SKIRT STEAK WITH MAPLE SYRUP

Steps:
- Season steak with salt and pepper, and refrigerate until ready to use.
- Heat butter in a medium saucepan over medium heat until bubbling. Crush garlic with the side of a heavy knife. Add garlic, onion, and carrot to saucepan and cook, stirring, until onion is translucent. Add stock and maple syrup, then increase heat to high and boil for 10 minutes. Add beer, simmer briefly, and remove from heat.
- Heat broiler. Place meat on a broiler pan and broil for 2 to 3 minutes per side for medium rare. Remove from oven and let rest on a carving board for 5 minutes.
- Return sauce to a simmer, add rosemary, and season with salt and pepper, to taste. Strain sauce.
- Thinly slice meat and spoon sauce over meat to serve.

- Trim steaks of any excess fat or silverskin and place in a medium-sized bowl or a resealable plastic bag. Blend Worcestershire, red wine vinegar, maple syrup, garlic and ½ tsp pepper in a small bowl then pour over steaks. Stir or toss to coat steaks in marinade and allow to sit at room temperature about 30 minutes or in refrigerator for up to 4 hours.
- Preheat grill to medium-high, remove steaks from marinade and pat dry. Brush each steak with oil and season both sides with salt and pepper. Place on grill and cook 3 minutes per side for medium-rare or until steaks reach desired level of doneness.
- Remove steaks from grill. Allow steak to rest on a plate, uncovered, for 5-10 minutes before serving. Enjoy!

MAPLE GLAZED FLANK STEAK WITH ROASTED ENDIVE

- 1. Preheat the oven to 400 degrees F. Combine the mustard and oil with a fork. Add the maple syrup, vinegar, 1/2 teaspoon salt, and 1/2 teaspoon pepper and stir briskly until combined.
- 2. Salt the flank steak on both sides and spoon half the marinade over the steak. Allow to marinate at room temperature, about 15 minutes.
- 3. In the meantime, wash the endive, pat dry, and cut into quarters, keeping the stems intact. Lay the endive on a baking sheet and drizzle with olive oil and salt to taste. Roast until the endive begins to soften and brown at the edges, about 15 minutes. Sprinkle with the lemon juice and garnish with parsley.
- 4. Turn the oven up to broil. Place the flank steak in the broiler and broil for 4 minutes. Flip and broil until nicely charred and an instant read thermometer reads 110 degrees F, about 4 minutes on the other side. Let rest 10 minutes before slicing.
- 5. Slice the steak across the grain and spoon the remaining marinade over top. Serve with the endive and more mustard on the side.
SKIRT STEAK WITH GREMOLATA
Serve seared steak with a lively lemon, parsley and garlic condiment.

- Smash the garlic, sprinkle with 3/4 teaspoon salt and work into a coarse paste using the side of a large knife. Transfer to a small bowl and stir in the parsley, olive oil, lemon zest and juice, and pepper flakes.
- Heat a large skillet over medium-high heat. Lightly rub the steak on both sides with oil and sprinkle generously with salt and pepper. Put the steaks in the skillet and cook, turning once, until well browned on the outside and medium-rare on the inside, 2 to 3 minutes per side. Transfer the steak to a cutting board and let it rest for 5 minutes.
- Thinly slice the steaks against the grain and divide among 4 plates. Top with the gremolata and serve with rice or potatoes.
