Slice into a moist and mapley quick bread that's prepped for the oven in minutes!

2 1/4 cups Gold Medal™ all-purpose flour
3/4 cup granulated sugar
1 cup half-and-half
1 teaspoon maple flavor
3 tablespoons vegetable oil
3 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/2 cup chopped pecans, if desired
1/2 cup powdered sugar
2 to 3 teaspoons half-and-half or milk
1 teaspoon maple flavor
2 tablespoons chopped pecans, if desired

Steps:

  • Heat oven to 350°F. Grease bottom only of 8- or 9-inch loaf pan.
  • In large bowl, mix all Maple Pecan Bread ingredients except pecans with spoon; beat 30 seconds. Stir in 1/2 cup pecans. Pour into pan.
  • Bake 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf from pan; remove from pan to wire rack. Cool completely, about 2 hours.
  • In small bowl, mix all Maple Glaze ingredients except pecans until smooth and thin enough to drizzle.
  • Drizzle cooled bread with Maple Glaze. Sprinkle with 2 tablespoons pecans. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

These squares are my husband's favorite. We get some real, pure maple syrup from back home in Ontario, Canada, and they are just to die for. Hope you enjoy as much as we do.

1 cup all-purpose flour
⅓ cup packed brown sugar
½ cup softened butter
1 egg
⅓ cup packed brown sugar
3 tablespoons pure maple syrup
½ cup chopped pecans

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Combine the flour and 1/3 cup brown sugar in a mixer. Mix in the softened butter until a dough has formed. Press into an ungreased 8x8-inch baking dish, and prick with a fork.
  • Bake the shortbread in the preheated oven until golden brown, about 20 minutes. While the shortbread is baking, beat the egg in a mixing bowl along with 1/3 cup brown sugar, maple syrup, and pecans. Pour the pecan mixture over the hot crust, and return to the oven. Continue baking until firmed, 12 to 15 minutes. Remove from the oven, and immediately run a knife around the edges to prevent sticking. Cool completely, then cut into 1-inch squares to serve.

2 1/4 cups all-purpose flour
3/4 cup granulated sugar
1 cup half-and-half
1 teaspoon maple extract
3 tablespoons vegetable oil
3 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/2 cup pecans, chopped
1/2 cup confectioners' sugar
2 -3 teaspoons half-and-half or 2 -3 teaspoons milk
1 teaspoon maple extract

Steps:

  • Preheat oven to 350°F
  • Grease bottom or parchment paper line an 8 x 4-inch or a 9 x 5-inch loaf pan, or 2 (6 x 3-inch) small loaf pans.
  • With a wooden spoon, mix together all ingredients (except pecans and Maple Glaze) in a large bowl; stir until combined.
  • Stir in 1/2 cup pecans. Pour into prepared loaf pan(s).
  • Bake larger size loaves in preheated oven for 55 to 65 minutes, or if making smaller size loaves, bake loaves for 35-40 minutes, or until toothpick inserted in center comes out clean.
  • Cool loaf(s) for 10 minutes in pan(s).
  • Remove loaf(s) from pan, and cool on wire rack.
  • Cool completely, about 2 hours.
  • Instructions for Maple Glaze: Mix all ingredients until smooth and thin enough to drizzle over loaf(s).
  • Drizzle top(s) with Maple Glaze. Wrap tightly and store at room temperature for up to 4 days, or refrigerate for up to 10 days.

Our state trails only Vermont in the production of maple syrup in the U.S. I have many childhood memories of tapping our maple trees in early spring and watching the sap come out. Corn bread, or johnnycake as it's called here in scenic Mohawk Valley, was a staple of the men fighting in the Revolutionary War. The volunteers, who were known as "Johnnys", carried their rations with them, and the johnnycakes held up well for days.

1 cup yellow cornmeal

1 teaspoon baking powder
1 teaspoon baking soda

1/2 cup chopped pecans

I never cared for cornbread til I fiddled around with Jiffy Mix to make a light, sweet, cake-like cornbread. Just watch your baking time, mine is ALWAYS done in 15-16 minutes only. Also makes good muffins, *use paper baking cups, tho.

1 box Jiffy corn muffin mix
1 egg
1/3 cup buttermilk
1/4 cup maple syrup
1 teaspoon vanilla
cinnamon-sugar mixture

Steps:

  • Blend/whisk ingredients except*cinnamon and sugar mix, til all is moistened and lightly blended, but batter is still lumpy.
  • Let rest 5 minutes.
  • Meanwhile, lightly spray 9" deepdish pie pan or glass dish.
  • I like to use a round of parchment paper then on the bottom and respray top of paper a little.
  • Pour batter into prepared pan, sprinkle top fairly heavily with cinnamon and sugar mixed together.
  • Bake in pre-heated 400º oven for 15-17 minutes.
  • Top will be a nice brown, very tender on the inside.
