Margarita image

The origin of the Margarita recipe is fiercely debated, but we think it's got Mexico written all over it. With tequila, triple sec and fresh lime it's tart, zingy and satisfying.

1 part Cazadores Tequila
½ part triple sec liqueur
1 whole lime, juiced
1 a pinch of salt
cubed ice

Steps:

  • 1. Chill your glass (the easiest way is to fill it with ice)
  • 2. Put lots of ice and all of the ingredients into a shaker, then shake hard for about 30 seconds to chill the liquid really well 3. Run a lime wedge around the outside of the rim of your glass before rolling the rim in salt 4. Double strain the mix into the glass

This super quick marinade is great for summer grilling and chilling! I use this recipe to marinate one pound of flank steak, but you can't go wrong with chicken or even firm fleshed fish. Marinate at least an hour, or preferably, overnight.

¾ cup tequila
2 tablespoons fresh lime juice
1 tablespoon honey
1 clove garlic, minced
1 teaspoon ground cumin

Steps:

  • In a bowl or resealable bag, combine tequila, lime juice, honey, garlic, and cumin; stir or seal the bag and shake until blended.

  • Heat the oil in a large saucepan over medium heat until shimmering, add the cumin seeds and garlic and cook until the seeds are aromatic and the garlic is lightly toasted, about 30 seconds to 1 minute. Add the beer, orange juice, tequila, lime juice, brown sugar, chiles in adobo and 1/4 tsp. salt. and bring to a boil. Lower the heat and stir until the sugar has dissolved. Remove the marinade from the heat and allow it to cool to room temperature, about 10 to 20 minutes. Place the steak in a large bag and place the bag in a large bowl. Pour in the cooled marinade and refrigerate for at least 8 hours or up to 48 hours.
  • When the grill is ready, remove the steak from the marinade and shake off any excess, but don’t pat it dry. Reserve the marinade. Brush both sides of the steak with oil and then season generously with salt and pepper. Grill the steak until good sear marks appear, 4 to 6 minutes. Flip the steak and grill the other side in the same way until the exterior is nicely seared and the steak is cooked to your liking, 8 to 10 minutes total cooking time for medium rare. Let the steaks rest for about 5 minutes.
  • Transfer the reserved marinade to a medium saucepan, bring to a boil and reduce by half to about 1 cup. Add the cream and simmer until thickened, about 3 to 5 minutes.

  • In the bowl of a blender, place garlic, shallots, salt, lime juice, lemon juice, orange liqueur and tequila.
  • Pour over the beef, seal the bag(s) and refrigerate for at least four hours up to and no more than 12 hours. The meat needs time for the acid in the citrus to break down the connective tissue so longer is better without going past 12 hours. If you were cooking this for dinner, you could marinate in the morning and throughout the day and it would be perfect for dinner.
