Marinating beef tenderizes and adds flavor. This Maple Bourbon Steak Marinade uses smooth bourbon and maple syrup making a great flavor profile.

Steps:
- Mix all ingredients together and place in a container or large zip top bag.
- Marinate the beef for 8 hours or overnight in the refrigerator.
- Remove flank steak from the refrigerator about 30 minutes or so before cooking to take the chill off.
- Remove steak from marinade and discard marinade.
- Grill steak over medium high to high heat until desired doneness. About 4 minutes each side will cook the steak to medium rare.
- Let steak rest for 5-10 minutes after cooking
- Slice across the grain and serve.

- In a small bowl, combine the vinegar, 5 tablespoons maple syrup, mustard and thyme. Pour 2/3 cup marinade into a shallow dish; add the steak and turn to coat. Cover and refrigerate for up to 3 hours. Cover and refrigerate remaining marinade. , Meanwhile, in a small skillet, saute pecans in oil until toasted. Stir in remaining maple syrup. Bring to a boil; cook for 1 minute, stirring constantly. Remove from skillet and spread onto waxed paper to cool completely., Drain and discard marinade. Sprinkle steak with salt and pepper. Grill, over medium heat, for 4-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 5 minutes before slicing., Place reserved marinade in small saucepan. Bring to a boil; cook until liquid is reduced to 1/4 cup, about 2 minutes. Divide steak slices between two plates. Drizzle with sauce; sprinkle with blue cheese and pecans.

- Trim steaks of any excess fat or silverskin and place in a medium-sized bowl or a resealable plastic bag. Blend Worcestershire, red wine vinegar, maple syrup, garlic and ½ tsp pepper in a small bowl then pour over steaks. Stir or toss to coat steaks in marinade and allow to sit at room temperature about 30 minutes or in refrigerator for up to 4 hours.
- Preheat grill to medium-high, remove steaks from marinade and pat dry. Brush each steak with oil and season both sides with salt and pepper. Place on grill and cook 3 minutes per side for medium-rare or until steaks reach desired level of doneness.
- Remove steaks from grill. Allow steak to rest on a plate, uncovered, for 5-10 minutes before serving. Enjoy!

- Blend soy sauce, vinegar, syrup, garlic, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a blender until smooth. Toss steaks with mixture. Marinate at room temperature about 15 minutes.
- Prepare a grill for direct-heat cooking over hot charcoal (high heat for gas); see grilling procedure.
- Discard marinade and pat steaks dry.

- Combine Marinade ingredients in small bowl. Reserve 1/2 cup marinade for dressing. Place beef Strip Steaks and 1/3 cup marinade in food-safe plastic bag; turn steaks to coat. Close bag securely and marinate in refrigerator 15 minutes to 2 hours. Reserve remaining marinade for brushing.
- Soak two 10-inch bamboo skewers in water 10 minutes; drain. Thread onion wedges onto skewers. Brush onions and cut sides of pears with half reserved marinade.
- Remove steaks from marinade; discard marinade. Place steaks on grid over medium, ash-covered coals; arrange onions and pears around steaks. Grill steaks, covered, 11 to 14 minutes (over medium heat on preheated gas grill, 11 to 15 minutes) for medium rare (145°F) to medium doneness (160°F), turning occasionally. - Mix ingredients together. Feel free to double, triple, or quadruple amounts, depending on how much steak you're marinating. (For a 1.5 pound steak, I double this marinade.)
- Rub steak with your favorite rub. (I like to use Jane's Crazy Mixed-up Salt.)
- Marinade steak for at least 30 minutes.
- Preheat oven to 400° F.
- Heat cast iron pan till nice and hot.
- Add bacon grease or another fat, such as butter, to your hot pan.
