1 cup flour, all purpose
1/2 cup sugar
4 teaspoons baking powder
1/2 teaspoon nutmeg
3/4 cup milk
1/4 cup butter, melted
1 teaspoon lemon rind, finely grated
1/2 cup raisins
1 1/2 cups water
1 cup maple syrup
2 tablespoons butter, melted
1 teaspoon cornstarch

Steps:

  • Stir flour, sugar,baking powder and nutmeg together in bowl.
  • Whisk milk, butter and rind then pour over the dry ingredients.
  • Sprinkle with raisins and stir.
  • Spread into greased 8 inch baking dish.
  • SAUCE.
  • Whisk all ingredients and pour over the top of the batter.
  • Bake at 350 F until golden and firm to touch.
  • Bake for 40 - 45 minutes.

  • Position a rack in the center of the oven and preheat to 375ºF. Lightly butter a 9-inch round cake pan with 2-inch high sides or a 10-inch pie pan (or the equivalent) and place on a rimmed baking sheet to catch any drips.
  • In a small saucepan, combine the butter, maple syrup, and water. Place over medium heat until the butter melts, then remove from the heat.
  • In a large bowl, sift together the millet, sweet rice, and oat flours with the baking powder, cinnamon, ginger, nutmeg, allspice, and salt. Make a well in the flour mixture and add the eggs, pumpkin puree, buttermilk, maple syrup, vegetable oil, and vanilla extract. Whisk until well-combined.
  • Scrape the batter into the prepared baking dish and pour the maple-butter mixture over and through the batter; the cake batter will begin to float to the top. Carefully transfer the baking dish to the oven and bake the chômeur until the top is golden, the sauce is bubbling, and a tester inserted into the cake comes out clean, 30-40 minutes.

  • Position a rack in the center of the oven and preheat to 350ºF (175ºC). Place 8 (4-ounce) oven-proof ramekins or canning jars on a baking sheet and spray them lightly with cooking oil (or brush with a bit of melted butter).
  • Place the butter and vanilla pod and scrapings in a medium, heavy-bottomed saucepan and cook over medium-low heat, swirling occasionally. After about 3-5 minutes, the butter will foam up, turn golden and smell nutty, with brown flecks mingling with black vanilla bean seeds on the bottom of the pan. At this point, remove the pan from the heat, carefully pour in the maple syrup and coffee, transfer to a measuring pitcher, and set aside.
  • To make the batter, sift together the chestnut, sweet rice and oat flours with the baking powder and salt into a large bowl. Make a well in the flour mixture, and add the eggs, buttermilk, maple syrup and oil. Whisk until well-combined.
  • Pour or scoop the batter into the ramekins, dividing it evenly. Give the sauce a good stir to combine (the butter won't want to emulsify, so you'll want to stir, pour, stir, pour...) and pour it over the batter, dividing it evenly; it will pour through the batter, which is fine.
