Maple Baked Pork and Beans image

When it comes to sweet and savory flavor combos, this is up there with the best. With a solid foundation and a few brilliant additions, you've got a knockout batch of baked beans.

Time 14h15m

Yield 12

Number Of Ingredients 9

1 pound dried navy beans
12 ounces salt pork, with rind
2 large white onions, finely diced
1/2 cup ketchup
1/3 cup pure maple syrup
1/4 cup packed dark brown sugar
3 teaspoons Dijon mustard
1/4 teaspoon cayenne pepper
1 cup boiling water

Steps:

  • Soak the beans overnight as directed on package. Drain well. Preheat oven to 250 degrees F. Place the navy beans in a baking dish. Remove the rind from the salt pork in one continuous piece. Set aside. Cut the remaining salt pork into small strips. Heat a pan of water to boiling and add the rind and strips and blanch for 5 minutes. Drain well and rinse with cold water. Add the strips of salt pork to the beans. Stir in the onions, ketchup, maple syrup, brown sugar, mustard, cayenne, and hot water. Stir well to combine. Place the rind on top of the bean mixture. Cover the baking dish tightly with aluminum foil. Place in the oven and bake for 3 hours at 250 degrees F. Remove the rind, recover the dish, and bake at 250 degrees F for 3-5 hours longer or until the beans are tender and the sauce is thick. Check the beans once or twice during the cooking time and add additional water if needed.

SPICY MAPLE BAKED BEANS

Spicy Maple Baked Beans image

Yum! A classic New England dish made zingy with Tabasco. This can be cooked in a crockpot on low for about 8 hours and finished in the oven, uncovered, at 350 for about 1 hour. (The crockery liner of most crockpots can go into the oven.) Or bake in a covered casserole or dutch oven at 250 for approx 4 hours, remove cover and cook until thick, about 1 hour.

Provided by firefly68

Categories     Pork

Time 8h15m

Yield 8-12 serving(s)

Number Of Ingredients 10

1 lb dried navy beans or 1 lb other small dried white bean
1 medium onion, diced
1/4 cup ketchup
1/2 cup real maple syrup
1/3 cup soy sauce
1/4 lb bacon, cut up (a good use for the cheaper ends and pieces, if available in your market)
1 tablespoon dry mustard
1 teaspoon Tabasco sauce (or other hot sauce, to taste)
salt and pepper
water

Steps:

  • Soak beans overnight in 6C water, or boil 2 minutes to soften and let soak 1 hour while prepping other ingredients. Drain beans.
  • Mix all in crockpot/casserole, adding enough water to cover, plus about 4 inches extra. Check pot halfway through and add more water if dry. If you won't be home, just start out with more water; you can cook it off during the final hour. When removing cover for the last hour, taste and adjust seasonings.

MAPLE CANNELLINI BEAN SALAD WITH BABY BROCCOLI AND BUTTERNUT SQUASH

Maple Cannellini Bean Salad with Baby Broccoli and Butternut Squash image

This delicious salad may be served warm or at room temperature. It takes patience to cook the vegetables properly, but it makes a wonderful side to any fall feast! Enjoy the process of creating something your family will enjoy. Substituting regular broccoli may be okay, but baby broccoli is sweeter and more suited to this dish.

Provided by Food Network

Categories     side-dish

Time 12h15m

Yield 12 (1/2 cup) servings

Number Of Ingredients 14

2 pounds beans, either kidney or navy pea variety
8 (1-inch) cubes salt pork
1 Spanish onion, sliced
1 quart Bean Goop, recipe follows
2 1/2 cups very hot water
1/2 cup light brown sugar
1/4 cup dark brown sugar
1/2 cup molasses
1/2 cup ketchup
1/4 cup cider vinegar
1/4 cup pure maple syrup (recommended: Parker's Maple Barn Pure Maple Syrup)
1 1/2 teaspoons dry mustard
1 1/2 teaspoons salt
1 1/2 teaspoons freshly ground black pepper

Steps:

  • Preheat oven to 250 degrees F.
  • Fill a stockpot with the beans and enough cold water to cover them. Bring the water to a boil and parboil the beans for approximately 20 minutes. Drain the water and reserve for later use. Place 4 salt pork cubes and half of the onion on the bottom of the bean pot. Fill the pot 3/4 full with beans. Add the Bean Goop. Fill the rest of the pot with the reserved water. Place the remaining cubes of salt pork and onion on top of the beans. Cover first with a layer of plastic wrap, then a layer of aluminum foil. Bake in the oven for 10 hours. Check beans at that time, blowing on them to see if the skin peels back. If so, they are finished. Time will vary depending on your oven and how long the beans were parboiled in the beginning. Cooking time could increase to as long as 12 hours total.
  • In a large bowl or medium-size saucepan, mix the hot water with the sugars and molasses to dissolve the sugars. Then mix in all remaining ingredients. Set aside for use in the Baked Beans.

  • If using unsoaked, dried beans, you’ll need to first quick-cook them in the Instant Pot. To do this, place the dried beans in your electric pressure cooker with 8c of water and cook over high pressure for 30 minutes. Allow the pressure to release naturally for 20 minutes before draining the liquid and setting the beans aside.
  • Start with this step if using soaked or canned beans. Using the Instant Pot’s sauté function, cook the diced bacon until it begins to crisp – about 3 minutes. Then add the onion and garlic and sauté for another minute.
  • Meanwhile, combine the maple syrup, 2c water, and apple cider vinegar. Use about 1/2 c of this mixture to deglaze the instant pot when you’re finished sautéing the onions.
  • Turn off the Instant Pot and stir in the mustard and tomato paste before adding the reserved maple syrup mixture and coconut aminos. Stir in the beans, cover, and cook at high pressure for 40 minutes. Allow pressure to release naturally for 20 minutes.
