BOOZY MARGARITA POPSICLE RECIPE
Warm the water a bit to help dissolve the sugar. It shouldn't be hot, about 30 seconds in the microwave or briefly on the stove is sufficient. We will often make them with a touch more tequila, but they won't freeze as solid. If you are using a mold which easily release the pops feel free to use about 1/3 cup of tequila instead of the 1/4 cup.Makes ten 2.5 ounce Pops

- If using wooden ice pop sticks, soak sticks for an hour in warm water before making pops (helps minimize them from floating up when inserted into molds.)
- In bowl, stir together water, sugar, lime juice, tequila, and orange liqueur. Make sure sugar is completely dissolved.
- Pour and divide the margarita mixture between 10 ice pop molds. (optional) Add a thin slice of lime into each pop mold.
- Insert popsicle sticks and freeze for 4 hours or until completely solid.(optional) Before serving, dip or sprinkle some salt on the tips of the un-molded pops.

- Pierce the rind of each watermelon wedge with the tip of a paring knife to make a 1/2-inch-wide slit that is about 1 inch deep. Combine the tequila, lime juice and agave in an extra-large resealable plastic bag. Add the watermelon, seal the bag and turn it over gently to combine. Refrigerate, turning over once more halfway through, for about 1 hour.
- Line 2 baking sheets with wax paper. Insert an ice-pop stick into the slit of each watermelon wedge. Put on the prepared baking sheets and freeze until solid, 4 hours to overnight. Serve with lime wedges and chile powder.

- Combine sugar, lime juice, water, lemon juice and orange juice in a small saucepan over medium heat. Cook, stirring, until sugar dissolves.
- Remove from heat and allow to cool.
- Once cool transfer to a blender with tequila, orange liqueur, and lime wedge and process until smooth.
- Pour into the cups (Dixie) and cover the top of each cup with foil.
- Place the popsicle stick in center of cup (down through foil, which will hold it in place).
- Freeze until hard, preferably overnight. Remove from freezer and run cup under warm water to loosen popsicle.
- Garnish with kosher salt and serve. Enjoy!

- Pour the tequila into a tall and narrow glass. Remove the frozen pops from their wrappers and submerge them 1 by 1 in the glass of tequila, tilting the glass to completely moisten the entire pop. Press the side of the pop into the sauce. Serve immediately.
