HOMEMADE MARASCHINO CHERRIES



Homemade Maraschino Cherries image

Once you learn how commercial maraschino cherries are made, you will want to make your own at home. It does take time, but this recipe makes it easy.

3 pounds sweet cherries (pitted)
For the Brine:
2 quarts water
1 tablespoon pickling salt (or brining or kosher salt)
For the Syrup:
4 1/2 cups sugar
3 cups water
1 lemon (juiced)
Optional: red food coloring
Optional: 1 ounce almond extract

Steps:

  • Gather the ingredients.
  • Bring the water and pickling salt to a boil in a pot, stirring until the salt is dissolved. Let cool for 10 minutes, then pour over pitted sweet cherries. Cover and let sit 12 hours or overnight.
  • Drain the cherries, discarding the brine, and rinse in cold water. Place in a bowl and set aside.
  • In a medium saucepan, combine the sugar, water, lemon juice, and red food coloring, if using. Bring just to a boil, stirring to dissolve the sugar, and remove from the heat.
  • Pour the liquid over the cherries, cover, and let stand for 24 hours.
  • Drain the cherries, reserving the juice. Set the cherries aside. Bring reserved juice to a boil. Remove from the heat and stir in the almond extract, if using.
  • Pour the warm liquid over the cherries.
  • Pack the cherries with the juice in clean jars and store in the refrigerator for up to two weeks.

Layer maraschino liqueur-soaked sweet cherries with a tangy yogurt cream and chewy meringue cookies for a dessert that tastes both heart-warmingly retro and totally modern.

For the homemade maraschino cherries:
3 pounds fresh cherries, pits removed
1 1/3 cups sugar
1/4 cup fresh lemon juice
1/2 cup Luxardo maraschino liqueur or kirsch (clear cherry brandy)
1 teaspoon almond extract
For the parfaits:
2 1/2 cups plain whole-milk Greek yogurt
2 1/2 cups sour cream
1/2 cup powdered sugar
Pinch of kosher salt
8 vanilla meringue cookies, broken into pieces
1 pound fresh cherries, pits removed
Special Equipment
A heatproof 1-quart jar

Steps:

  • Make the Maraschino cherries:
  • Set a mesh sieve over a medium bowl. Bring cherries, sugar, lemon juice, and 2/3 cup water to a simmer in a large saucepan over medium-low heat, stirring occasionally; cook until cherries have released their juices and are softened but still intact, 20-25 minutes. Pour cherries into prepared sieve, letting juices collect in bowl. Set cherries aside.
  • Return juices to same saucepan and bring to a simmer over medium heat. Cook until liquid is reduced to 1 1/2 cups (it will be a thin syrup at this point), 15-20 minutes. Remove from heat, add reserved cherries, and stir in liqueur and almond extract. Transfer maraschino cherries to jar, cover, and chill at least 24 hours before using.
  • To assemble:
  • Whisk yogurt, sour cream, powdered sugar, and salt in a large bowl until smooth; fold in meringue cookies.
  • Layer maraschino cherries, fresh cherries, and yogurt mixture into 8 glasses, dividing evenly.

  • Maraschino cherries can be made 2 weeks ahead. Keep chilled.

6 cups all-purpose flour
3 tablespoons baking powder
2 tablespoons powdered sugar
1 1/2 teaspoons table salt
3/4 teaspoon baking soda
9 tablespoons canola oil
6 eggs
2 1/2 cups milk
1 (8 ounce) jar maraschino cherries

Steps:

  • Whisk dry ingredients together. Mix well.
  • Using an electric mixer, slowly stir in canola oil.
  • Mix until all lumps are gone and mixture is a uniform texture, about 1 minute (You've just made a scratch "box" of Original Bisquick Baking Mix; If you scale recipe down, you can store excess mix in an airtight container.).
  • If you're feeling lazy, you may skip those steps and just get a box of Bisquick.
  • Add milk and eggs to baking mix. Mix well.
  • Add cherries. Blend until batter is smooth and bright pink. If needed, you may adjust the thickness of you batter by adding a tablespoon of milk or flour at a time, and mixing well.
  • Pour 1/4 cup of batter onto hot, greased griddle. For Silver Dollars, pour tablespoons of batter onto griddle.
  • Cook until pancake starts to bubble & edges are slightly dry. Turn; and cook until golden.
