SPICED ORANGE POT ROAST
This is not your traditional pot roast but is a nice change of pace. We tried this for the first time yesterday and was pleased with the spicy flavour.

Steps:
- Brown meat slowly on both sides in hot butter or oil.
- Add onion and garlic.
- Cover and cook 20 minutes.
- Pour tomato sauce, orange sections, honey and grated rind over meat. Sprinkle with salt, spices and pepper.
- Cover and cook slowly until meat is tender, about 2 hours longer.
- Transfer to heated serving platter.
- Garnish, if desired, with orange slices and wedges, watercress or parsley.

MAPLE-GLAZED ROAST BEEF
This is a recipe I got from Woman's World magazine. It sounds easy and tasty on these cold Autumn nights.

Steps:
- Preheat oven to 450 degrees.
- Combine 3/4 tsp.
- salt and 1/4 tsp.
- pepper; sprinkle over roast.
- Place beef in roasting pan.
- Add carrots and parsnips; roast 20 minutes.
- Meanwhile in pot over medium heat combine syrup, wine, mustard, butter and remaining salt and pepper.
- Bring to boil.
- Reduce heat to simmer; cook until thickened about 10 minutes.
- Reduce oven temperature to 350 degrees.
- Cook roast until meat thermometer inserted in thickest part of beef registers 140 degrees for medium-rare, 35-40 minutes, brushing roast with glaze during last 15 minutes of cooking time.
- Let stand 10 minutes before slicing.

MAPLE ORANGE-GLAZED TURKEY ROAST
This turkey roast blends light and dark meat -- but it's compact and carves easily into neat slices. Grill the meat to free up oven space for the turkey trimmings

Steps:
- In a small bowl combine garlic, marjoram, salt, and pepper; set aside.
- For glaze, in a small saucepan stir together the orange juice and cornstarch; add half of the seasoning mixture.
- Cook and stir over medium heat until thickened and bubbly.
- Cook and stir 1 minute more.
- Stir in maple syrup and orange peel; set aside.
- Brush the turkey roast with melted butter and rub with remaining seasoning mixture.
- Insert a meat thermometer near the center of the roast.
- For a charcoal grill, arrange medium-hot coals around a drip pan.
- Test for medium heat above the pan.
- Place the turkey roast directly on the grill rack over the pan.
- Cover; grill until thermometer registers 165°F Add coals to maintain heat every 30 minutes.
- Brush with glaze the last 30 minutes of grilling.
- Remove meat from grill.
- Cover with foil; let stand for 15 minutes before carving. (The meat's temperature will rise 5F during standing).
- Bring any remaining glaze to boiling; pass with turkey. (For a gas grill, preheat grill. Reduce heat to medium. Adjust for indirect cooking. Grill as above.).
- OR, use the oven @325 degrees until thermometer reaches 165F (should be about 1 1/2 hrs). Follow glazing and standing directions above.
POT ROAST WITH BOURBON MAPLE GLAZE
This recipe came from an old cooking board on AOL and it's a winner! Mashed potatoes are a must to serve with this.

Steps:
- Marinate the roast in the red wine overnight in the refrigerator. Remove meat from the marinade and pat dry with paper towels. Heat 1 tbsp of olive oil in a large pot. Brown meat on all sides and remove. Add the remaining olive oil, celery, carrots and onions and cook over medium heat for a few minutes. Add the garlic and cook 1 minute more.
- Deglaze with bourbon (stand back, the bourbon may ignite momentarily). Add the beef stock, roast and maple syrup. The liquid should just about cover the meat and vegetables. Lower the heat to a simmer; cover pot and cook 3 to 3 1/2 hours, turning meat occasionally so that it will cook evenly. If it still seems a bit liquidy after 2 1/2 hours, tip the lid off a bit to allow steam to escape and the sauce to thicken.
- When meat is fork tender, remove from pot. Add peas and corn. Cook for another 10-15 minutes. Slice meat into thick 1/2" slices. Mound mashed potatoes on center of plate. Top with meat slices and pour sauce over everything.
