Number Of Ingredients 12

1/3 cup uncooked wild rice
1 tablespoon canola oil
1 quart water
1 medium onion, chopped
1 celery rib, finely chopped
1 medium carrot, finely chopped
1/2 cup butter
1/2 cup all-purpose flour
3 cups chicken broth
2 cups half-and-half cream
1/2 teaspoon dried rosemary, crushed
1 teaspoon salt

Steps:

  • In a medium saucepan, combine the rice, oil and water; bring to a boil. Reduce heat; cover and simmer for 30 minutes. , Meanwhile, in a Dutch oven, cook the onion, celery and carrot in butter until vegetables are almost tender. Stir in flour until blended; cook and stir for 2 minutes. Slowly stir in broth and undrained rice. Bring to a boil; cook and stir until slightly thickened, 2 minutes. Reduce heat; stir in the cream, rosemary and salt. Simmer, uncovered, until rice is tender, about 20 minutes.

My husband LOVES this soup! I used to make only 6 servings, but now I always make 12 and it still usually only lasts an extra day! Take some time with this recipe -- it's worth it! I serve this hearty soup in bread bowls with a salad on the side.

¾ cup butter
2 tablespoons minced onion
2 tablespoons minced garlic
1 cup all-purpose flour
6 cups chicken broth
⅔ cup diced cooked ham
1 cup finely shredded carrots
½ cup slivered almonds
1 teaspoon salt
1 ½ tablespoons pepper
1 ⅓ cups uncooked wild rice
2 cups half-and-half cream
¼ cup sherry
2 tablespoons fresh parsley
2 tablespoons fresh chives

Steps:

  • Melt the butter in a large pot, and saute the onion and garlic. Gradually blend in the flour. Cook and stir until onion is tender and flour is golden brown. Whisk in broth, bring to a boil, and simmer 5 minutes. Stir in ham, carrots, and almonds. Season with salt and pepper, cover, and simmer 45 minutes, stirring occasionally.
  • Mix rice, half-and-half, and sherry into the soup, and continue cooking 30 minutes. Stir in parsley and chives, and cook another 30 minutes, until rice is tender.

1 large onion, chopped
1 large carrot, shredded
1 celery rib, chopped
1/4 cup butter
1/2 cup all-purpose flour
8 cups reduced-sodium chicken broth
3 cups cooked wild rice
1 cup cubed cooked chicken breast
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup fat-free evaporated milk
1/4 cup minced chives

Steps:

  • In a large saucepan, saute the onion, carrot and celery in butter until tender. Stir in flour until blended. Gradually add broth. Stir in the rice, chicken, salt and pepper. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. stir in milk; cook 3-5 minutes longer. Garnish with chives.

1/4 cup - Wild Rice (UNCOOKED) (See notes)
1 1/2 cup - Mushroom (i have used Baby Bella, you may use any)
1 1/2 cup - Vegetable Stock
1/4 cup - chopped onion
1/4 cup - chopped celery
Salt to taste
1/2 tsp - minced garlic
1/2 tsp - Poultry Seasoning (See Notes)
1/2 tsp - Black Pepper powder
1 tbsp - Olive Oil
1 tbsp - all purpose flour
1 cup - Coconut milk (See notes)

Steps:

  • Dump Wild Rice, Mushroom, Vegetable Stock, chopped onion, chopped celery, Black Pepper powder, Salt, Poultry Seasoning, and minced garlic in an inner steel pot in Instant Pot. Stir well. Cover it.
  • Pressure cook it on high pressure for 45 minutes.
  • Meanwhile, let's make a roux. In a pan, heat olive oil. Add All-purpose flour, Cook it for 2 minutes, stirring continuously.
  • Now, add coconut milk and stir. Cook it for 2 minutes. Switch off the flame.
  • Once IP beeps and cooking time is done, switch off the Instant Pot and give a quick release.
  • Now, add prepared roux in a soup. Mix well.
  • Wild Rice Mushroom Soup is ready. Serve it with Crusty No Knead Bread.

1 ½ cups wild rice, cooked
2 tablespoons butter
1 cup shredded carrots
½ cup chopped onion
½ cup chopped green bell pepper
3 tablespoons all-purpose flour
¼ teaspoon ground black pepper
1 cup water
1 (10.5 ounce) can chicken broth
1 cup half-and-half
⅓ cup blanched slivered almonds
¼ cup fresh parsley

Steps:

  • In a small saucepan, combine 1/2 cup wild rice and 1 1/2 cups water. Bring to a boil, reduce heat, cover and simmer for 45 minutes.
  • In a 3 quart saucepan over medium heat, melt butter; add celery, carrot, onion and bell pepper. Saute until vegetables are tender.
  • Stir in flour, pepper, wild rice, water and broth. Bring to boil and reduce heat. Cover and simmer for 15 minutes.
  • Stir in half and half, almonds and parsley. Heat until hot and serve.

1 1/2 cups wild rice, cooked according to package directions (the original recipe calls for 1 cup, but I like more)
1/4 cup butter
1/2 cup onion, diced
1/2 cup carrots, shredded
2 cups celery, sliced
1/4 teaspoon kitchen bouquet
1 1/2 teaspoons nature seasoning
1/4 teaspoon poultry seasoning
1/2 teaspoon white pepper
1- 8 ounce package sliced white mushrooms
1 1/4 cups flour
6 cups cold water
5 1/2 teaspoon chicken base or 5 chicken bouillon cubes (you can also use chicken broth instead of water and base)
3 cups cooked chicken breast, diced
2 1/4 cups heavy whipping

Steps:

  • In a soup pot, saute onion, carrots, celery and seasonings in butter until tender. Add mushrooms within the last 5 minutes of cooking and saute with veggies. Slowly add flour, and stir into veggie mixture until combined. About 1 minute. Add cold water and chicken base, and stir until mixture has no lumps. Add chicken and rice and heat until temperature reaches 180 degrees on a kitchen thermometer. Add whipping cream and bring temp back up to 180 degrees. (If you do not have a thermometer, just simmer the soup until heated through)
