SWEET & SPICY ROASTED PARTY NUTS
These party nuts are a little sweet and a little spicy. They're completely irresistible! Be sure to buy unsalted, raw nuts for this recipe. Feel free to make it your own-I love to add fresh rosemary! Recipe yields 5 1/2 cups mixed nuts.

- Preheat the oven to 325 degrees Fahrenheit. Line a large rimmed baking sheet with parchment paper or a silicone baking mat so the maple syrup doesn't get stuck to the pan (this is important). Pour the almonds, pecans and pepitas onto the pan and set it aside.
- In a small bowl, combine the optional rosemary (or any other added seasonings), maple syrup, melted butter, salt, vanilla, and cayenne (if you using). Gently whisk until blended.
- Pour the mixture over the nuts on the prepared baking sheet. Stir well, until all of the nuts are lightly coated. Spread the mixture in a single layer across the pan (the maple syrup will pool on the bottom of the pan, but that's okay).
- Bake, stirring after the first 10 minutes and then every 5 minutes thereafter, until almost no maple syrup remains on the parchment paper and the nuts are deeply golden, 23 to 26 minutes. (The maple syrup coating will be a little sticky right out of the oven, but will harden as the pecans cool.)
- Remove the pan from the oven and stir the nuts one more time, spreading them into an even layer across the pan. Let them cool down for about 10 minutes, then, while the nuts are still warm, carefully separate any large clumps (this may or may not be necessary).
- Let the nut mixture cool completely on the pan. These will keep for up to 2 months in a sealed bag at room temperature.

- Preheat oven to 325 degrees F. Combine nuts and seeds in a medium-sized bowl. Add the maple syrup and spices and salt and toss to combine. Spray a baking sheet with cooking spray, then transfer coated nuts to baking sheet and spread evenly in 1 layer. Bake 15 to 20 minutes, stirring once, until nuts are fragrant and lightly toasted.
MAPLE SPICE NUTS
Found this recipe in November 1996 Family Circle Magazine. I make these for gift baskets during the holidays, I used my Amber Maple syrup and found it was a great additon. The recipe says to allow to cool, but I'll bet you won't be able to resist a few warm from the oven, they are soooo doggone good.

- Heat oven to 350 degrees.
- Heat oil in large skillet (I use cast iron) over high heat. Add almonds; saute, stirring 2 to 3 minutes, until almonds begin to brown. Add pecans; saute 1 minute. Add peanuts; saute 1 minute more.
- Lower heat to medium-high. Sprinkle nuts with salt, coriander, black pepper and cayenne pepper; toss to coat nuts.
- Pour maple syrup over nuts, saute until syrup is evaporated and nuts are lightly caramelized, 1 minute. Spoon into 15 x 10 x 1 inch baking pan or cookie sheet.
- Bake in 350 degree oven, tossing occasionally, for 30 minutes or until no longer sticky. Cool completely.

These walnuts get tossed in a sweet and spicy glaze and are then perfectly roasted until golden brown. So easy and quick to make, these Maple Spiced Walnuts make a delicious treat and are sure to be a favourite!

- With a rack in the middle of your oven, preheat the oven to 325°F. Prepare a baking sheet by lining it with parchment paper.
- In a medium bowl, combine the maple syrup, oil, cinnamon, ginger, nutmeg, salt and cayenne. Whisk together and add the walnuts, toss to coat walnuts well with the syrupy spice mixture.
- Spread walnuts onto the baking sheet in one even single layer.
- Bake in oven for 10 min, then stir and bake for approximately 10 minutes more until walnuts are golden brown. Remove from the oven and let cool completely on sheet.
- Serve or store in an airtight container.
