Where are all donut lovers? They are my absolute favorite! I do not know if it is their fluffy texture or the amount of variety, but I have always loved them. I have gone through phases in regards to flavors. There was a time when I preferred donuts filled with custard, another with marmalade, but right now I am a fan of maple donuts. Is anyone else as obsessed as me?

1/4 cup unsalted butter
1/2 cup pure maple syrup1
1 cup sifted powdered sugar
optional: 1/2 teaspoon maple extract

Steps:

  • Step 1
  • Melt the butter and maple syrup together over medium heat in a small saucepan. Occasionally, give it a stir.
  • Step 2
  • Take away from the heat and add in the powdered sugar, whisking it vigorously.
  • Step 3
  • Taste it. If you would like a stronger maple flavor, add in the maple extract. Set it aside to cool and thicken! Use it once your donuts are also cool.

  • To the same bowl, add the eggs, melted butter, vanilla extract, salt, grated nutmeg, cinnamon, and 2 cups of the bread flour. Mix on medium speed for about 1-2 minutes. Mix in remaining bread flour, 1/2 cup at a time until a dough forms. Increase speed to medium-high, and mix until dough pulls away from the bowl and a manageable dough forms. The dough should manageable, soft, and slightly sticky. If needed, add more flour little by little.
  • Transfer dough to a floured surface and knead by hand for about 4-5 minutes, sprinkling more flour as necessary. At this point, the dough should be elastic, very manageable, soft, and slightly sticky. It should also spring back when poked. Do not over-knead; you can tell if you over-kneaded the dough if it feels tough and dense.
  • Form dough into a ball and place on a lightly oiled bowl, making sure the dough is coated with oil on all sides. Vegetable oil is fine. Cover the bowl with plastic wrap and let it rise in a warm and draft-free environment for about 1.5 hours, until doubled in size. I usually let dough rise in a warm-ish oven. You can also use the microwave method (instructions below under Notes).

  • Spoon the donut batter into a piping bag (no tip required) or a plastic bag with the corner cup off. You want the hole to be approx. ¾”. This makes it easier to fill the donut tins. Pipe the batter into each tin. Place in the oven and bake for 10-15 minutes, until an inserted skewer comes out clean.
  • Whilst the donuts are cooking, place all of the glaze ingredients into a medium-sized bowl and whisk together until combined. Put to one side.
  • Take the donuts out of the oven, leave to cool in the tray, then remove from the tray and dip the donuts into the glaze. It’s best to dip the base side of the donut in the glaze, as this side will be smoother. Turn over and place on a cooling rack. Leave the glaze to set for 5 minutes, then sprinkle on the cinnamon.
