MAPLE-GLAZED SALMON
Salmon is my number one favorite "meat" so I'm always looking for a variety of ways to cook it. Here is another of several ways I like to prepare it. (I only make this with REAL maple syrup, so can't vouch for the results if you substitute.)

- In a small bowl whisk together the syrup through cornstarch solution until smooth.
- Place the fillets skin-side-down in a shallow baking pan.
- Pour the syrup mixture over the salmon.
- Bake about 15-18 minutes at 450°F until the fish flakes easily; baste with glaze halfway through cooking.
- Sprinkle with scallion and almonds before serving.
MAPLE-GLAZED SALMON
Delicious maple-glazed salmon is a little on the sweet side, but not too much. The whole house smells wonderful when this is cooking; it's a great warm winter meal! I have a hard time finding good recipes my family likes with fish, since my husband is not fond of lemon. This is a perfect compromise!

- Preheat the oven to 400 degrees F (200 degrees C).
- Mix maple syrup, soy sauce, garlic, dill, garlic salt, and pepper together in a small bowl.

- For the salmon, heat vegetable oil on medium-high in a cast-iron skillet.
- For the broccoli, fill a medium pot halfway with water. Add a dash of salt and start boiling water.
- In the meantime, whisk together maple syrup, orange juice, soy sauce, garlic, salt, and pepper in a medium bowl.
- Set aside 2 tablespoons for topping later.
- Place salmon fillets inside the bowl and make sure each side is covered with sauce.
- Sear the salmon 2-3 minutes on each side.
- Brush the tops with the sauce set aside.
- With the pot of water boiling, add the broccoli and cover lid. Blanch for 2 minutes.
- Drain under cold water to stop the cooking.
- In the drained pot of broccoli, stir in butter, soy sauce, red pepper flakes, some lemon zest, and garlic on low heat. Mix until broccoli is well-coated.
- On each plate, serve a filet of salmon and scoop of broccoli.
- Top with reserved marinade and sprinkle parsley for garnish.

PROSCIUTTO MAPLE SALMON
Steps:
- Preheat oven to 400F degrees.
- Wrap salmon tightly with prosciutto slices.
- Heat oil in a cast iron skillet or any oven safe skillet. Place fillets in the pan and cook for about 2-3 minutes each side until the prosciutto is light golden brown. Remove from heat and brush the salmon with maple syrup.

- Marinate the 2 salmon fillets in mixture of 1/3 cup maple syrup and 1/4 cup of soy sauce for at least 2 hours in the refrigerator.

MAPLE GLAZED SALMON FILLET

- Gather the ingredients.
- Lay salmon fillets on a piece of paper towel and dry carefully. Check fish over for any bones. Remove with tweezers if you find any. Lay fillets side by side in a glass or ceramic dish.
- Combine maple syrup, lemon juice, soy sauce, garlic, and ginger and mix thoroughly. Add chile flakes and stir again.
- Pour marinade over salmon. Cover and let marinate for 20 minutes at room temperature. Turn after 10 minutes, so all sides of fillets come into contact with marinade.
- Heat a griddle or cast-iron frying pan over high and add oil. Heat until hot but not smoking.
- Take fillets one at a time from marinade and carefully transfer to pan. Cook 2 minutes.
- Reduce heat to medium and cook fillets for 4 minutes.
- Then flip over and cook for an additional 4 minutes. Remove from pan and keep warm.
- While salmon is cooking, transfer marinade to a small saucepan and bring to a gentle boil. Reduce to create a thick, syrupy sauce, then strain.

- In a mixing bowl whisk together maple syrup, soy sauce and garlic. Place salmon into a baking dish then pour maple syrup mixture evenly over salmon.
- Cover and refrigerate 30 minutes, carefully rotating salmon once halfway through. Preheat oven to 400 degrees during last 10 minutes of marinating salmon.
- Spray a 13 by 9 inch baking dish with cooking spray then transfer marinated salmon into greased dish (don't discard marinade). Bake in preheated oven until salmon is cooked through, about 15 minutes.
- Meanwhile, pour marinade into a small saucepan, bring to a boil over medium-high heat, stirring frequently. Once it reaches a boil, reduce heat slightly and allow to cook several minutes, stirring frequently, until reduced to 1/4 cup.

- Preheat oven to 375.
- Whisk together all glaze ingredients and set aside.
- Pat each side of salmon with a paper towel to remove extra moisture then season both sides with salt and pepper to taste.
- Whisk together the remaining spices and set aside.
- Add salmon to the direct center of a large piece of greased or non stick foil with enough on the sides to fold over when baking. Sprinkle seasoning on top of salmon and make sure to pat in.
- Spoon the maple glaze over the top of the salmon. Fold the sides of the foil up to completely enclose the salmon. If you need more foil, just layer over the top and close.

- Preheat your oven to 375 degrees Fahrenheit.
- Heat a large cast iron (or other oven-safe skillet) over medium-high heat and add the oil.
- Season the salmon fillets on both sides with salt and pepper and add to the hot pan, top side down.

- Line a baking sheet with parchment paper or foil.

- In a small bowl, whisk together maple syrup, soy sauce, olive oil, garlic, Italian seasoning, and black pepper. Place salmon fillets into a medium container and pour the maple syrup mixture on top to fully coat. Cover and place in the refrigerator and marinate for at least 30 minutes or overnight. GRILLED MAPLE SALMON RECIPE

- Stir together marinade: 1/3 cup maple syrup, 1/4 cup soy sauce, 1 Tbsp sesame oil, 2 pressed garlic cloves, and 1/2 tsp pepper (you can even combine it in the plastic bag to save a dish!).
- In a large zip-loc bag, combine salmon fillets with marinade and toss to combine. Seal the bag, removing excess air. Marinate in the refrigerator 45 minutes. Flipping the bag over halfway. Preheat Grill to medium/high heat.
- Remove salmon to a platter, reserving marinade. Oil the grates (dip a paper towel in oil and use tongs and an oven mitt for safety). Grill salmon skin-side-down over medium/high heat according to the chart below (this salmon took about 4 min per side). Carefully flip salmon over and continue grilling until salmon is flaky.
- Transfer reserved marinade to a small sauce pan and boil it down over high heat whisking constantly for for 3-4 minutes, or until starting to thicken. Brush grilled salmon with soy-maple glaze and serve garnished with green onion if desired.

- Position rack in upper third of oven; preheat to 425°F. Whisk maple syrup, lime juice, soy sauce, cayenne and garlic powder together in a small bowl.
- Place a large sheet of foil on a large rimmed baking sheet. Place salmon fillets, skin-side down, in the middle of the foil. Pat the salmon dry with paper towels.
