Salmon is my number one favorite "meat" so I'm always looking for a variety of ways to cook it. Here is another of several ways I like to prepare it. (I only make this with REAL maple syrup, so can't vouch for the results if you substitute.)

3 tablespoons maple syrup
2 tablespoons soy sauce
1 tablespoon grated fresh ginger
1 1/2 teaspoons cornstarch, dissolved in
1 tablespoon water
4 salmon fillets
1 scallion, sliced thin (white part plus about 2-3 inches of the green)
1 tablespoon toasted sliced almonds (optional)

Steps:

  • In a small bowl whisk together the syrup through cornstarch solution until smooth.
  • Place the fillets skin-side-down in a shallow baking pan.
  • Pour the syrup mixture over the salmon.
  • Bake about 15-18 minutes at 450°F until the fish flakes easily; baste with glaze halfway through cooking.
  • Sprinkle with scallion and almonds before serving.

Delicious maple-glazed salmon is a little on the sweet side, but not too much. The whole house smells wonderful when this is cooking; it's a great warm winter meal! I have a hard time finding good recipes my family likes with fish, since my husband is not fond of lemon. This is a perfect compromise!

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Mix maple syrup, soy sauce, garlic, dill, garlic salt, and pepper together in a small bowl.
  • Place salmon in a shallow baking dish and coat with the maple syrup mixture. Cover dish and marinate salmon in the refrigerator, turning once, about 30 minutes.
  • Bake salmon, uncovered, in the preheated oven until fish flakes easily with a fork, about 25 minutes.

1 tablespoon vegetable oil
¼ cup maple syrup
2 tablespoons orange juice
2 tablespoons soy sauce
1 teaspoon ground ginger
1 clove garlic, minced
pepper, to taste
salt, to taste
4 oz salmon fillet, 2 fillets
fresh parsley, for garnish
1 lb broccoli floret
salt, to taste
2 tablespoons butter
1 tablespoon soy sauce
1 clove garlic, minced
1 teaspoon lemon zest
1 teaspoon red pepper flakes

Steps:

  • For the salmon, heat vegetable oil on medium-high in a cast-iron skillet.
  • For the broccoli, fill a medium pot halfway with water. Add a dash of salt and start boiling water.
  • In the meantime, whisk together maple syrup, orange juice, soy sauce, garlic, salt, and pepper in a medium bowl.
  • Set aside 2 tablespoons for topping later.
  • Place salmon fillets inside the bowl and make sure each side is covered with sauce.
  • Sear the salmon 2-3 minutes on each side.
  • Brush the tops with the sauce set aside.
  • With the pot of water boiling, add the broccoli and cover lid. Blanch for 2 minutes.
  • Drain under cold water to stop the cooking.
  • In the drained pot of broccoli, stir in butter, soy sauce, red pepper flakes, some lemon zest, and garlic on low heat. Mix until broccoli is well-coated.
  • On each plate, serve a filet of salmon and scoop of broccoli.
  • Top with reserved marinade and sprinkle parsley for garnish.
  • Enjoy!

3 4-6 oz salmon fillets
1/4 lb uncured prosciutto
1 tbsp olive oil
1 tbsp maple syrup
fresh dill to garnish (optional)

Steps:

  • Preheat oven to 400F degrees.
  • Wrap salmon tightly with prosciutto slices.
  • Heat oil in a cast iron skillet or any oven safe skillet. Place fillets in the pan and cook for about 2-3 minutes each side until the prosciutto is light golden brown. Remove from heat and brush the salmon with maple syrup.
  • Transfer the entire pan to the oven. Bake for 10 minutes.

1/3 cup maple syrup (real stuff)
1/4 cup soy sauce
sesame seeds

Steps:

  • Marinate the 2 salmon fillets in mixture of 1/3 cup maple syrup and 1/4 cup of soy sauce for at least 2 hours in the refrigerator.
  • Remove from refrigerator, spoon out marinade into a saucepan and reduce over medium-low heat until you're left with about half the original volume (about 10 minutes).
  • Broil the fillets in a lightly oiled pan for about four minutes, skin side up.
  • Flip the fillets over and brush the flesh side liberally with the reduced marinade.
  • Sprinkle sesame seeds over top and broil for another 4 minutes or until the surface is caramelized and the salmon is no longer translucent in the centre.

4 skinned salmon fillets
1/2 cup maple syrup
1 lemon, juiced
2 tablespoons dark soy sauce
2 teaspoons garlic, minced
2 teaspoons fresh ginger, grated

Steps:

  • Gather the ingredients.
  • Lay salmon fillets on a piece of paper towel and dry carefully. Check fish over for any bones. Remove with tweezers if you find any. Lay fillets side by side in a glass or ceramic dish.
  • Combine maple syrup, lemon juice, soy sauce, garlic, and ginger and mix thoroughly. Add chile flakes and stir again.
  • Pour marinade over salmon. Cover and let marinate for 20 minutes at room temperature. Turn after 10 minutes, so all sides of fillets come into contact with marinade.
  • Heat a griddle or cast-iron frying pan over high and add oil. Heat until hot but not smoking.
  • Take fillets one at a time from marinade and carefully transfer to pan. Cook 2 minutes.
  • Reduce heat to medium and cook fillets for 4 minutes.
  • Then flip over and cook for an additional 4 minutes. Remove from pan and keep warm.
  • While salmon is cooking, transfer marinade to a small saucepan and bring to a gentle boil. Reduce to create a thick, syrupy sauce, then strain.

4 (6 oz) skinless salmon fillets
1/3 cup real maple syrup*
3 Tbsp soy sauce ((not low-sodium))
2 cloves garlic (, minced)
Freshly ground black pepper and chopped green onions ((optional))

Steps:

  • In a mixing bowl whisk together maple syrup, soy sauce and garlic. Place salmon into a baking dish then pour maple syrup mixture evenly over salmon.
  • Cover and refrigerate 30 minutes, carefully rotating salmon once halfway through. Preheat oven to 400 degrees during last 10 minutes of marinating salmon.
  • Spray a 13 by 9 inch baking dish with cooking spray then transfer marinated salmon into greased dish (don't discard marinade). Bake in preheated oven until salmon is cooked through, about 15 minutes.
  • Meanwhile, pour marinade into a small saucepan, bring to a boil over medium-high heat, stirring frequently. Once it reaches a boil, reduce heat slightly and allow to cook several minutes, stirring frequently, until reduced to 1/4 cup.
  • Serve salmon warm with 1 Tbsp of the maple soy glaze drizzled over top and black pepper and green onions if desired (I don't think it needed salt because of the soy but feel free to add it if you think it needs it).

Steps:

  • Preheat oven to 375.
  • Whisk together all glaze ingredients and set aside.
  • Pat each side of salmon with a paper towel to remove extra moisture then season both sides with salt and pepper to taste.
  • Whisk together the remaining spices and set aside.
  • Add salmon to the direct center of a large piece of greased or non stick foil with enough on the sides to fold over when baking. Sprinkle seasoning on top of salmon and make sure to pat in.
  • Spoon the maple glaze over the top of the salmon. Fold the sides of the foil up to completely enclose the salmon. If you need more foil, just layer over the top and close.
  • Bake for about 14-15 minutes or until salmon is almost done cooking. Remove salmon from the oven.
  • Change your setting to broil , uncover the foil and place salmon under the broiler for about 2 minutes or until golden then remove from oven.

2 lb. salmon fillets (about 4 pieces), cut into 3-inch strips
1/4 cup maple syrup
2 tablespoons soy sauce
1 tablespoon olive oil
2 teaspoons garlic, minced
1 tablespoon Italian seasoning
1/2 teaspoon ground black pepper
sesame seeds (optional, for serving)

Steps:

  • In a small bowl, whisk together maple syrup, soy sauce, olive oil, garlic, Italian seasoning, and black pepper. Place salmon fillets into a medium container and pour the maple syrup mixture on top to fully coat. Cover and place in the refrigerator and marinate for at least 30 minutes or overnight. (You can also marinate the salmon in a large ziploc back. Add in all ingredients and then press the air out of the bag and seal tightly. Press the marinade around the salmon to coat).
  • Meanwhile, preheat oven to 400 F. Then, remove the marinated salmon fillets out of the container and place them skin side down on a parchment lined baking sheet. Keep the marinade sauce to brush on later.

  • Transfer the salmon fillets onto a plate and let rest for 5 minutes. Sprinkle some sesame seeds on top (optional) and serve warm over steamed rice or some creamy mashed potatoes.

1/3 cup real maple syrup
1/4 cup soy sauce
1 Tbsp sesame oil
2 garlic cloves (pressed or finely chopped)
1/2 tsp black pepper (freshly ground)
2 to 2 1/2 lbs salmon fillet (cut into 6 (1-inch thick) portions)
1/4 cup green onion (finely chopped, for garnish)

Steps:

  • Stir together marinade: 1/3 cup maple syrup, 1/4 cup soy sauce, 1 Tbsp sesame oil, 2 pressed garlic cloves, and 1/2 tsp pepper (you can even combine it in the plastic bag to save a dish!).
  • In a large zip-loc bag, combine salmon fillets with marinade and toss to combine. Seal the bag, removing excess air. Marinate in the refrigerator 45 minutes. Flipping the bag over halfway. Preheat Grill to medium/high heat.
  • Remove salmon to a platter, reserving marinade. Oil the grates (dip a paper towel in oil and use tongs and an oven mitt for safety). Grill salmon skin-side-down over medium/high heat according to the chart below (this salmon took about 4 min per side). Carefully flip salmon over and continue grilling until salmon is flaky.
  • Transfer reserved marinade to a small sauce pan and boil it down over high heat whisking constantly for for 3-4 minutes, or until starting to thicken. Brush grilled salmon with soy-maple glaze and serve garnished with green onion if desired.

⅓ cup pure maple syrup
1 tablespoon lime juice
1 tablespoon reduced-sodium soy sauce
½ teaspoon cayenne pepper
½ teaspoon garlic powder
4 (5 ounce) skin-on salmon fillets
2 tablespoons chopped fresh chives
¼ teaspoon salt
Lime wedges for serving

Steps:

  • Position rack in upper third of oven; preheat to 425°F. Whisk maple syrup, lime juice, soy sauce, cayenne and garlic powder together in a small bowl.
  • Place a large sheet of foil on a large rimmed baking sheet. Place salmon fillets, skin-side down, in the middle of the foil. Pat the salmon dry with paper towels. Brush or spoon half of the maple mixture (about 1/4 cup) evenly over the salmon; set aside the remaining maple mixture. Bring the edges of the foil together over the salmon and crimp tightly to contain the maple mixture in the foil. Bake until the salmon just starts to turn opaque, 12 to 15 minutes. Remove from oven; open the top of the foil to expose the salmon, but keep the foil edges upright to contain the maple mixture. Pour the reserved remaining maple mixture over the salmon. Return the pan to the oven and turn the broiler to high. Broil until the salmon starts to brown in places, about 5 minutes.
  • Remove the pan from the oven. Spoon some of the maple mixture in the foil over the salmon. Let rest for 5 minutes (the maple mixture should thicken slightly). Transfer the salmon to 4 plates and spoon or pour the maple mixture over the top. Sprinkle evenly with chives and salt. Serve with lime wedges, if desired.

  • GRILL PLANKED SALMON: Pat plank dry. Spray with oil. Place salmon on plank, skin side down. Brush salmon with 1/3 of glaze. Place plank on grill, close the lid and grill for 3 minutes for thinner plank (a little longer if using a thicker plank) until plank starts charring and smoking. Brush 1/3 more glaze on top of salmon. Turn off burner/heat under the salmon (salmon should now be on indirect heat) and close the lid. The other burner(s) should still be left on high with the temperature of the BBQ at about 425F-450F. Cook for another 7 minutes or until salmon just begins to turn opaque. Instant read thermometer will be at 130-135F (temp will rise while resting). Salmon should be a warm pink in the middle. Drizzle with remaining glaze. Rest salmon for 5 minutes loosely covered with a foil.
