FROZEN MARGARITA MOUSSE



Frozen Margarita Mousse image

Who doesn't love a frozen margarita? This creamy frozen mousse combines ready-to-drink margarita mix and whipped topping (you could use this whipped topping substitute instead). It's easy to put together and the freezer does all the work. Garnish with additional crushed pretzels and kosher salt to enhance the sweet and salty flavor. -Debbie Glasscock, Conway, Arkansas

Number Of Ingredients 12

1 can (14 ounces) sweetened condensed milk
1/2 cup ready-to-drink margarita mix
1 tablespoon sugar
1-1/2 teaspoons grated lime zest
1 tablespoon lime juice
5 drops green food coloring, optional
1 carton (8 ounces) frozen whipped topping, thawed
PRETZEL TOPPING:
1/3 cup finely crushed pretzels
4 teaspoons butter, melted
1 tablespoon sugar
Lime slices

Steps:

  • Combine first five ingredients; mix well. If desired, add green food coloring; fold in thawed whipped topping. , For pretzel topping, combine pretzels, butter and sugar. Spoon lime mixture into 6 glasses; top each with about 1 tablespoon pretzel topping. Freeze until firm, 4-6 hours. Serve frozen with lime slices.

Margarita Jell-O is not an easy find, so we improvised by using two boxes of lime Jell-o and 1 cup of boiling margarita mix in place of 1/2 the boiling water called for in the recipe. We loved the way it turned out - the perfect light bite for your next adult party. Be sure to garnish with salt... It really makes the dish!

2 c boiling water
2 pkg jell-o brand margarita flavor gelatin
1/2 c tequila
1 grated peel and juice from lime
2 c thawed cool whip topping

Steps:

  • 1. STIR boiling water into dry gelatin mixes with wire whisk in a large bowl at least 2 mins. Stir in tequila and 2 tbs of lime juice. Add whipped topping and 1 tsp of the lime peel; stir until whipped topping is completely melted and well blended.
  • 2. Pour into an 8 inch square pan.
  • 3. Refrigerate 3 hours or until firm. Cut into 36 pieces to serve. Garnish with additional lime peel and coarse salt, if desired. For non-alcoholic substitute cold water for tequila.

1 package lemon cake mix (regular size)
1 package (3.4 ounces) instant lemon pudding mix
1 can (10 ounces) frozen nonalcoholic margarita mix, thawed
4 large eggs, room temperature
1/2 cup butter, softened
2 tablespoons lime juice
3 teaspoons grated lime zest
GLAZE:
1-1/2 cups confectioners' sugar
3 tablespoons lime juice

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan. In a large bowl, combine cake mix, pudding mix, margarita mix, eggs, butter, lime juice and zest; beat on low speed for 30 seconds. Beat on medium for 2 minutes., Transfer batter to prepared pan. Bake 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool completely., Meanwhile, combine glaze ingredients. Drizzle over cake.
