MAPLE MARINATED STEAK RECIPE

- Trim steaks of any excess fat or silverskin and place in a medium-sized bowl or a resealable plastic bag. Blend Worcestershire, red wine vinegar, maple syrup, garlic and ½ tsp pepper in a small bowl then pour over steaks. Stir or toss to coat steaks in marinade and allow to sit at room temperature about 30 minutes or in refrigerator for up to 4 hours.
- Preheat grill to medium-high, remove steaks from marinade and pat dry. Brush each steak with oil and season both sides with salt and pepper. Place on grill and cook 3 minutes per side for medium-rare or until steaks reach desired level of doneness.
- Remove steaks from grill. Allow steak to rest on a plate, uncovered, for 5-10 minutes before serving. Enjoy!

- In a mixing bowl whisk together maple syrup, soy sauce and garlic. Place salmon into a baking dish then pour maple syrup mixture evenly over salmon.
- Cover and refrigerate 30 minutes, carefully rotating salmon once halfway through. Preheat oven to 400 degrees during last 10 minutes of marinating salmon.
- Spray a 13 by 9 inch baking dish with cooking spray then transfer marinated salmon into greased dish (don't discard marinade). Bake in preheated oven until salmon is cooked through, about 15 minutes.
- Meanwhile, pour marinade into a small saucepan, bring to a boil over medium-high heat, stirring frequently. Once it reaches a boil, reduce heat slightly and allow to cook several minutes, stirring frequently, until reduced to 1/4 cup.
- Serve salmon warm with 1 Tbsp of the maple soy glaze drizzled over top and black pepper and green onions if desired (I don't think it needed salt because of the soy but feel free to add it if you think it needs it).

- For the salmon, heat vegetable oil on medium-high in a cast-iron skillet.
- For the broccoli, fill a medium pot halfway with water. Add a dash of salt and start boiling water.
- In the meantime, whisk together maple syrup, orange juice, soy sauce, garlic, salt, and pepper in a medium bowl.
- Set aside 2 tablespoons for topping later.
- Place salmon fillets inside the bowl and make sure each side is covered with sauce.
- Sear the salmon 2-3 minutes on each side.
- Brush the tops with the sauce set aside.
- With the pot of water boiling, add the broccoli and cover lid. Blanch for 2 minutes.
- Drain under cold water to stop the cooking.
- In the drained pot of broccoli, stir in butter, soy sauce, red pepper flakes, some lemon zest, and garlic on low heat. Mix until broccoli is well-coated.
- On each plate, serve a filet of salmon and scoop of broccoli.
- Top with reserved marinade and sprinkle parsley for garnish.

- Generously season chicken thighs with salt.
- Combine maple syrup, soy, hoisin, and apple cider vinegar in a small bowl or pyrek with pour spout and whisk with fork. Set aside.
- Heat olive oil in large skillet on medium high heat. Turn skillet so it's well oiled. Add chicken, smooth (or what would be skin) side up, to sear.
- Cook for 2-3 minutes before adding sauce and then flip chicken, smooth side down.
- Keep heat at medium-high and let sauce boil, cooking down. Cook for another 2-3 minutes before flipping to smooth side down.
- Keep cooking the glaze and chicken until most of the liquid has cooked off. Keep the chicken smooth side down so that the sauce carmalizes to the chicken.

- Place the salmon fillets in a baking dish, sealable container, or zipped-top bag. Whisk the maple syrup, soy sauce, sesame oil, and garlic together in a medium bowl. Pour over the salmon fillets, coating them thoroughly. Cover the dish/seal the container or bag. Refrigerate for 15 minutes or up to 8-9 hours.
- Preheat oven to 375°F (191°C). Line a baking sheet with aluminum foil, parchment paper, or a silicone baking mat. Set aside.
- Line the marinated salmon fillets on the baking sheet and top each with sesame seeds. Hold onto the used marinade-see step 4. Bake the salmon for 15-20 minutes depending on thickness, about 10 minutes per 1-inch inch thickness measured from the thickest part of the fillet or until the thickest part reaches 145°F (63°C) internal heat. If desired (for crispier edges), broil the salmon on high for the last 3 minutes.
- Pour the used marinade into a small saucepan or skillet. Bring to a boil, then reduce heat to medium-low and simmer for 5 minutes.
- Remove cooked salmon from the oven. Garnish with chopped scallion and serve with thickened maple glaze.
