- Heat oven to 425 degrees. Place bacon on a wire rack, and set the rack over a baking pan. Brush maple syrup on each bacon slice.
- Bake 5 minutes; brush again with syrup. Bake 5 minutes more, or until tops are browned. Flip, brush with maple syrup, and bake, brushing again after 5 minutes, continue baking until bacon is well browned and glazed, about 25 minutes total. Serve.
MAPLE-ROASTED BACON

- Preheat the oven to 400 degrees F.
- Place a baking rack on a sheet pan and arrange the bacon in 1 layer on the baking rack. Bake for 15 to 20 minutes, until the bacon begins to brown. Remove the pan carefully from the oven; there will be hot grease in the pan! Brush the bacon slices with maple syrup and bake for another 3 to 5 minutes, until the bacon is a warm golden brown. Transfer the bacon to a plate lined with paper towels and serve warm.
MAPLE GLAZED BACON LONG JOHN

- Sprinkle the yeast over the warm water and let stand until foamy, about 5 minutes.
- In a large bowl of a stand mixer or using an electric mixer, mix together the yeast mixture, milk, sugar, shortening, salt, eggs and 2 cups flour. Mix for a few minutes at low speed, or stirring with a wooden spoon.
- Beat in remaining flour 1/2 cup at a time, until the dough no longer sticks to the bowl. Knead until smooth and elastic, about 5 minutes Place the dough into a greased bowl and cover. Set in a warm place to rise until doubled in size. The dough is ready if you touch it and the indention remains.
- Turn the dough out onto a floured surface and gently roll out to 1/2-inch thickness. Cut with a floured donut cutter. Let the donuts sit out to rise again until doubled in size. Cover loosely with a cloth.
- Heat the shortening in a deep-fryer or large heavy skillet to 370 degrees F. Slide the donuts into the hot oil using a wide spatula. Turn the donuts over as they rise to the surface. Fry on each side until golden brown. Remove from the oil and drain on a wire rack.
- While hot, dip the donuts into Maple Glaze, then into bacon pieces and set onto wire racks to drain off excess.
- Mix 2 cups sugar, corn syrup, maple syrup, maple extract and salt into mixer. Mix well, 15 to 20 minutes. Add additional cup of powdered sugar to get to desired thickness. You may also add additional maple extract for desired taste.

- In a small skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain., Meanwhile, cut an "X" in the core of each Brussels sprout. - Cook the bacon in a large skillet over medium-high heat until browned, but NOT crispy; drain on paper towels; set aside.
- In a small bowl whisk together the maple syrup, Dijon mustard and brown sugar; set aside.
- Return the bacon back to the skillet and brush with glaze, then turn the bacon over.
- Cook the glazed side down for 2 minutes over low heat.
- Glaze then turn and cook for another 2 minutes over low heat.
- Repeat until all the glaze is used up.
- Serve immediately.

- Preheat oven to 400 degrees. On a parchment-lined rimmed baking sheet, arrange bacon in a single layer. Bake until fat is rendered and bacon is beginning to brown, 15 to 18 minutes. Carefully remove from oven and brush with pure maple syrup. Bake until bacon is browned and sticky, 3 to 5 minutes. GLAZED BACON
Steps:
- Preheat the oven to 400 degrees F.
- For the red chile-honey glaze: Lay the bacon in a single layer on a sheet pan, keeping space in between each slice. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. While the bacon is cooking, whisk together the clover honey and ancho chile powder in a medium bowl until smooth. Remove the bacon from the oven, using mitts, and carefully drain the fat, tipping the pan, into a medium bowl. Blot the top of the bacon with a few paper towels. Place the sheet pan with the bacon on it on a cooling rack and immediately brush each slice with the glaze.
- For the sorghum glaze: Lay the bacon in a single layer on a sheet pan, keeping space in between each slice. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. - For the brown sugar-pecan glaze: Line a baking sheet with a silpat or parchment paper. Lay the bacon in a single layer on the baking sheet, keeping space in between each slice. Divide the brown sugar evenly over the top of each slice of bacon and bake until bacon is golden brown and almost crispy, about 13 minutes. Remove from the oven and sprinkle with the finely chopped pecans, return to the oven and continue baking until pecans are toasted and bacon is crispy, about 3 minutes longer.
- Let sit at room temperature for 10 minutes.

- Bake bacon in 350 degree oven in large pan 10-15min until crisp.
- Drain fat.
- Mix the rest of the ingredi.
- and pour over the bacon.
- Make sure bacon glaze covers both sides and bake at 350 degrees until it bubbles, about 10 min.
- Remove bacon from pan and place on wax paper.
- Cut slices in half if desired.
- Do not refrigerate or cover, but let sit at room temp until ready to serve.
- It should be dry to the touch, not sticky.
- If bacon is limp or sticky, bake a bit longer, about 2 min.

- Line two baking sheets with foil. One pan will be used to prep the bacon. Place a baking rack into the other pan and spray with cooking spray. Set aside.
- Separate bacon strips and line up on the pan without the rack. Drizzle maple syrup over the slices and using a pastry brush, evenly distribute it over the top all of the slices. Flip the slices and repeat.
- Sprinkle about 2 Tablespoons of brown sugar evenly onto the tops of the maple coated bacon. Use the pastry brush to distribute it evenly. (The sugar will begin to mix with the syrup already on the bacon.) Flip the bacon over and transfer the slices to the baking pan with the rack. Sprinkle another 2 Tablespoons of brown sugar over the tops of the bacon, using the pastry brush again to distribute.
- Place baking sheet into a cold oven on the middle rack. Set oven temperature to 350 degrees F. and allow to come to temperature while the bacon is in the oven. Check at 15 minutes, then every 2-5 minutes until bacon is deeply browned and shiny. Keep an eye on it so that the sugar doesn't burn. Mine took between 25-30 minutes.
