepper and grill about 4 minutes per side for medium.
  • Remove to a cutting board and allow to rest for 5 to 7 minutes. Slice the steak against the grain and serve with the lime wedges.
