PERFECT SALMON BURGERS



Perfect Salmon Burgers image

Number Of Ingredients 12

1 1/4 pounds center-cut salmon fillet, skin and pin bones removed
2 tablespoons dijon mustard
1 tablespoon mayonnaise
1 tablespoon lemon juice
1/2 teaspoon grated lemon zest
Pinch of cayenne pepper
2 scallions, chopped
1 cup plus 2 tablespoons panko (Japanese breadcrumbs)
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil, plus more for brushing
4 brioche buns, split
Tartar sauce and arugula, for topping

Steps:

  • Cut three-quarters of the salmon into 1/4-inch pieces. Put in a large bowl. Cut the rest of the salmon into chunks; transfer the chunks to a food processor along with the mustard, mayonnaise, lemon juice, lemon zest and cayenne. Pulse to make a paste. Add the pureed salmon mixture to the bowl with the diced salmon. Add the scallions, 2 tablespoons panko, 1/2 teaspoon salt, and black pepper to taste. Gently mix until just combined.
  • Line a baking sheet with parchment paper and brush with olive oil. Divide the salmon mixture into 4 mounds on the parchment paper. With damp hands, pat into 4-inch-wide, 3/4-inch-thick patties. Cover loosely with plastic wrap and refrigerate at least 30 minutes.
  • Preheat the broiler. Spread the remaining 1 cup panko on a plate. Press both sides of the salmon patties in the panko. Heat the olive oil in a large nonstick or cast-iron skillet over medium-high heat. Add the patties (in batches if necessary) and cook until browned on the bottom, 3 to 4 minutes, adjusting the heat if necessary. Turn and cook until the other side is browned and the patties feel springy in the center, 3 to 4 more minutes. Transfer to a paper towel-lined plate to drain; season with salt.
  • Meanwhile, arrange the buns, cut-side up, on a broiler pan and broil until toasted, 1 to 2 minutes. Serve the patties on the buns; top with tartar sauce and arugula.

80 ml (1/3 cup) fresh white cheese, such as Quark
15 ml (1 tablespoon) Dijon mustard
30 ml (2 tablespoons) maple syrup preferably amber
450 g (1 lb) raw salmon meat, ground
15 ml (1 tablespoon) capers, finely chopped
10 ml (2 teaspoons) Dijon mustard
1 garlic clove, finely chopped
30 ml (2 tablespoons) chopped green onion
30 ml (2 tablespoons) grated Parmesan cheese
30 ml (2 tablespoons) maple syrup
30 ml (2 tablespoons) chopped fresh parsley
Salt and freshly ground pepper to taste
4 buns

Steps:

  • Mix all sauce ingredients and let rest in an airy place while preparing the burgers.
  • Preheat the grill or oven to 210 °C (425 °F).
  • In a bowl, combine all the burger ingredients except for the buns and condiments. Divide the mixture into four and form patties.
  • Place patties on aluminium foil on the grill, or on parchment paper in the center of the oven, and cook for 6 to 10 minutes, turning over once.
  • Heat the buns; garnish the patties with the maple sauce and your favourite condiments.
  • * You can also cook the burgers in a small saucepan at medium high heat for 3 to 4 minutes on each side.

1-1/2 to 3 teaspoons prepared horseradish

1/8 teaspoon salt

1 pouch (7.1 ounces) boneless skinless pink salmon, drained
1 tablespoon butter
2 kaiser rolls, split
Lettuce leaves

Steps:

  • In a small bowl, combine the first eight ingredients. Add salmon and mix well. Shape into two patties. , In a large skillet, cook patties in butter over medium heat, for 5-6 minutes on each side or until browned. Serve on rolls with lettuce.

2 eggs
¼ cup chopped fresh parsley
2 tablespoons finely chopped onion
¼ cup Italian seasoned dry bread crumbs
2 tablespoons lemon juice
½ teaspoon dried basil
1 pinch red pepper flakes
1 tablespoon vegetable oil
2 tablespoons light mayonnaise
1 tablespoon lemon juice
1 pinch dried basil

Steps:

  • In a medium bowl, mix together the salmon, eggs, parsley, onion, breadcrumbs, 2 tablespoons of lemon juice, 1/2 teaspoon of basil, and red pepper flakes. Form into 6 firmly packed patties, about 1/2 inch thick.
  • Heat the oil in a large skillet over medium heat. When the oil is hot, add the patties, and cook for 4 minutes per side, or until nicely browned.
  • In a small bowl, mix together the mayonnaise, 1 tablespoon of lemon juice and a pinch of basil. Use as a sauce for your patties.

¼ cup maple syrup
2 tablespoons soy sauce
1 clove garlic, minced
¼ teaspoon garlic salt
⅛ teaspoon ground black pepper
1 pound salmon

Steps:

  • In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
  • Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.
