MAPLE PECAN CRESCENT TWISTS

Pecans swirl with sugar, cinnamon and nutmeg in this twist that's perfect for Sunday brunch or afternoon coffee.

1/2 cup finely chopped pecans
3 tablespoons granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 cans (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count) or 2 cans (8 oz) refrigerated Pillsbury™ Original Crescent Dough Sheet
2 tablespoons butter or margarine, melted
1/2 cup powdered sugar
1/4 teaspoon maple flavor
2 to 3 teaspoons milk

Steps:

  • Heat oven to 375°F. Spray 1 large or 2 small cookie sheets with cooking spray, or lightly grease with shortening. In small bowl, mix pecans, granulated sugar, cinnamon and nutmeg.
  • If using crescent rolls: Unroll both cans of dough; separate into 8 rectangles. Firmly press perforations to seal. If using dough sheets: Unroll both cans of dough; cut to form 8 rectangles.
  • Brush each rectangle with melted butter. Sprinkle 1 tablespoon pecan-sugar mixture evenly over each rectangle; press in lightly. Starting at longer side, roll up each rectangle; pinch edges to seal.
  • With sharp knife, cut one roll in half lengthwise, forming 2 strips. With cut side up, carefully overlap strips 2 times to form twist. Press ends together to seal. Place on cookie sheet. Repeat with remaining dough. Sprinkle with any remaining pecan-sugar mixture.
  • Bake 10 to 15 minutes or until golden brown.
  • In small bowl, mix glaze ingredients until smooth, adding enough milk for desired drizzling consistency. Drizzle over warm rolls. Serve warm.

1 package (16 ounces) hot roll mix
3 tablespoons sugar
3/4 cup warm water (120° to 130°)
1/3 cup butter, melted
1 egg, lightly beaten
1 teaspoon maple flavoring
FILLING:
1-1/2 cups finely chopped walnuts
3/4 cup packed brown sugar
3/4 cup sugar
3 teaspoons ground cinnamon
3 teaspoons maple flavoring

Steps:

  • In a large bowl, combine the contents of roll mix and yeast packets with sugar. Stir in water, butter, egg and maple flavoring; mix well., Turn onto a floured surface; knead until smooth and elastic, about 5 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap; let rise in a warm place until doubled, about 1 hour., Combine first five filling ingredients in a small bowl; set aside. Punch dough down. Turn onto a lightly floured surface; divide into thirds., Roll one portion of dough into a 12-in. circle; transfer to a greased 12-in. pizza pan. Brush with a third of the butter; sprinkle with a third of the filling. Repeat two times with the remaining dough, butter and filling, placing each circle of dough over the previous layer. Pinch outer edges to seal., Place a small glass at the center of the dough. With scissors, cut from the outside edge to the glass to form 16 wedges. Remove glass; twist each wedge three times. Cover with plastic wrap coated with cooking spray; let rise in a warm place until doubled, about 30 minutes., Preheat oven to 375°. Uncover dough. Bake 20-25 minutes or until golden brown. 3/4 cup warm whole milk (110° to 115°)
1/4 cup butter, softened

FILLING:

Cover and let rise in a warm place until doubled, about 1 hour. Meanwhile, in a small bowl, combine the sugar, walnuts, cinnamon and maple flavoring; set aside. , Punch dough down. Turn onto a lightly floured surface; divide into thirds. Roll each portion into a 12-in. circle; place 1 circle on a greased baking sheet or 12-in. baking pan. 3 ounces cream cheese, softened
¼ cup confectioners' sugar
2 tablespoons margarine, softened
1 cup packed brown sugar
½ cup chopped walnuts
⅓ cup maple flavored syrup
2 cups baking mix
¼ cup milk
2 tablespoons white sugar
1 egg

Steps:

  • Preheat oven to 425 degrees F (220 C).
  • Mix cream cheese, confectioner's sugar, and margarine or butter. Reserve.
  • Mix brown sugar, nuts, and syrup in ungreased 13x9x2 inch pan. Spread evenly.
  • Mix baking mix, milk, white sugar, and egg until dough forms. Beat vigorously 20 strokes. Gently smooth dough into a ball on a cloth-covered board dusted with baking mix. Knead 8 times.
  • Roll the dough out into a 16x9 inch rectangle. Spread with the cream cheese mixture. Carefully fold the dough lengthwise into thirds. Press edges to seal securely. Cut into 16 1-inch strips. Gently twist ends of strips in opposite directions. Arrange on the brown sugar mixture.
  • Bake at 425 degrees F (220 C) until brown, about 15 minutes. Invert on a heatproof serving plate. Refrigerate any remaining rolls.

This recipe is from Pillsbury Family Kitchens Cookbook. This is really delicous and makes a nice presentation. The dough is really easy to work with. I did need to add a couple more Tbsps of flour to the dough. This calls for a 12-inch pizza pan, but I'm sure a large cookie sheet would work just fine. :)

3/4 cup milk
1/4 cup margarine or 1/4 cup butter
2 3/4-3 cups flour
3 tablespoons sugar
1/2 teaspoon salt
1/4 ounce yeast, packet
1 teaspoon maple extract
1 egg
1/4 cup margarine or 1/4 cup butter, melted
1/2 cup sugar
1/3 cup chopped nuts
1 teaspoon cinnamon
1 teaspoon maple extract
1 cup powdered sugar
2 tablespoons margarine or 2 tablespoons butter, melted
1 -2 tablespoon milk
1/2 teaspoon maple extract

Steps:

  • In a small saucepan, heat milk and margarine until very warm (120*-130*F).
  • In large bowl, blend warm liquid, 1 cup flour, sugar, salt, yeast, extract and egg at low speed until moistened.
  • Beat 2 minutes at medium speed.
  • By hand, stir in remaining flour to form a soft dough.
  • Knead on floured surface until smooth and elastic, about 2 minutes.
  • Place dough in greased bowl; turn greased-side-up.
  • Cover; let rise in warm place until light and doubled in size, 45 to 60 minutes.
  • In small bowl, combine filling ingredients, set aside.
  • Grease (not oil) 12-inch pizza pan.
  • Punch down dough; divide and shape into 3 balls.
  • On floured surface, roll or press 1 ball of dough to cover bottom of prepared pizza pan.
  • Place in prepared pizza pan.
  • Brush dough with about 1/3 of melted margarine; sprinkle with 1/3 Filling.
  • Repeat layer of dough, melted margarine and Filling.
  • To shape place a glass about 2 inches in diameter in center of dough, (a shot glass works perfectly)
  • With pizza cutter, cut from outside edge to the glass, forming 16 pie-shaped wedges.
  • Twist each wedge 5 times. Remove glass.
  • Cover; let rise until light and doubled in size, 30 to 45 minutes.
  • Heat oven to 375*F.
  • Bake 18 to 22 minutes or until golden brown.
  • Cool 5 minutes; remove from pan.
  • In small bowl, blend Glaze ingredients until smooth. Drizzle over warm coffee cake.

1 pkg pillsbury hot roll mix (prepare according to package directions)
ADD
3 Tbsp sugar
1 tsp maple flavoring
FILLING:
1 c sugar
1 1/2 tsp cinnamon
1 1/2 tsp maple flavoring
1/2 c chopped nuts (i use pecans)
6 Tbsp margarine or butter, melted
GLAZE:
1 1/2 c powdered sugar
1/4 tsp maple flavoring
2 to 3 Tbsp milk

Steps:

  • 1. In large bowl dissolve yeast from hot roll mix in warm water. Stir in egg, sugar and maple flavoring. Add hot roll flour mixture; blend well Place in greased bowl. Cover, let rise in warm place until light and doubled in size, 30 to 45 minutes.
  • 2. Combine all Filling ingredients except margarine.
  • 3. Grease 12 inch pizza pan.
  • 4. Divide dough equally into three balls. On lightly floured surface, roll out one ball of dough to 12-inch circle. Fit into bottom of greased pizza pan. Brush dough with 2 tablespoons melted margarine and sprinkle with about 1/3 cup filling. Continue in same manner forming 2 more layers and ending with filling.
  • 5. Use a glass to mark a 2-inch circle in center of dough (do not cut through dough). Cut from outside edge just to circle forming 16 pie shaped wedges. Twist each wedge 5 times. Let rise in warm place until light and doubled in size, 30 to 45 minutes
  • 6. Heat oven to 375 degrees. Bake 17 to 20 minutes or until golden brown.
  • 7. In small bowl, combine glaze ingredients until smooth. Drizzle over warm coffee cake.
  • 8. NOTE: I was in a rush one time and didn't want to take the time to roll out three layers and do the twisting. I rolled the dough into a rectangle/oblong shape, brushed with the butter and put all the filling mix on top of that. I rolled it up lengthwise (like a jelly roll) and cut them like cinnamon rolls and baked them in a 9 x 13 inch pan. They turned out just fine. While the above directions makes a pretty cake, I and my neighbor liked them better made this way. They seemed to be moister.

My mom (aka best cook in the world) made these cookies for years. She made them every Christmas (along with many other cookies) and for special occasions. They are my absolute favorites. When mom moved into Assisted Living a few years ago, her Christmas cookie recipes were part of the "treasures" that she passed on to me. So...

FILLING
5 c walnuts chopped in blender
1 stick butter (room temperature)
1/3 c brown sugar
1/4 tsp maple flavoring (if you can't find maple flavoring, you can use vanilla)
DOUGH
4 c flour
4 tsp baking powder
1 tsp salt
2/3 c butter
1/2 c sugar
2 eggs, beaten
1 1/2 c raisins
1 c milk
ICING (MEASUREMENTS ARE APPROXIMATE)
1 c powdered sugar
2 Tbsp milk
1 tsp vanilla

Steps:

  • 1. Mix all filling ingredients together and set aside.
  • 2. Place flour, baking powder and salt in a bowl.
  • 3. Beat butter and sugar in mixer and add eggs and raisins.
  • 4. Add the flour mixture and milk to butter mixture - alternating.
  • 5. Turn dough onto floured surface. Shape into a ball and cut into four pieces.
  • 6. Roll one piece of dough into a 12 inch log on floured surface. Take a rolling pin and very gently roll the log into a 5" x 12" rectangle.
  • 7. Place 1/4 of the filling along the bottom edge of the dough and fold the top edge of the dough over the filling. Pinch the seems and flatten the rectangle a little with your hands - making a "package".
  • 8. Cut the dough vertically into 1" pieces. You'll wind up with about 12 pieces.
  • 9. Hold each cookie piece in hands and twist twice away from your body. Place on cookie sheet and press the ends of each cookie down onto the cookie sheet.
  • 10. Bake at 350 degrees for 20 minutes. They do not brown.
  • 11. Repeat with other four pieces of dough.
  • 12. Mix icing ingredients in bowl.
  • 13. When the cookies are cool, top with icing. I just use my finger to "paint" the icing on top.
  • 14. Now...(and this is important)...make a cup of tea, take two cookies and sit in your special chair. Eat and sip....or do what I do...dunk and eat. OMG - you will be so happy!!!!!

  • Pour yeast over warm water in a small bowl or measuring cup and let stand about 5 minutes to dissolve. It will look puffy. If you stir this, make sure to add back any yeast that sticks to the spoon or leave the spoon in the measuring cup for now.
  • Beat the egg in a large mixing bowl with an electric mixer just until lightly beaten. I like to use a stand mixer so I can knead the dough with a dough hook instead of by hand. Add the dissolved yeast and 3 tablespoons maple syrup.
  • Add the hot roll mix slowly as the mixer is on medium-low speed. Beat until hot roll mix is thoroughly combined. At this point, you can trade out the mixer paddle attachment for the dough hook and beat 3 minutes or turn the dough out onto a lightly floured surface and knead by hand at least 3 minutes or until it looks smooth and elastic. This basically means it will spring back when you push your fist into the center. This will probably take 5 minutes by hand. You can’t overwork yeast bread dough, really. You want to develop the gluten unlike biscuits where you avoid it.
  • Coat the same bowl lightly with cooking spray and place the dough in the bowl and cover loosely with plastic wrap or a damp towel. Let rise in a warm place (85°)40 minutes or until dough doubles in size. (*See my tip in the Notes below for creating your own proofing oven.)

  • Divide the dough into two equal parts. On a lightly floured surface, roll out one part of the dough into a circle that is about 14-16 inches in diameter. Put the circle in a round pizza pan that has been sprayed with cooking spray.
  • Roll out the second dough piece into a circle the same size as the first. Place this circle on top of the filling. Use a pizza cutter to make slices towards the center, leaving about 3 inches in the center of the circle unsliced. Continue to cut slices all the way around the circle, making about 18 slices. Twist each slice two times, being careful not to let the dough break apart in the center.
