- Preheat oven to 325°F.
- Toss all ingredients together in a large bowl.
- Line a baking sheet with parchment paper or foil.
- Roast almond mixture until lightly toasted and skins are just beginning to split (about 20 minutes).

- Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15 inch jellyroll pan.
- Lightly beat the egg white; add water, and beat until frothy but not stiff. Add the nuts, and stir until well coated. Mix the sugar, salt, and cinnamon, and sprinkle over the nuts. Toss to coat, and spread evenly on the prepared pan.
- Bake for 1 hour in the preheated oven, stirring occasionally, until golden. Allow to cool, then store nuts in airtight containers.

MAPLE GLAZED ALMONDS
This cinnamon almonds recipe is perfect to make and serve as party snacks, to bring to a potluck, to give as edible holiday gifts, or just for snacking on at home. - Preheat oven to 325°F (165°C)
- Prepare a baking sheet by lining with parchment paper. Set aside.
- Combine maple syrup, cinnamon, nutmeg and salt together. Whisk well so spices are incorporated well into the syrup.
- Pour over almonds and stir. Make sure all almonds are coated well.
- Place in a single layer on baking sheet.
- Bake for 20 minutes.
- Remove from oven and let cool on sheet.
- When cooled completely, put into an air-tight container.

- Preheat oven to 350 degrees. Spread almonds in a single layer on a rimmed baking sheet, and bake until lightly toasted and fragrant, 7 to 8 minutes.
- In a medium bowl, combine tamari and maple syrup. Add almonds, and toss until thoroughly coated. Lightly cover the baking sheet with cooking spray, and spread almonds evenly on sheet.
- Roast in oven until deep brown, stirring once, 15 to 17 minutes. Immediately transfer to a clean baking sheet, and spread out almonds, separating so nuts don't touch. Let cool before serving.

SPICY CINNAMON MAPLE ROASTED ALMONDS
Steps:
- Preheat oven to 350 degrees.
- Spread the almonds on a baking sheet in a single layer and bake for 5-7 minutes.
- While the almonds are baking, whisk together the olive oil, syrup, cayenne and cinnamon in a large bowl.
- Transfer the almonds to the bowl and toss to coat. Line the baking sheet with parchment and pour the almonds onto the parchment. Using a spatula, spread the almonds out in a single layer and return them to the oven.
- Bake the almonds for 18-20 minutes or until they turn a deep reddish brown. Allow the almonds to come to room temperature on a baking sheet and store in an airtight container until ready to serve.

MAPLE HONEY ROASTED ALMONDS AND CASHEWS

- Preheat to 350 degrees
- Melt the Butter, Syrup and Honey in the microwave for 30-45 seconds and then stir in the Vanilla, Nutmeg and Cinnamon
- Place the Almonds and Cashews in a large mixing bowl and fold in the syrup mixture. Spread the nuts onto a half sheet pan lined with heavy duty aluminium foil
- Roast in the oven for 6-8 minutes and then stir them around on the sheet
- Roast for another 6-8 minutes until they've developed a nice color and great smell
- Sprinkle kosher salt over the nuts immediately after they come out of the oven. They'll be gooey while they are still warm and be much less sticky once cooled

Steps:
- Preheat oven to 350 F.
- Toss almonds with maple syrup and salt.
- Add oil last, and toss to coat.
- Spread coated almonds on baking sheet lined with parchmment paper.
- Bake until roasted and syrup has thickened, stirring occasionally, about 20 minutes.
- Be careful not to let them burn, which can easily happen with maple syrup.
- Let cool on pan.
- Break apart any clumps while still a bit warm or the sugar will crack off.
- When completely cool, store in airtight container at room temp.
- Keeps 1 month.
