CALLIE'S CHARLESTON BISCUITS

2 cups self-rising flour, preferably White Lily brand
1/4 cup cream cheese, at room temperature
2 tablespoons salted butter, at room temperature, plus 1 tablespoon melted butter for glazing
3/4 to 1 cup buttermilk
All-purpose flour, for dusting
Serving suggestions: Savory Thyme Butter (recipe follows), blackberry jam, cream cheese
8 tablespoons (1 stick) unsalted butter, at room temperature
2 tablespoons minced green onion
1 teaspoon minced fresh thyme, or more to taste
1 clove garlic, minced
Kosher salt and freshly ground black pepper (more than you think you'll need)

Steps:

  • Preheat the oven to 450 degrees F. Have an ungreased baking sheet ready.
  • Place the self-rising flour in a large mixing bowl. Use 2 forks or your fingers to cut in the cream cheese and butter, making sure not to overwork the dough; there should be small chunks and some loose flour. Make a well in the center of the mixture and add the buttermilk, gradually incorporating it into the flour. (The dough will be wet.)
  • Pat a little all-purpose flour on the top of the dough, then flip it out onto a floured surface, floured-side down. Flour the top of the dough lightly; that will make it easy to roll out but keep it moist inside. Lightly pat or roll out the dough to a 1 1/2-inch thickness (do not overwork it or the biscuits will be tough).
  • Use a 2-inch biscuit cutter or a similarly sized drinking glass to cut out biscuits, cutting them as close together as possible. (The key to good biscuits is to avoid having to knead or roll out the dough too many times.) Arrange the biscuits on the baking sheet so that they are just touching. Roll out the leftover dough into a rope and outline the exposed outer edge of the biscuits, binding them together to stop the biscuits from spreading and creating a wonderful rise while baking. Brush the tops with the melted butter.
  • Put the biscuits in the oven, then immediately turn the oven down to 400 degrees F and bake for 10 minutes. Rotate the pan, then bake until golden brown, an additional 6 to 10 minutes. Serve warm with spreads such as Savory Thyme Butter, blackberry jam or cream cheese.
  • Combine butter, green onion, thyme, garlic and some salt and pepper in a bowl with a rubber spatula, or whip with a handheld mixer.
  • Transfer to a ramekin, cover with plastic wrap and store in the refrigerator, or roll into a log in plastic wrap and freeze until ready to use.

MAPLE BACON CHEDDAR BISCUITS

8 slices bacon, diced
4 cups all-purpose flour
1 cup shredded extra-sharp cheddar cheese
4 teaspoons baking powder
1 1/2 teaspoons kosher salt
1 teaspoon baking soda
3/4 cup unsalted butter, frozen
1 1/2 cups buttermilk
6 tablespoons maple syrup, divided
2 tablespoons melted unsalted butter

Steps:

  • Preheat oven to 450 degrees F. Line a baking sheet with parchment paper or a silicone baking mat. Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Drain excess fat; transfer bacon to a paper towel-lined plate. In a large bowl, combine bacon, flour, cheese, baking powder, salt and baking soda. Grate butter using the large holes of a box grater. Stir into the flour mixture. In a medium bowl, whisk together buttermilk and 4 tablespoons maple syrup. Add to the flour mixture and stir using a rubber spatula until a soft dough forms. Working on a lightly floured surface, knead the dough 3-4 times until it comes together. Using a rolling pin, roll the dough into a 1 1/4-inch thick rectangle. Cut out 12 rounds using a 2 to 2 1/2-inch biscuit or cookie cutter. Place biscuits onto the prepared baking sheet; place in the freezer for 15 minutes. Remove biscuits from freezer. Place into oven and bake for 15-18 minutes, or until golden brown. In a small bowl, whisk together remaining 2 tablespoons maple syrup and butter. Serve biscuits warm, brushed with the maple-butter mixture.

1/4 cup vegetable oil
3/4 cup buttermilk
8 tablespoons butter (softened)
3/4 cup sugar
1 teaspoon cinnamon
4 tablespoons butter (melted)
1/8 cup cinnamon sugar

Steps:

  • Mix flour, baking powder, salt and soda.
  • Stir in oil and buttermilk and mix until blended.
  • Knead dough on floured surface.
  • Roll dough into 15x8-inch rectangle.
  • Spread butter over the dough.
  • Combine 3/4 cup sugar with 1 teaspoon cinnamon.
  • Sprinkle mixture over butter.
  • Roll dough jelly roll fashion and pinch edges shut.
  • Cut roll into 1 1/2 inch slices.
  • Bake in greased baking pan at 400°F 15-20 minutes until lightly browned.
  • Glaze:.
  • Combine melted butter with cinnamon sugar.
  • Pour over biscuits while still hot in baking dish.

4 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup cold butter
1 1/4 cups milk
1/4 cup pure maple syrup
1/2 cup maple sugar (or granulated sugar)
1 tablespoon apple pie spice
1/2 cup butter, softened
2/3 cup raisins (optional)
2 tablespoons butter, melted
1 1/4 cups powdered sugar
2 tablespoons pure maple syrup
1 -2 teaspoon milk

Steps:

  • Preheat oven to 375 degrees F.
  • Line a 15x10x1-inch baking pan with parchment paper, extending edges over ends; set aside.
  • In a large bowl combine flour, baking powder, baking soda, and salt.
  • Using a pastry blender, cut in 1/2 cup cold butter until mixture resembles coarse crumbs.
  • Make a well in the center of the flour mixture and add milk and maple syrup all at once.
  • Using a fork, stir just until dough forms a ball.
  • On a lightly floured surface, knead dough gently for 10 to 12 strokes. Roll dough between two pieces of parchment paper or pat dough into a 14x10-inch rectangle.
  • In a small bowl combine maple sugar and apple pie spice.
  • Spread dough with 1/2 cup softened butter; sprinkle with the sugar-spice mixture and if desired at this point, sprinkle with raisins.
  • Starting from a long side, roll up into a spiral, pinching seam to seal.
  • Using a sharp knife, cut into 12 slices.
  • Arrange slices, cut sides down, in prepared pan. Drizzle with the 2 tablespoons melted butter.
  • Bake for 18 to 20 minutes or until golden. Using edges of parchment paper, lift from pan to a wire rack. Cool slightly. Drizzle with Maple Glaze.
  • MAPLE GLAZE:.
  • In a small bowl combine powdered sugar and maple syrup.
  • Stir in enough milk, 1 teaspoon at a time, to make a glaze of drizzling consistency.

This is my mom's popular biscuit recipe made with spelt instead of wheat. Best eaten fresh; may be frozen.

2 1/2 cups light spelt flour
1 tablespoon baking powder, heaping
1/2 teaspoon salt
1/2 cup butter or 1/2 cup margarine, softened
1 tablespoon honey
1 cup milk or 1 cup buttermilk

Steps:

  • Mix together dry ingredients; cut in margarine.
  • Add honey and milk; stir well.
  • Turn out onto floured board and knead at least 10-15 times.
  • Flatten dough into (approximately) 9-inch circle; cut into circles with biscuit cutter or large glass. Place on greased or non-stick cookie sheet.
  • Bake in oven pre-heated to 350ºF for 15-20 minutes or until brown.
