MAPLE PECAN SHORTBREAD SQUARES
These squares are my husband's favorite. We get some real, pure maple syrup from back home in Ontario, Canada, and they are just to die for. Hope you enjoy as much as we do.

- Preheat an oven to 350 degrees F (175 degrees C).
- Combine the flour and 1/3 cup brown sugar in a mixer. Mix in the softened butter until a dough has formed. Press into an ungreased 8x8-inch baking dish, and prick with a fork.
- Bake the shortbread in the preheated oven until golden brown, about 20 minutes. While the shortbread is baking, beat the egg in a mixing bowl along with 1/3 cup brown sugar, maple syrup, and pecans. Pour the pecan mixture over the hot crust, and return to the oven. Continue baking until firmed, 12 to 15 minutes. Remove from the oven, and immediately run a knife around the edges to prevent sticking. Cool completely, then cut into 1-inch squares to serve.

- For crust:
- Preheat oven to 350°F. Butter 9x9x2-inch metal cake pan. Using electric mixer, beat butter, sugar, and egg yolk in bowl to blend. Add flour and salt; beat until moist clumps form. Gather dough together. Press dough over bottom and 1/2 inch up sides of pan. Bake crust until golden, about 20 minutes. Cool.
- For filling:
- Combine first 4 ingredients in medium saucepan. Bring to boil, stirring until butter melts and mixture is smooth. Boil filling 30 seconds. Remove from heat; mix in vanilla, then nuts.
- Pour hot filling into crust. Bake bars until filling is bubbling in center, about 15 minutes. Cool bars completely in pan on rack (filling will become firm). Chill at least 1 hour and up to 2 hours. (Can be made 3 days ahead. Cover and keep chilled.) Cut into 30 bars.

PECAN PIE BARS
Steps:
- Preheat the oven to 350 degrees F and line a 9x13 pan with parchment paper.
- In a large bowl, whisk together the flour, powdered sugar, and salt.
- Cut in the cold butter until only pea-sized pieces remain.
- Transfer the mixture to the prepared pan, pressing it into an even layer.
- Bake for 20 minutes, or until set.
- Whisk the eggs, brown sugar, honey, maple syrup, melted butter, vanilla, and salt together in a large bowl.
- Fold in the pecans, and pour the mixture over the partially baked shortbread crust (it's ok if the crust is still hot).

- Base: Preheat oven to 350 degrees to cook cookie base.
- Rub the flour, sugar and butter together in bowl, mix well and press firmly into 8 x 10" pan.
- Bake for 5 minutes.

- Preheat the oven to 350 degrees F.
- For the crust, beat the butter and granulated sugar in the bowl of an electric mixer fitted with a paddle attachment, until light, approximately 3 minutes. Add the eggs and the vanilla and mix well. Sift together the flour, baking powder, and salt. Mix the dry ingredients into the batter with the mixer on low speed until just combined. Press the dough evenly into an ungreased 18 by 12 by 1-inch baking sheet, making an edge around the outside. It will be very sticky; sprinkle the dough and your hands lightly with flour. Bake for 15 minutes, until the crust is set but not browned. Allow to cool.
- For the topping, combine the butter, honey, brown sugar, and zests in a large, heavy-bottomed saucepan. Cook over low heat until the butter is melted, using a wooden spoon to stir. Raise the heat and boil for 3 minutes. Remove from the heat. Stir in the heavy cream and pecans. Pour over the crust, trying not to get the filling between the crust and the pan. Bake for 25 to 30 minutes, until the filling is set. Remove from the oven and allow to cool. Wrap in plastic wrap and refrigerate until cold. Cut into bars and serve.

- Combine the flour, 1/2 cup of light brown sugar, 1/2 teaspoon salt, and 1 1/2 sticks butter in a food processor and pulse until mixture begins to form small lumps. Alternately you can combine the ingredients in a large bowl and using a pastry cutter, break the butter into the flour until the butter is cut enough to resemble the size of peas or oat flakes. Sprinkle the mixture into the baking dish and press, creating an even layer of shortbread crust. Bake for 20 minutes or until golden brown in color.
- In a medium bowl that is microwave safe, melt the remaining 1/2 stick of butter. Whisk in the corn syrup, remaining 3/4 cup of brown sugar, maple syrup, eggs, remaining 1/2 teaspoon salt, and vanilla extract. Continue to whisk until all the lumps from the brown sugar have been worked out. Add the pecans and stir. Pour into the prepared shortbread crust. Bake for 20 - 25 minutes until the center is set and the pecans start to brown. Cool the baking pan on a wire rack. Remove from baking pan and allow to cool completely before cutting and serving. - Remember to remove your butter and eggs from the fridge a few hours in advance so that they can come up to room temp. Adjust your oven racks so one rack is farthest away from your heat source. Also, just before you toast the pecans, line a 8×8 baking dish with parchment paper, that has an overhang on the sides for easy removal, and then grease the parchment paper. These bars love to stick, so don’t skip the parchment paper.
- Preheat your oven to 350 degrees Fahrenheit. Spread the pecans onto a small rimmed baking sheet. Place them in a preheated oven and toast for 5 to 7 minutes, tossing them halfway. Transfer the maple mixture to a medium mixing bowl – a 4 cup spouted liquid measuring cup is perfect for pouring onto the crust, if you have one – allow it to cool while you make the crust.
- In a large mixing bowl add the room temp, cubed butter, along with the granulated sugar, and the egg. Use an electric hand mixer to cream the ingredients together on low, until well combined, and smooth, about 3 minutes. Mix in the vanilla. Add the salt, almond flour and 1/4 cup of the coconut flour, whisk until a dough forms. If any flour remains loose on the bowl, use spatula to stir it in. If the dough seems really sticky then stir in the 1 to 2 tablespoons extra coconut flour. Transfer the dough to the parchment lined baking dish, use your fingers, or, a rubber spatula to spread the dough evenly, and press it into the pan. The dough will be a little sticky, I find it’s helpful to wet my fingers just slightly.
