Steps:
- Preheat your oven to 350F Grease a 9x5 loaf pan and line with a sling of parchment paper with long ends. This will help you lift the bread out for neater slicing.
- Cream the butter and sugars together until light and fluffy, scraping down the sides of the bowl a few times. I do this in a stand mixer, but you can use electric beaters or a good old fashioned wooden spoon.
- Beat in the vanilla, maple syrup, and eggs, one at a time, scraping down the bowl as needed. Blend in the mashed bananas, oats, baking soda, and salt.
- Fold in the flour and then the walnuts. Turn the batter into your prepared pan and spread out evenly. Bake for 30 minutes, then turn down the oven to 325F and bake for another 30-35 minutes, or until a toothpick inserted near the center comes out without wet batter on it. You may need to tent the bread with foil for the last part of baking so it doesn't get too brown on top. Cool on a rack.
- To make the glaze, put the butter and maple syrup in a saucepan and bring to a boil. Boil for 2 minutes, then take off the stove and add the maple extract (if using) and sifted sugar. Stir or whisk well until there are no lumps. Let the glaze cool for about 15 minutes, stirring it occasionally to keep it smooth. Pour or spread over the cooled bread, and top with a sprinkle of oats and walnuts. Let the frosting harden before you slice the bread.

MAPLE AND APPLE CIDER OATMEAL BREAD
This oatmeal quick bread has three sources of apple--apple cider, applesauce, and diced apple--with just a hint of maple flavoring. It's a one-bowl recipe that comes together fairly quickly and tastes great when served warm. Can also be served at room temperature.

Steps:
- In a large bowl, stir together the spelt flour, whole wheat flour, oats, yeast, cinnamon, cloves, allspice, nutmeg, ginger and salt. Combine the oil, warm water, and 1/4 cup maple syrup; stir into the flour mixture.
- When the dough is stiff enough, turn out onto a floured surface, and knead until smooth and elastic, about 7 minutes. Knead in more flour if necessary to keep the dough from being sticky. Place dough in an oiled bowl, and turn to coat. Cover, and set in a warm place to rise until double in size.
- Punch down dough, and form into a tight ball by folding the sides into the center. The tighter the ball, the more it will rise instead of just spreading. Place on a greased baking sheet with the seam underneath. Let rise for 20 minutes, or until your finger leaves a dent when you poke it gently.
- Preheat the oven to 375 degrees F (190 degrees C). Mix together 3 tablespoon of water and 1 tablespoon of maple syrup. Brush over the top of the loaf, then sprinkle with 2 tablespoons of oats.
- Bake for 35 to 40 minutes in the preheated oven, or until the loaf sounds hollow when tapped on the bottom. Cool on a wire rack before slicing.

- Make oatmeal with 1 ½ cups water + 1 cup oats + 1 Tbsp butter + ¾ tsp salt. Let cool, stirring occasionally, until the oatmeal is no warmer than 115° (or use leftover oatmeal).
- In a stand mixer, or large mixing bowl, combine 2 ½ tsp yeast and ¼ cup warm water. Let sit until the yeast has proofed and creates beer-like foam (5 to 10 minutes). Add the oatmeal mixture to the yeast, along with the ½ cup room-temperature water and ⅓ cup maple syrup. Stir or mix until it is well combined.
- Gradually add flour and knead on low to medium speed until the dough is smooth and elastic. Transfer to a greased bowl, turn over once to coat, cover with plastic wrap and rise in a warm place until doubled in volume, 1 to 1 1/2 hours.
- Spray two loaf pans (or a cookie sheet or cupcake tins for rolls) with cooking spray and divide the dough in half. On a very lightly floured surface, roll the dough into a ball and loosely cover with plastic wrap. Let sit for 30 minutes. Form into two loaves (or several rounds for rolls) and place seam side down into pans. Cover again with plastic wrap and let rise until doubled in volume (1 to 1 ½ hours).
