MAPLE GRANOLA

Number Of Ingredients 11

1/4 cup vegetable oil, like soy, peanut, or corn
2/3 cup dark amber maple syrup, grade A or B
1 tablespoon pure vanilla extract
1/2 cup toasted wheat germ
1/4 cup sesame seeds
1/2 cup shredded unsweetened coconut
3 1/2 cups rolled oats
1/2 cup green pumpkin seeds (pepitas)
1/2 cup cashews, coarsely chopped
1/2 cup whole almonds, coarsely chopped
1 cup mixed dried fruit, such as currants, diced pears, diced apricots, cranberries, raisins, blueberries, or chopped dates

Steps:

  • Preheat oven to 225 degrees F.
  • In a small saucepan, combine the oil and syrup and heat, stirring, over low heat. Remove from the heat and add the vanilla extract.
  • In a large bowl, toss together the wheat germ, sesame seeds, coconut, oats, pumpkin seeds, cashews, and almonds. Add the syrup mixture and stir to coat evenly. Spread the granola mixture out on a baking sheet. Bake until golden brown, about an 1 hour and 30 minutes. Stir the mixture occasionally while baking so it toasts evenly.
  • Transfer the warm toasted granola to a large bowl and stir in the dried fruits and let cool. Store in a tightly sealed container a room temperature for 2 weeks or freeze for up to 2 months.

To make sorbet, freeze juice mixture until solid, break into chunks, and pulse in a food processor until smooth.

2 cups orange juice (from 5 oranges), plus 2 oranges, peel and pith removed, flesh cut into pieces for serving
3 tablespoons maple syrup
Salt
3 tablespoons light sour cream
Ground cardamom (optional)

Steps:

  • Stir 2 tablespoons syrup and pinch of salt into juice. Transfer to a shallow 2-quart dish. Freeze 2 hours, scraping with a fork every 30 minutes (mixture should icy and fluffy).
  • Stir together sour cream, remaining tablespoon syrup, pinch of salt, and cardamom if using. Divide among 4 bowls. Top with granita and orange segments.

2 teaspoons ground cinnamon
⅓ cup canola oil
⅔ cup pure maple syrup
1 teaspoon maple flavoring
¼ teaspoon salt

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • Line a baking sheet with parchment paper.
  • Mix oats, pecans, walnuts, flax seed, and cinnamon in a large bowl.
  • Stir canola oil, maple syrup, maple flavoring, and salt together in a small bowl; pour over the oat mixture and stir to coat evenly.
  • Spread the resulting mixture evenly onto the prepared baking sheet.
  • Bake in the preheated oven until lightly browned, about 40 minutes.
  • Set granola aside to cool completely before breaking into chunks. Store in an air-tight container.

  • Preheat oven to 300 degrees F (150 degrees C).
  • Mix maple syrup and coconut oil together in a bowl; add oats, pecans, and almond flour and mix until evenly coated. Spread onto a baking sheet.
  • Bake in the preheated oven until lightly browned, about 40 minutes.

MAPLE CITRUS GRANITE

1 1/4 cups water
1/3 cup sugar
1/4 cup lemon juice
1/4 cup orange juice
1/4 cup maple syrup
1/4 cup lemon and orange zest
1/4 cup shredded mint, optional

Steps:

  • In a saucepan, mix water, sugar, lemon juice, orange juice, maple syrup and bring to a boil. Reduce heat to low and simmer without stirring until all the sugar has dissolved, about 3 to 5 minutes. Remove pot from the heat and let syrup cool completely. Add the lemon, orange zest, mint leaves, and pour into a shallow baking dish or plastic container and place in the freezer. (The 6 cup capacity shallow plastic containers with a lid that measure 6 inches by 10 inches by 2 inches deep, and which you can get in grocery stores would be ideal for the purpose.)
  • Check after about 2 hours and stir the mixture. After about 4 hours, the mixture will have begun to set up, and you can score the surface by turning a spoon backwards and using the tip to scrape the frozen syrup into "ice curls." Repeat this scraping process periodically, every 2 hours or so, until all of the syrup is scraped into the consistency of water ice. Serve after 8 hours.

This simple fresh tasting granita features the delicious flavours of maple syrup enhanced with ginger, lemon and mint. This granita looks great served in martini glasses. Serve this with Amaretti biscuits such as #rz 200134. These crunchy little Italian cookies have a lovely almond flavour that compliments the maple.

3 1/2 cups water, preferrably spring water with no chlorine taste
1/2 cup maple syrup, preferrably Canadian medium amber
1 teaspoon gingerroot, finely minced
3/4 cup lemon juice
2 cups granulated sugar
2 cups blueberries
1/4 cup of fresh mint

Steps:

  • Whisk together water, maple syrup, ginger, lemon juice and sugar in a large saucepan.
  • Place saucepan over high heat and bring to a boil for 2 minutes. REduce heat to medium and cook for an additional 5 minutes.
  • Remove from heat and pour into a large 2 inch deep baking dish. Freeze for 4 hours or overnight.
  • To serve scoop granita into chilled glasses and garnish with blueberries and fresh mint.
