TRADITIONAL ARTISAN STYLE BAGUETTE - RUSTIC FRENCH BREAD



Traditional Artisan Style Baguette - Rustic French Bread image

A traditional country-style French bread, made the old-fashioned way (although you can use the bread-machine if you wish). The result is a lovely full-flavored loaf with a wonderful crust. Best eaten the same day. Makes 2 baguettes.

1 (1/4 ounce) packet active dry yeast
1 tablespoon organic honey
1 1/2 cups warm water
2 teaspoons natural sea salt
4 -4 1/2 cups unbleached all-purpose flour

Steps:

  • Place the yeast, honey and warm water in a large bowl and let stand until foamy, about 5 minutes.
  • In a separate bowl, whisk together the salt and the flour. Use a wooden spoon to stir 2 cups of the flour mixture into the yeast mixture; stir in the remaining flour mixture (dough will be stiff).
  • Turn out onto a lightly floured work surface. Knead with floured hands until dough is smooth and elastic, about 5-7 minutes. Add a little flour, 1 tablespoon at a time as necessary, to prevent dough from sticking.
  • Place in an oiled bowl, turning once to coat. Cover with plastic wrap (or a clean kitchen towel) and leave to rise until doubled in bulk, about 1 1/2 hours.
  • Preheat oven to 400F degrees.
  • Gently punch dough down to deflate it and shape into two oblong baguettes. Dust tops lightly with flour and place on a lightly greased baking sheet; let rise uncovered for 30 minutes.
  • Use a serrated knife to cut 3-5 small diagonal slits across the tops of the baguettes, and lightly sprinkle with cool water.
  • Bake in the middle of oven for 25-30 minutes, until golden. Transfer to a rack to cool.
  • Best eaten the same day.

From "The Joy of Cooking" latest edition. This is my first time baking with a sponge starter. It is very easy and it makes a delicious loaf. I have made twice already with great results! This makes 2 loaves.

3/4 cup white flour
1/2 cup warm water
1/2 teaspoon yeast
4 1/2 cups flour
2 cups warm water
1 teaspoon salt

Steps:

  • Plan on making sponge first.
  • I use active yeast and mix with water first to proof it. After 5 minutes, mix in flour with plastic or wood utensil until starter leaves side of bowl. I like to use a glass mason jar with lid. Let sit at least 6 hours in warm place until it triples, refrigerate if not using right away(take out and leave at room temperature for an hour before use).
  • Mix in 4 1/2 cups of flour (I used 2 cups whole wheat and the rest white), water, sponge starter, salt. Knead for about 10 minutes. Dough should be sticky, but not stick to your hands. Place in lightly oiled bowl and turn over once to coat.
  • Let rise until double in bulk (about 2-3 hours).
  • Punch down and shape into 2 loaves on 2 cookies sheets dusted with flour.
  • Place in warm place (I heat oven alittle and place in it .)Let rise until double.
  • Preheat oven to 450. Place a small pan on lower shelf to hold 2 cups of boiling water. Score top of loaves with and x.
  • Place boiling water in pan on lower shelf, place loaves on center shelf and bake for 40 minutes. I baked mine for 30. Bottom of bread should sound hollow. I agree as stated by reviewer, 450 degree was too high a temperature for full 40 minutes. I baked until golden brown all over for 30 minutes, turned off oven with bread inside for last 10 minutes directly on rack.
  • Turn off oven and let sit for 10 minutes to develop crust. Take out and let cool off on cooling rack. I served with my recipe for roasted garlic.

360 g filtered water (at room temperature)
3 g yeast
500 g unbleached all purpose flour or bread flour
11 g salt

Steps:

  • In a large mixing bowl, combine the room temperature water and yeast. Use a whisk to stir, until the yeast has begun to dissolve. Add the unbleached flour and salt. Use a Danish dough whisk, or your hands, to mix until there are no dry patches of flour left.Scrape your hands off well, and cover the bowl in plastic wrap. Let rest for 30 minutes at room temperature for the autolyse phase.
  • Do the first stretch and fold. Dampen your hands with water to prevent the dough from sticking. With the dough still in the bowl, you want to gently stretch one side of dough up until there's no more give, and fold it over the rest of the dough. Be gentle wit the stretching so that you don't tear the dough. Work your way around the dough until all sides have been stretched and folded. Then pick the whole ball of dough up and plop it over in the bowl.Cover with plastic wrap, and let rest for another 30 minutes at room temperature.
  • Stretch and fold #2. Cover, let rest for another 30 minutes.
  • Stretch and fold #3, then let the dough bulk ferment at room temperature for 5-6 hours until the surface of the dough is puffy and jiggly.
  • Line a rimmed sheet pan with a clean kitchen towel. Sprinkle the towel generously with AP flour or rice flour. Set aside.
  • Pour the dough out onto a lightly floured surface, and divide it into 3 equal parts. With the tips of your fingers, gently press one piece of dough into a rectangle about 8 inches long. Bring the top 1/3 of dough down to the midline, and press down with your fingertips.Rotate the dough 180 degrees, and bring the open edge up over the folded edge, and use your thumb to press down on the seam. Flour your hands gently, and roll the dough out into a long baguette shape.Repeat with the remaining 2 pieces of dough.
  • Place the shaped baguettes onto the prepared towel-lined baking sheet. Gently lift the towel up between the baguettes to create separation between the loaves. Sprinkle the baguettes lightly with flour, and gently lay another clean towel on top. Let rise for one hour at room temperature.
  • Meanwhile, preheat the oven to 500°F with a pizza stone on the middle rack. Place a small cast iron pan on the bottom rack. Boil a kettle of water. Set aside.
  • After the baguettes have risen, transfer to a piece of parchment paper. Slash the tops of the baguettes with a lame or a sharp chef's knife. The cuts should be at a sharp angle going down the axis of the baguette. Place the parchment paper directly onto the preheated pizza stone.Be sure to wear thick oven mitts for this next step. While the oven door is open, pour the hot water from the kettle into the preheated cast iron pan. There will be a big burst of hot steam, so do this carefully. Slide the pan of water into the oven to create steam in the oven while the baguettes bake. Close the oven door immediately.
  • Bake for 20-25 minutes, rotating halfway if necessary, until the the crust is deeply golden brown, mahogany in places. Allow the baguettes to cool completely before slicing. Enjoy!
