Maple Oat Nut Banana Bread image

Maple Oat Nut Banana Bread might make plain old banana bread obsolete. This loaf cake has got tons of sweet, maple-y, cinnamon-y flavor and texture in every bite!

1/2 cup (1 stick) unsalted butter, softened
1 cup granulated sugar
1/4 cup brown sugar
2 tsp vanilla extract
1 Tbsp maple syrup
1/2 tsp cinnamon
2 large eggs
1 1/2 cups mashed bananas (that was 3 bananas for me)
1/3 cup rolled oats
1 tsp baking soda
1/4 tsp salt
2 cups all purpose flour
1/2 cup chopped walnuts
1/4 cup butter
1/2 cup maple syrup
1/4 tsp maple extract (optional)
1 1/2 cups confectioner's sugar, sifted
rolled oats
chopped walnuts

Steps:

  • Preheat your oven to 350F Grease a 9x5 loaf pan and line with a sling of parchment paper with long ends. This will help you lift the bread out for neater slicing.
  • Cream the butter and sugars together until light and fluffy, scraping down the sides of the bowl a few times. I do this in a stand mixer, but you can use electric beaters or a good old fashioned wooden spoon.
  • Beat in the vanilla, maple syrup, and eggs, one at a time, scraping down the bowl as needed. Blend in the mashed bananas, oats, baking soda, and salt.
  • Fold in the flour and then the walnuts. Turn the batter into your prepared pan and spread out evenly. Bake for 30 minutes, then turn down the oven to 325F and bake for another 30-35 minutes, or until a toothpick inserted near the center comes out without wet batter on it. You may need to tent the bread with foil for the last part of baking so it doesn't get too brown on top. Cool on a rack.
  • To make the glaze, put the butter and maple syrup in a saucepan and bring to a boil. Boil for 2 minutes, then take off the stove and add the maple extract (if using) and sifted sugar. Stir or whisk well until there are no lumps. Let the glaze cool for about 15 minutes, stirring it occasionally to keep it smooth. Pour or spread over the cooled bread, and top with a sprinkle of oats and walnuts. Let the frosting harden before you slice the bread.

Steps:

  • Whisk apple cider, maple syrup, yogurt, applesauce, eggs, vegetable oil, vanilla extract, and maple extract together in a bowl until thoroughly combined. Mix in flour, oats, cinnamon, baking powder, baking soda, cardamom, salt, and nutmeg until incorporated. Fold in apples and walnuts. Pour batter into the prepared pan and tap the pan on the counter a few times to remove any air bubbles.

2 cups spelt flour
1 cup whole wheat flour, or as needed
½ cup rolled oats
1 (.25 ounce) envelope active dry yeast
1 ½ teaspoons ground cinnamon
½ teaspoon ground cloves

¼ teaspoon ground nutmeg
½ teaspoon ground ginger
1 ½ teaspoons salt
2 tablespoons vegetable oil
1 cup warm water (120 to 130 degrees F/50 degrees C)
¼ cup maple syrup

Steps:

  • In a large bowl, stir together the spelt flour, whole wheat flour, oats, yeast, cinnamon, cloves, allspice, nutmeg, ginger and salt. Combine the oil, warm water, and 1/4 cup maple syrup; stir into the flour mixture.
  • When the dough is stiff enough, turn out onto a floured surface, and knead until smooth and elastic, about 7 minutes. Knead in more flour if necessary to keep the dough from being sticky. Place dough in an oiled bowl, and turn to coat. Cover, and set in a warm place to rise until double in size.
  • Punch down dough, and form into a tight ball by folding the sides into the center. The tighter the ball, the more it will rise instead of just spreading. Place on a greased baking sheet with the seam underneath. Let rise for 20 minutes, or until your finger leaves a dent when you poke it gently.
  • Preheat the oven to 375 degrees F (190 degrees C). Mix together 3 tablespoon of water and 1 tablespoon of maple syrup. Brush over the top of the loaf, then sprinkle with 2 tablespoons of oats.
  • Bake for 35 to 40 minutes in the preheated oven, or until the loaf sounds hollow when tapped on the bottom. Cool on a wire rack before slicing.

1 cup old-fashioned oats
1 cup boiling water
1 package (1/4 ounce) active dry yeast
1/3 cup warm water (110° to 115°)
1/2 cup maple syrup
2 teaspoons canola oil
1-1/2 teaspoons salt
3-1/2 to 4 cups all-purpose flour
TOPPING:
1 egg white, lightly beaten
2 tablespoons old-fashioned oats

Steps:

  • Place oats in a blender or food processor, cover and process oats for 6-7 seconds or until coarsely chopped. Transfer to a small bowl; add boiling water. Let stand until mixture cools to 110°-115°. In a large bowl, dissolve yeast in 1/3 cup warm water; add syrup, oil, salt, oat mixture and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Place in a greased 9-in. round baking dish. Cover and let rise until doubled, about 45 minutes. , Brush with egg white; sprinkle with oats. Bake at 350° for 30-35 minutes or until golden brown. Remove from pan to a wire rack to cool.

Steps:

  • Gather the ingredients.
  • Grease and flour a loaf baking pan.
  • Over medium-low heat, heat milk and butter in a small saucepan but do not let it boil. Once the butter is completely melted, stir in the pure maple syrup.
  • Take the hot mixture off of the heat.
